Kao Kha Moo (Thai Stewed Pork Leg Rice) has been a traditional local Thai street food delicacy for decades. When I was in Thailand, one can see pork legs stewing in open pots and/or displayed on trays in almost every corners. So when Ba Jie (八戒) Kao Kha Mo opened a stall in a food court near my place I just got to try it. Ordered the Pork Leg Rice Set (S$6.50) which is served with boneless braised pork leg, a braised egg, side of pickled vegetables and white rice drizzled with the gravy. Just by looking at it, you know that it will be very tender. Doesn’t have that strong five-spice we are more accustomed in local braised pork but it is still flavourful in its own right.
Mum said she wasn’t hungry so she got the Pulut Hitam (黑糯米) or Black Glutinous Rice dessert instead. This Indonesian sweet dessert is made from black glutinous rice porridge, palm or cane sugar and drizzled with coconut milk.

@galauvant happy new year!! may it bring you many ready-to-eat snacks and ingredients for thai home cooking
here's a little shopping list of some things i recommend getting if you go there:
oishi green tea kyoho grape with nata de coco: the first time i saw people drink this mid-romantic scene in a thai bl it was a bit jarring, but that was only because i hadn't tried it before. it's so lovely; i could write sonnets about it.
golden mountain seasoning sauce: you can get it elsewhere but they sell a liter of it for like $5, which is very worth it if you make garlic noodles or any thai stir fries regularly
dragonfly brand black soy sauce: for pad see ew! (the one with the orange cap. if you don't anticipate using it much, honestly you could probably up the soy sauce/add chinese black soy sauce and add a very small amount of molasses?)
ABC brand sweet soy sauce: a common malay and indonesian condiment. this is way too sweet for me but i had a roommate who put it on everything and felt like i should mention that they sell it!
big bags of glutinous rice for way less than you'd pay anywhere else
BAMBOO CONE STEAMER (หวด). THIS WILL CHANGE YOUR LIFE IF YOU LIKE STICKY RICE. it's like $6 if you have a pot that it will fit in, and still under $20 if you need to buy a pot to go with it. it is impossible to mess up sticky rice using this method. there is literally zero measuring required and it gives the rice such a nice fragrance. i've been able to make mango sticky rice on a whim every time i've seen a good deal on good mangoes the last couple of years and this is why. here is a video on how to make sticky rice with it! and here is a mango sticky rice recipe i use as a template. for 1 cup uncooked sticky rice i use one 8.5oz carton of aroy d coconut milk to ½ cup sugar and 1 tsp salt, then reserve a scant ½ cup of the dissolved coconut milk mixture for the sauce. (cornstarch works as a thickener if you don't have rice flour!)
frozen khanom thien (ขนมเทียน) there's a similar lao dessert called kanom nap, and a burmese dessert called mok phet thot. it's a steamed glutinous rice dumpling wrapped in banana leaves and filled with a caramelized shredded coconut/palm sugar filling! here are a handful of videos of people making it!
butterfly pea flowers: not cheap but i think still cheaper than i've seen them elsewhere?? relatedly! there is a thai restaurant on the UES that sells chor muang (ช่อม่วง). I think it was Thep on 75th and 2nd?? They're beautiful, interesting, and a pain to make, and I've never seen them on another restaurant menu.
frozen pandan leaves: not sure where else i would get them in nyc, although pretty much any SE asian grocery store will carry them.
makrut lime leaves: sometimes sold frozen, sometimes in a little ziploc bag in the refrigerated section. *girl scout cookie sales voice* they freeze well!

fun lays flavors
nam prik pao (นำ้พริกเผา): if you don't eat shrimp, there's one vegetarian brand that uses dried shiitake mushroom for the savory element (Chua Hah Seng vegetarian chilli paste - นำ้พริกเผาฉั่วฮะเส็ง มังสวิรัติ)
palm sugar: available elsewhere, but usually more expensive
fresh/frozen coconut milk: worth trying at least once! it's also worth getting one or two shelf-stable cartons of coconut milk if you've only had canned before, but their prices aren't great—i usually get the 6- or 12-packs of 8.5 oz cartons of aroy d on amazon
they sell a little frozen tom yum veggie set with lemongrass, galangal, and lime leaves, which is nice if you're only planning to make it once or twice
sundried bananas (กล้วยตาก): they don't always carry these. sometimes they're vacuum packed; sometimes they have them in a little plastic clamshell container
If you're cooking for a vegetarian or someone with a shellfish allergy and looking at savory items, note that there are two words that get translated as "vegetarian," which are used somewhat interchangeably but strictly speaking mean different things—'je' (เจ) and 'mangsawirat' (มังสวิรัติ). เจ/je doesn't include onions, garlic and certain other vegetables. If you see something labeled as vegetarian curry paste, you'll want to check whether they just mean no shrimp paste, or no shrimp paste/garlic/shallots!! Items labeled as มังสวิรัติ/mangsawirat will not contain meat, shellfish, fish, or fish sauce, but can contain allium.

