Wheat Orotti

This healthy and easy wheat Orotti is made with few ingredients. Do try it for your breakfast and dinner
Ingredients
Periyar Rice Atta - 2 cups
Onion chopped - 1/4 cup
green chillies - 2 tsp
grated coconut - 1/4 cup
curry leaves chopped - 1 tsp
salt as needed
ghee as needed
Method
Mix Peryar Atta powder, onion, green chillies, grated coconut, curry leaves and salt to make a loose dough (slightly thinner than chapathi dough, but not like dosa batter) by adding water.
Heat tawa and smear some ghee.
Take some dough in your hands and press on to the tawa and shape them.
Fry on both sides. Serve hot with curries, chutneys or pickles.

Today's Recipe: Kinnathappam – Easy Steamed Rice Cake
Ingredients
1 cup periyar rice flour (the type we use for making appam)
1 cup thick coconut milk
3/4 cup sugar
salt
1/2 tsp cardamon powder
cashew nuts (optional)
jeera (optional)
ghee / butter for greasing
Instructions
Mix the rice flour, coconut milk, sugar and a pinch of salt. The batter should be watery.
Taste and add more sugar if needed. Keep aside for 15 minutes.
Grease a cake tin with butter or ghee and pour in the batter.
Steam it for 5 minutes. Then put the cashew nuts / jeera onto the kinnathappam and again steam for 15 minutes.
Serve with tea.

Today's Periyar Recipe - Avil Payasam
Ingredients
Periyar Rice Flakes - 1/4 cup
Jaggery -1/4 cup
Milk - 2 1/2 cups (boiled)
Ghee - 2 1/2 tsp
Cashew nuts -5-6
Cardamom powder -1/4 tsp
Saffron -2-3 strands
Raisins - 8-10
Preparation
Heat a teaspoon of ghee in a pan and fry raisins and cashew nuts separately. Keep it aside.
Soak saffron strands in a tbsp of milk and keep it aside.
If jaggery has impurities, dissolve it in little water (less than 1/4 cup) and filter it.
Method
Heat ghee in a pan, add Periyar Rice Flakes and fry till it changes color.
Add boiled milk to the aval, simmer and cook till milk reduces a little. Simultaneously aval will also become soft.
Then add jaggery, cardamom powder, saffron, mix well and switch off the flame immediately.
Garnish with cashew nuts and raisin and serve hot or cold.

Ari unda /Rice Laddu
Ingredients
Parboiled Rice: 1 Cup Grated Coconut: 1 Cup Jaggery Grated: 3/4 Cup Cardamom Powder: 1/2 Tea Spoon Water: 2 Table Spoon Cooking Time: 15 Minutes
Method
Wash the rice well and drain off all the water
To a thick bottom pan put the rice and roast the rice in medium flame till rice starts to puff up and
Crackle and change color to golden brown
Once the rice cools (Its better to grind the rice when it is warm) grind it into powder.
You don't have to make it too fine. Just make it like puttu podi.
Coarsely grind the coconut and add it to the rice flour. (Put it in a mixer and stir for a few seconds)
Put the grated jaggery to a pan and pour water to it and melt it well in low flame
Strain it and pour it to the rice mix
Using a spoon mix rice flour, coconut, jaggery and cardamon powder
Allow the mix to cool a bit and take small portions of the mix and roll it to small balls.
Serve it with a cup of tea

Today's Periyar Special - Neer Dosa
“Break the fast like a king, have a lunch like a prince and dine like a poor person”
Ingredients
Raw rice - 1 1/2 cups Fresh coconut - 2 tbsps, grated Salt to taste Oil to grease pan
Method
Wash and soak rice for at least 3-4 hours.
Drain the water and grind the rice along with the grated coconut to a fine paste adding water as required. 
Add salt to taste and mix well. 
Grease an iron tawa and heat it on high flame.
Place a lid over the pan and cook on medium high flame for approx a minute. 
The dosa will remain white and not brown. So do not overcook it. 
Remove from pan, place on a serving plate and serve the neer dosa with chutney of your choice, egg curry or chicken curry.

