Layer the remaining sheets, brushing each lightly with butter, including the top one. If your sheets are larger than the pan, trim the stack all at once so the edges are flush with the pan. Cut baklava into 3-inch squares, and pour any remaining butter around the edges. Bake for 40 minutes, or until top is a light golden brown.
Meanwhile, prepare simple syrup: Boil granulated sugar and 3/4 cup/180 milliliters water together in a small pot over medium-high heat, stirring to combine. Remove from heat and add lemon juice. Stir, set aside and let cool to lukewarm.

PREPARATION:

5 ounces/140 grams dried apricots (the plump orange kind), quartered
10 garlic cloves, peeled
3 cinnamon sticks
4 whole star anise
½ cup plus 2 tablespoons/150 milliliters olive oil
1 Âľ cups/340 grams basmati rice, washed until water runs clear, then drained well
3 scallions, trimmed, then thinly sliced at an angle
ÂĽ cup/5 grams loosely packed parsley leaves, picked with some of the stem attached
PREPARATION
Bring a small pot of water to a boil and heat the oven to 450 degrees Fahrenheit/230 degrees Celsius.
Add the ancho chile to a heatproof bowl and pour over enough boiling water to cover. Let sit to rehydrate, about 20 minutes, then discard the soaking liquid and roughly chop the chile, seeds and all.
Transfer the dried porcini mushrooms to a medium saucepan and add the stock, 1 1/2 cups/360 milliliters water, 1 1/4 teaspoons salt and a good grind of pepper. Bring to a simmer over medium-high heat, then set aside.
Add the oyster and portobello mushrooms, onion, apricots, garlic, cinnamon, star anise, chopped ancho chile, 1/2 cup/120 milliliters oil, 1 teaspoon of salt and a good grind of pepper to a roasting pan (tin) that is about 10-by-13 inches/26-by-34 centimeters. Give everything a good stir, then bake until the vegetables are soft and well browned, 40 to 45 minutes, stirring halfway through. Remove from the oven, transfer half the mixture to a medium bowl, then arrange the remaining mushrooms in an even layer in the pan. Sprinkle the rice evenly on top of the mushrooms in the pan, without stirring, and set aside.
Bring the porcini mixture back up to a simmer over medium-high heat. Pour the porcini mixture over the rice, again without stirring, and cover the roasting pan tightly with foil. Return to the oven and bake until the rice is cooked through and has started to brown on the bottom of the pan, and the apricots begin to caramelize, about 25 minutes. Remove from heat and let sit, covered, for 10 minutes. Remove the foil and gently stir everything together.
Add the scallions, parsley and the remaining 2 tablespoons/30 milliliters oil to the bowl with the reserved mushroom mixture; stir to combine. Spoon this over the rice mixture and serve.

Shrimp Noodle
Hey, welcome to my another post! In this post I'm gonna talk about food. So last Saturday, I cooked a delicious noodle with my mom. Actually, we were intended to make a mie hokkien, if the spelling is correct, one of signature dish from Singapore. We just found it out on Asian Food Channel. But in the end, we did not know what should we called our dish, so just say that it is a shrimp noodle hehe :D
So, what are the ingredients?
The first one is the noodles. What kind of noodle that we used? Well, instead of buying the one that ready to cook in supermarket, we chose to make the noodle by ourselves. Do not thinking too hard, because we did not make it manually. My mom bought a ... lets say, fantastic machine to make noodle. It is called Re-Noodle. The machine will fold in the dough for three minutes, and after that it os starting to shape the noodle with your chosen mold. The machine is included with ten different kinds of mold, so you could choose whether to make noodle, or maybe spaghetti, fettuccine, or even lasagna. It is include to with food scales. This is how the machine looks like. For more information about the machine, you could check it out here.
For this recipe, I used 600 grams of medium protein flour. To fold the dough, instead of mixing it with water and eggs, my mom made and used shrimp stock. We boiled together the head of shrimps (pull it of from the body, then put aside the body), two cloves of crushed garlic, four of crushed white gingers (well in Indonesia it is called Kencur), One and a half of crushed galangals (or Lengkuas), and some pieces of chopped leek to make a delicious stock. Oh, do not forget to put in some salt. I used about 400 milliliters of shrimp stock for the noodle dough. Actually, the machine already make the basic measure between the flour and the water and the flour with the mixture of egg and water. For stock, I thought it is included in water category, but it is written in gram. If you really want to follow the basic measurement, do not forget to scale your water usage with scales that already included with the machine.
The second ingredient is the shrimp itself. You can use the shrimp body that already put aside. It was used as a garnish at the end.
The third ingredient is the chili sauce or we called it Sambal. For the sambal, we used the head of the shrimps, two cloves of garlic, two cloves of shallots, fifteen of small chilies, and one of big chili.
And the last ingredient is leek as a garnish too.
Then lets start to make the recipe!!!
First one, we made the noodle. Put in 600 grams of flour to the machine and close the lid. Turn on the machine, and for your information, the machine have four choices based on the portion that you are going to make, which are 150 grams, 300 grams, 450 grams, and 600 grams. Press the 600 grams, and it will start folding. While the machine folding in the dough, pour the water (for me it is the shrimp stock) to the hole on the lid slowly. After three minutes, it will turn backwards and the machine starting to mold the noodle. Cut the noodle when you think it is already enough for one portion. Boil it right away.
While I was busy with making noodle, my mom was the one who stay near the stove. Before, she already fried the shrimp together when she boiled the stock.

Then she made the sambal. Firstly, fried the head of the shrimps, garlics, shallots, small chilis, and big chili together using medium heat. After it is starting to get brown, put it in to the mixer, and mixed it until it crushed well, after that put it back on the pan and heat it with a glass of water. And just it, the sambal is ready.
After you finish boiling the noodle, put it on the plate, pour the sambal, and the last touch is put some pieces of shrimps and spread the leek as the garnish. Tadaaaa!!! This is how it looks like.