Ube Coconut Mochi Cookies

2 tbsp egg replacer 1/3 cup coconut milk
2 1/2 cups sweet rice flour (aka; glutinous rice flour) 2 tbsp purple sweet potato powder 2 1/2 tsp baking powder 1/2 tsp sea salt
1 cup vegan butter, softened 1 cup cane sugar 1/2 cup coconut sugar
2 tsp ube extract 1 tsp pure vanilla extract
1 cup coconut flakes 1/2 cup toasted black sesame seeds
In a small bowl, whisk together the egg replacer and coconut milk. Set aside.
In a large glass mixing bowl, sift together the; sweet rice flour, sweet potato powder, baking powder, and sea salt.
In a medium-sized mixing bowl cream together the vegan butter, cane sugar and coconut sugar. Add the ube extract and vanilla extract along with the "egg" mixture. Mix well.
Combine the wet ingredients with the dry ingredients. Fold in the coconut flakes and sesame seeds. Place batter in fridge for about 30 minutes.
Preheat oven to 350 degrees F. Grease or line a large cookie sheet. Roll cold batter into walnut-sized balls. Place balls on prepared cookie sheet and press down gently with the back of a fork.
Bake in preheated oven for 12 minutes. Allow to cool on cookie sheet for several minutes before transferring to a cooling rack.
Store in air-tight container. (Freezes nicely.)
Yields; 3 dozen cookies

Thicc and creamy. Strong almond taste. It's less thick and intense than Mei Heung Yuen but it does not have that grainy texture.

I love the beancurd bits in this! Similar taste to the almond cream.
🥥 Black Glutinous Rice with Coconut Milk
This is super filling, but so good! It's one of the best pulut hitams :D It's really heavy, so we recommend to get this for sharing.

When I was a kid, our frequent treat was this homemade Black Glutinous Rice. I wasn’t a fan of this treat back then but will still eat it as it was Mum’s cooking. As someone who loves sweets, what fine desserts exist across Tamriel? I’ll bet the bosmer get super creative! And the Khajiit are sure winners.
Aside from candies and sweets, desserts across Tamriel reflect local tastes and vary in complexity, flavour, and texture.
Altmer
Dessert in Summerset is always served cool or chilled, and is bound to be just the right amount of flavourful and refreshing. Take, for example, the famous sorbet cups served everywhere from street corners in Alinor to posh dining tables. Some of my favourite flavours are candied cherry blossom, jasmine with dark chocolate chips, and mint with lime zest.
Argonians
Nothing beats the popping "onde-onde" balls beloved by Black Marsh residents. These sticky "cakes" are made of glutinous rice, and have a liquid coconut or palm sugar centre, and are liberally coated in shredded coconut. While small and easy to eat in a bite, the glutinous rice does get quite filling, so four is usually enough for dessert!
Bosmer
Custard, in its most perfect, creamy, glorious, silky form, is one of the staples of Valenwood desserts. Made with sugar mammoth cream and eggs, these lightly sweet custards are served as is, chilled, or topped with bacon bits for some crunch. My personal favourite is the non-Green Pact version of a creme brulee, where custard is drizzled with moon sugar and blasted with a flame spell until caramelised and crisp on top.
Bretons
The humble chocolate pastry is probably every Breton's favourite everyday treat, and for good reason. Sweet dark chocolate enveloped by buttery puff pastry is oh so simple yet oh so decadent. Best served with a cup of tea or coffee.
Dunmer
A traditional Dark Elf dessert loved by all from Mournhold to Windhelm is a deliciously weird "cake" made from a layer of sweetened glutinous saltrice, and topped with an equally-sized firm layer of marshmerrow custard. Served chilled, these "kueh salat" are enormously addictive and satisfying. One of my favourite desserts.
Imperials
Every Imperial dessert is enjoyable in my book, especially those containing a drop or two of something boozy. Take, for example, the humble tiramisu of Bruma. Almond and coffee and all things flavourful make up this rich, mascarpone-based cake, made traditionally with almond biscuits soaked in amaretto as a base. Topped with a mound of glorious cocoa powder, it's a sumptuous delight of a dessert.
Khajiit
Miso...caramel? Umami fermented soy bean paste meets rich moon sugar caramel for the ultimate flavour fusion that I certainly wasn't prepared for! Big batches of Miso caramel are always on hand in any confectioner's kitchen. It goes in everything from ice cream and cheesecake to being mixed with dulce de leche for an outrageously decadent pudding. On that note, I'll have one miso caramel pudding with a miso caramel cream coffee, thanks.
Nords
Steamed treacle pudding gets my vote as one of Skyrim's best desserts. Dense and gooey, and sometimes even drenched in mead, these puddings are served hot at every tavern (rivalling Breton sticky toffee pudding). Topped with whipped cream, the rich treacle is a real treat when poured over and infused into the rich butter pudding!
Orcs
Sweet potato pudding is a set custard infused with lots and lots of roasted sweet potatoes! Mashed and mixed into a plain creme patissiere, then swirled through with a spiced caramel swirl, these ganache-like treats are simply to die for (and you just might, if you try nick this off an Orc).
Redguards
Cardamom and saffron are ubiquitous in Redguard cooking, and this includes desserts. "Rasmalai", a dish made from fried, spongy patties of cottage cheese soaked in cardamon syrup, floating in a thick and sweet saffron and cardamom milk sauce. While it sounds a bit odd, rasmalai is a true treat for the senses, and is a rich and flavourful end to any meal.