A Healthy Breakfast Recipe - Broken Wheat Upma
Broken Wheat Upma, as the name suggests is a nutrient-rich wheat based upma. While the broken wheat brings in loads of dietary fibre and energy, carrot and green peas bring along a wealth of nutrients, especially vitamin A. The veggies also add crunch to an otherwise soft upma. You may also add other veggies of your choice to make it more colourful and tasty.
Clean and wash the Periyar broken wheat thoroughly. Par-boil the broken wheat in 2 cups of hot water for 3 to 4 minutes. Drain and keep aside.
Heat the oil in a pressure cooker, and add the mustard seeds.
When the seeds crackle, add the green chillies and sauté on a medium flame for a few seconds.
Add the onions and ginger, mix well and sauté on a medium flame for 1 to 2 minutes.
Add the green peas and carrots, mix well and sauté on a medium flame for 1 to 2 minutes.
Add the broken wheat, salt and 1¼ cups of water, mix well and pressure cook for 2 whistles.
Allow the steam to escape before opening the lid.
Garnish with coriander and keep aside to cool slightly.

Eggless Rava Cake
Rava Cake is a delicious fusion of Indian flavours in European recipe.
Ingredients:
5 Cups Fine Semolina or Sooji Rava 1 Cup Whole Milk 1 Cup Sugar 1 Cup Beaten Yogurt ½ Cup Ghee ( Pure Desi Ghee works best, but regular Butter can also be used) 1/2 tsp Baking Soda ½ tsp Cardamom Powder (Can use Vanilla essence also )
Method:
Soak the semolina in warm milk for atleast 20-30 mins.
Beat the yogurt with the sugar, till the sugar dissolves
Add the baking soda, ghee and the soaked semolina , along with cardamom powder and beat till
smooth.
Pour water in a pressure cooker with a stand at a level of about 1 inch.
Let the water boil.
Grease a baking tin with ghee and dust with some fine rava or flour.
Pour the mixture into the baking tin. Tap to settle the batter. -Make sure the batter fills only ¾ th of the
baking tin, to make space for the cake to rise.
Cover the tin with an aluminium foil. Pierce the top with a knife for steam to pass.
Carefully place the tin over the pressure cooker stand.
Cover the lid of the pressure cooker without the whistle.
Steam on a medium to low heat for 15-20 mins.
Let it stand for 5 mins further and then remove the tin.
Allow to cool for 30 mins before de moulding.
For a fluffy cake, make sure you use fine semolina and soak in warm milk.
Once baking soda is added to the batter, immediately begin the steaming process. This will make the
most of the activated baking soda and will make the cake rise beautifully.
The aluminium foil is to save the cake from any water spilling during the steaming process but can be
avoided.

MALABAR RICE HALWA
ITS THE TASTE OF TEA TIME!!
Ingredients:
Raw rice flour - ½ kg
Jagerry - ½ kg
Milk - 3 litres
Ghee - 1 kg
Method:
Grate jagerry nicely and mix with milk and boil in slim heat.
Stir continuously till jagerry immersed fully in milk.
Then add rice flour little by little and stir simultaneously.
When it gets thickened ads ghee and stir well till all mixes well
In sim heat and take out.
spread the above on a plate in which a spoon of ghee is already
Spread on the bottom.
Cut into pieces when it is warm

Easy wheat flour murukku
Ingredients
Wheat flour - 1 cup Red chilli powder - 3/4 tsp Jeera/ ajwain - 1 & 1/2 tsp Asafoetida - 1/8 tsp Salt - as needed Oil - For deep frying
Preparation
Steam cook atta in a clean white cloth, tied into a bag. You can use your idli pot and place this bag over the idli plate. I used my bamboo mesh too over the plate. You can use pressure cooker also for steaming. Keep the bag in a container and cover and cook without pressure value (pressure regulator).
Steam cook for 15 mins to 20 mins.
Untie and when it is warm enough to handle, break it roughly.
Sieve it and use ur hands to break, if there is any small lumps. I used the clover shaped hole plate for this murukku. Its your choice to choose.
Heat oil in kadai meanwhile you prepare the dough. Add red chilli powder, asafoetida, salt and jeera.
Add a tsp of oil (preferably hot oil) too. Make dough with water. It should be a stiff yet smooth and non sticky dough.
Press into coil shape or what ever comfortable shape you prefer. I opted for this coil shape murukku.
Please refer the video for guidance in the bottom of the post. I pressed in a plastic cutting board and used dosa spatula to take it and transfer to oil..
Deep fry in hot oil, cook both sides until the shh… sound and bubbles reduces. Until crisp and golden brown. Never let oil fume at any point, regulate the heat now and then and ensure even cooking of the murukku. You can press the next batch of murukku while a batch is getting cooked. Drain in paper towel.
