If you want a more saucy texture, I use a carrot-parsnip-bok choy base on pasta & pizza, and it spreads really smoothly. The recipe calls for celery but I don't like it so I use Bok Choy instead to balance out the sweetness of the carrots and parsnips, but if you want a sweeter sauce you could skip it. it's definitely still quite a sweet sauce even with the bok choy though, more pasta sauce than pizza sauce flavor.
1 tbsp olive oil (sub avocado oil) 2 cloves garlic, minced 1 white onion, diced 2 1/2 cup carrots & parsnips, chopped 1 1/ cups celery (about 4 stalks) [OR bok choy], chopped 1 1/4 cup beet, chopped 1 tbsp fresh basil 1 tsp oregano 2 tsp parsley 1 tsp sea salt 1 cup water 2 tbsp lemon juice
INSTRUCTIONS Use a large, deep sauce pot to sauté the garlic and onion on low heat in olive oil until softened. Add the remainder of the veggies and sauté for a few minutes. Add about 1-1.5 cups of water to the pot (just enough to cover the veggies) along with the herbs and bring to a simmer for about 30 minutes or until the veggies are completely softened. Allow to cool. Pour off some of the water if a thicker sauce is desired. Combine all of the of the veggies and seasonings with the lemon juice in a blender and blend until smooth.

Okay technically this is four cups of sweet potato, not yam, but then the joke isn't funny. What you see up in that photo are a tub of mashed sweet potato along with one tub of pasta sauce and two of bbq sauce all made with a sweet potato base.
There are a number of people in my life who can't have tomatoes or, more broadly, acidic food, so having established a decent recipe for pizza sauce for my ongoing "How weird can I get with pizza" project, I went looking for a way to make tomato-based sauces without tomatoes.
What I found was that sweet potato puree cooked with a little red wine makes a good "tomato" base; add cream and Parmesan for pasta sauce, or vinegar, onions, and honey for barbecue sauce (with appropriate seasonings). I haven't tried the pasta sauce with pasta yet, but this morning I made baked beans with the bbq sauce, and it...has room for improvement.

The moisture cooking out of the sweet potatoes made it more like a beans-and-potato casserole; it has a decent flavor but there's not a lot of depth, and the texture is mushy, though part of that might be that I overcooked the beans (for this method, you cook the beans separately and then bake them in the sauce). I think thinning the sauce with some mushroom broth might be in order, which will also add the umami note it's currently missing. But eh, edible and low-acid, so it's a good start.
The pasta sauce recipe is here; the only change I made was using an italian seasoning mix instead of fresh herbs because my basil plant is currently recovering from a pesto rampage and I don't see the point of parsley in sauce. I'm bootlegging the barbecue sauce recipe off of the pasta sauce base, so I don't have a link for that, but I'll post it when I'm satisfied it's been sufficiently improved.