Of Oil and Eggs
It’s the first day of lunar new year, and what better way to celebrate than cooking something nice? [Written for day three of @aph-lunar-new-year.]
“Pour some oil into the pan.”
Harald picks up the bottle of canola oil and pauses. “How much?”
Leon snorts incredulously behind him. “It’s always ‘how much’ with you. Doesn’t matter, just add enough to coat the bottom of the pan.”
“Around two tablespoons, then.” He reaches into a drawer to pull out their ring of measuring spoons, ignoring his boyfriend’s groan. “I just don’t want our kitchen to go up in flames, okay?”
“It won’t, stupid.” Leon joins his side, a plate of sliced neen goh in his right hand and a bowl of whisked eggs in his left. “Yao, Vic, Ling and I have cooked our stuff like this since we were tiny.” Using chopsticks, he picks up a slice of pearly neen goh and dips it in the egg mixture, then drops it into the pan of bubbling oil.
Harald watches it sizzle, asking, “why do you have to dip it in egg?”
“To stop it from sticking to the pan.”
“I thought the oil already helps do that.”
Leon shrugs. “I don’t know, it’s just something we do. Some people use spring roll wrappers, if it makes a difference or not, I have no clue.”
The first batch of neen goh is done quickly, and Harald drops them onto a plate before Leon places five more slices into the frying pan. Not long after, they carry the steaming plate out into the dining room, placing it right next to a cheap plastic chuen hap.
The neen goh, sticky-sweet with sugared glutinous rice, sticks to Harald’s chopsticks as he eats. Leon finishes first, and once he clears his plate he takes a white rabbit sweet from the chuen hap and pops it in his mouth.
“So,” Leon says, chewing on his sweet, “what do you think?
“This is nice,” is all Harald can say. “We don’t have much, but I’m happy. And — “ almost shyly, he looks over to Leon — “that’s all that matters, right?”
Leon kisses him. His lips taste of milk sweets and coconut milk. “That’s all we need.”

Cultural notes:
Neen goh is a sticky, sweetened rice cake, similar to Japanese mochi, that is fried and eaten during lunar new year. There are many flavours, such as black sugar, ginger and coconut milk — personally, I think the coconut milk-flavoured ones taste the best.
A chuen hap is a box filled with various treats that symbolizes togetherness. The white rabbit sweets that Leon eats are milk sweets wrapped in rice paper (they’re really good).

