Chicken Leg Quarters, Peas, Broccoli & Cheese Casserole. Platnum BBQ (River Market). Little Rock, Arkansas. 10.18.2023.
NOTE TO SELF: I was eager to get back to Platnum so they'd have a chance to redeem themselves after my last meal, but this one was the same. They've changed something about their chicken quarter process that's drying out the meat and obliterating the skin. This is terrible news. I guess I'll go with wings next time and hope the problem gets fixed soon.

Hoppin’ John
For New Years Day, we always had black eyed peas. However, many of us don’t really like black eyed peas. So I went looking for a way to make them more palatable to the masses (aka my family) with the following results!
Ingredients:
1 T olive oil
1 medium onion, diced
1 red bell pepper, diced
2 cloves garlic, minced
2 15-oz cans black eyed peas, drained
¼ c veggie broth or water
1 t salt
½ t black pepper
2 green onions, thinly sliced
¼ c parsley, minced
3 c cooked rice
Shredded cheddar cheese
Hot sauce, optional
Method:
Heat olive oil in a large saucepan over medium heat. Add onion, red bell pepper, garlic. Sauté until onions are translucent, about 5 minutes.
Stir in black eyed peas, broth, salt, pepper. Reduce heat to low; cook 10 more minutes. Stir in green onions and parsley.
Serve on cooked rice; garnish with cheese. Add hot sauce, if desired.
Note:
I usually include red and yellow bell peppers and some celery and leave out the green onions and cheese.
Bacon is also an acceptable addition to the recipe.
