Foodie Friday! First Fall Edition!
There are many things to love about Friday, and Foodie Friday is one of them! Now that it is beginning to show signs of the change to Fall, we have so many more options for warm, cozy dishes that are delicious, easy, and healthy!
I found myself being extremely mentally, physically, and emotionally exhausted after this long work week. There are so many areas in our lives that can take a toll on our emotions and health, whether it is stress at work, a relationship (romantic and friendship, even family), and it is important to bring ourselves back to a place where we feel refreshed and confident to take on whatever lies ahead of us.
A way that I bring myself back is by making myself a dish that I used to eat as a child. Something that will bring back nostalgic memories of a time where things were easier and we had less worry, and it brings me a sense of comfort and relief. Here is where Foodie Friday comes in...
This week's recipe is an adaptation on my mom's famous Baked Apples. What's more comforting than curling in a blanket with a warm baked apple with a scent of brown sugar and cinnamon that fills the air? Nothing!
Baked Apples
One apple per person, so this recipe is for one! :)
1 large Pink Lady Apple ( Can also use, Fuji, Gala, or even Granny Smith. Note: Granny Smith apples will be more tart, so you can always add more sugar if desired).
1/2 cup golden raisins
1/4 cup dried cranberries (optional)
2 tbs. brown sugar (dark or light)
2 tsp. cinnamon
1 tbs. warm water
Optional: 1 tsp. pumpkin spice seasoning
First, you want to peel and core the apple because it is essentially going to be baking and steaming at the same time in the microwave.
Please apple in a microwave safe dish. Combine brown sugar and cinnamon together and sprinkle generously on the apple. Make sure to put a little bit of the mixture in the middle of the apple where the hole is from the core. From there, sprinkle raisins and cranberries (if desired) around the apple and also inside where the core used to be. Add water to the dish, cover with plastic wrap, and put the apple in the microwave. I like to go 5 minutes at a time, depending if I want a little crunch left in the apple or if I want it to be completely soft (usually my favorite). I prefer to go about 10 minutes so that the water and sugar can almost caramelize the apple, while the dried fruit gets re-hydrated by the water and spice mixture. Let apple cool for 5 minutes!
After the apple has cooled, remove the plastic wrap, and there you have it. An amazing dessert that is easy, can be modified even more to be an even healthier answer to the sweet tooth, and a homey dish that can bring comfort to you this fall.

Foodie Friday!
Foodie Friday is back!!!
Treat yourself to this delicious, healthy snack that is a wonderful way to get your carb craving that is bursting with flavor (not to mention easy to make and great for kids!)
Quinoa Tabouli Salad
2 cups quinoa (follow cooking instructions on box for amount of liquid to cook quinoa in, I like low-sodium vegetable stock or low-sodium chicken stock instead of water because it gives more flavor)
2 large roma tomatoes, chopped
1/2 red onion, finely chopped
1/2 cucumber, cut into small cubes
1/2 cup kalamata olives, chopped
2 tsp. lemon zest
1/2 lemon, juiced
1/2 cup parsley, chopped
Greek dressing
1/4 evoo (you can add more if you find your salad to be dry)
1 tsp. dried oregano
1 clove garlic, minced
4 tbs. red wine vinegar (can also add more if you would like)
salt and pepper to taste
After the quinoa is cooked, combine all the vegetables together and mix until incorporated. Slowly stir in the Greek dressing to your desired liking. Reridgerate for an hour before serving to let the ingredients have a chance to set together. Enjoy!
So easy, SO delicious, and and incredible way to get your vegetables and grains with a healthy snack that can be kept in the fridge for up to a week. This is a great dish to make on a Sunday to either serve with dinner or serve during the week as a snack or lunch, even for your kids!

Fitness Fact Friday!
Every Friday, I like to focus on a fitness fact that can be very helpful for our daily workout routines. For me, I feel like lean, toned arms are extremely important for a woman, and it can be one of our most attractive body parts if we work them out the right way! (Let's be real, we all want Michelle Obama arms).
I don't want to spend time focusing on what exercises to do because the basic bicep/tricep curl, tricep dips, push-ups, etc. are all exercises we are capable of handling, so what I want to focus on is proper form and what can give you lasting results the RIGHT way.
Fitness Friday: Tips for Tight Toned Arms
-While lifting weights, never lock your elbows. We don't want to put any extra stress on our joints. Slow, controlled movements will give optimal results.
-Train your arms 2-3x a week, but make sure to rest in between. Your body needs time to recover!
-Don't forget about your core! While lifting free weights, make sure your body is in alignment; navel to spine to activate the core, shoulders down away from your ears, and allow your arms to be the star of the workout!
-Make sure to include foods high in protein when trying to build muscle and strength. Even a snack of a protein bar (low in sugar) or low fat yogurt can help to assist with the building of strong, toned muscles.
I hope these are tips that everyone can keep in mind when they hit the gym next! Working towards your goal of fitness and health is all about learning, growing, and being consistent, and it is always important to have the knowledge needed to perform at our best!