@thecoffeecup haha when used here the word porridge means a thick rice soup that is either plain (just rice and water) and eaten with savory side dishes, or flavored with meat/fish/veg. the most common ingredients for the latter are pork/chicken/peanuts/dried seafood/fresh white fish/century eggs. i think this is what folks outside the region tend to call congee? we also have a sweet rice porridge here that is made from a purple-black glutinous rice, flavored with screwpine leaves, rock sugar and coconut milk

- 3/4 to 1 cup sugar
- 4 cups water
- 1 tsp vanilla extract
- 1 can coconut milk
- 1/2 cup water
- 1/2 tsp salt
- 1 tbsp sugar
- 1 tbsp cornstarch
Notes
- Black-eyed peas were cooked from dry by covering with water and pressure cooking on high for 14 minutes. Next time, consider 12 minutes and remember to rinse thoroughly after.
- Pandan leaves and glutinous rice and coconut cream vs. coconut milk may improve the finished product.

Characteristics of different types of Rice
Unlike potatoes and pasta, rice may be prepared in a wide variety of ways, and it tastes great. Take a look at this breakdown of the many options.
Different types of rice, categorised by the length of their grains, can have a variety of mouthfeels, from light and airy to rich and sticky. Shades of brown, white, and red are all present.
Different types of rice require different preparation methods and are better suited to different cuisines due to their unique size, shape, and texture. In terms of food, different nations have distinct preferences. If you are looking for the most prominent supplier of Non-sticky basmati rice in India, Punit Proteins is the best choice for you.
Different Types of Rice:
- Long-grain rice:
In keeping with its moniker, long-grain rice features grains that are noticeably longer and narrower than standard short-grain varieties. The grains normally stay separate during cooking, and the final product is usually dry and solid. Even though long-grain brown rice is also available, the vast majority of rice sold is in its refined white form. Patna rice originates in Asia, while the slightly chunkier Carolina rice is a product of the United States of America.
- Basmati rice:
Basmati rice is long-grain rice characterised by very long, slender grains that retain their shape and flavour when cooking. This aids in maintaining steady blood glucose levels. The starchy milling powder can be removed by rinsing Basmati rice before cooking.
- Chinese black rice:
Rice that has not been processed has a darker outer layer and wider, flatter grains. Typically, it is soaked and steamed. Palm sugar along with Coconut milk, are combined to make a sweet treat in Asia.
- Glutinous rice:
Sticky rice, often known as Chinese rice, is a staple ingredient in many Southeast Asian recipes. It has very round, white, chalky grains. The name is ironic given that it is gluten-free like any other type of rice. After being soaked and steamed, the grains become incredibly sticky and almost impossible to separate. You can roll it into little balls and eat it with your fingers or chopsticks. Leaving the sticky rice aside, choose Non-sticky basmati rice by Punit Proteins.
- Jasmine rice:
The eastern Asian region is responsible for the cultivation of aromatic rice such as Thai fragrant rice. Perfumed and somewhat stickier as compared to the other long-grain rice after cooking, this kind is unique. Thai cooking typically employs this rice because of its versatility and ability to complement other Asian flavours.
- Paella rice:
Produced in the Valencia region, this is a staple ingredient in the national meal of Spain, paella. It resembles risotto rice in that it has a plump, short grain, but the texture is less creamy.
- Par-boiled rice:
This is wholegrain rice that has been soaked, steamed, and dried before being milled and polished; it is sometimes referred to as processed or converted rice. More nutrients are maintained thanks to the technique, which concentrates them in the centre where they would normally be lost in regular white rice. This rice has a more golden hue than regular white rice and requires a slightly longer cooking time. The grains won't clump together even if you overcook them.
- Quick-cook rice:
This is not the same as parboiled rice despite going by the same name. Unlike regular long-grain rice, quick-cook rice only needs roughly half the time to cook since it is partially boiled after milling and is then left to dry. Since it is cooked twice as long as regular rice, this rice loses a lot of its nutritional value, notably the B vitamins that are water-soluble.
- Red rice:
Red whole-grain rice possesses a nutty flavour along with a little chewy texture. Camargue, France produces the highest grade red rice, however, red rice grown in North America is also available.
- Risotto rice:
Italy is known for its medium-grain rice, which has round, plump grains and white colour. Grain texture and individual shape are preserved while cooking with liquid mixed in slowly. Vialone as well as Carnaroli Nano risotto rice are even superior to the more popular Arborio. - Short and medium grain rice:
As a result of the presence of amylopectin, a starchy component of rice, this rice tends to stick together. The individual grains hold together after cooking, making this type of rice ideal for risotto, pudding, and sushi, among other foods.
- Sushi rice:
Short-grain rice, such as that used in sushi, is often soaked and cooked using the absorption method. To make sushi, materials like raw fish or vegetables are chilled and seasoned before being rolled up in nori seaweed. Sushi rolls stay together because of the sticky rice.
