Vegan breakfast doesn’t mean raw kale only - get creative! Try making the things you had as a kid that you still have cravings for. That’s what helps you stay on a plant powered diet! That’s not chicken... we’ve lucked out, and with a generous gift from @chefsspecialchicago while closing doors for quarantine, beyond chuffed to make a plate of lions mane mushrooms, with a snow pea tip salad and botan calrose rice. Lions mane mushrooms are very rare, and usually foraged. They are also prized by eastern medicine for having strong respiratory rehabilitative properties. Today’s mission: vegan Caldo de Res. It’s basically a Mexican beef soup with lots of tasty veggies, but I swapped in a house made seitan and ramped up the vegetable quotient, and added jalapeños and citrus! Fellow chicagoans, and likely people all over the world, you can likely find a prepared container of this in any latinx grocery store all ready to go! It should have onion, celery, carrot, corn, zucchini and/or chayote squash, potato, and maybe cabbage lime and cilantro. Take it home, cook the carrots celery and onion with some good oil first, add your stock and potato, bring it to a boil and add your squash and cabbage, cook another 10 mins or so, then serve with citrus, jalapeño, and cilantro! Suddenly you’ve got a killer, homemade, and healthy soup in less than an hour! There's no great way to photograph curry without covering it up with pretty garnishes. So I'm just going to leave this here and say THE UGLY FOOD ALWAYS TASTES THE BEST 😻😻😻 . . This "orange" Dahl is no exception; a Peazy Riff between Thai yellow curry and Indian Red Dahl and the space between them. It's got rich coconut to balance out green chile heat, huge aromatic hits from my own Ras El Hanout spice blend, some extra extra cumin and coriander, plus a huge helping of Thai yellow curry paste with Kafir lime and fresh turmeric. 2 words. Vegan. Quiche. Goddamn, @fancyplantscafe ! First visit to this new Chicago spot and I am impressed. Spoke to the owner for a bit and found he's an alum of Millenium restaurant in San Francisco -- a place I had one of my all-time favorite meals and drank too much good wine to remember. Of course I had to try this beautiful and flaky quiche in the case. And I'll tell you, it delivers! They've also got killer coffee and a whole stacked case of sweets, but you've got to visit between 7a-3p to catch them while they're open! Makin' that good good potatoes au gratin with @violife_foods parm and homemade cashew sauce. Adapted from @minimalistbaker and tweaked with that Peazy style, I.e. Doubled, dipped, and dosed with even more flavor -- things like adding smoked paprika, white wine, fresh chives, and roughly 3 times the garlic (because when a recipe calls for garlic, it's more of a guideline 😉). Next time I want to try with bacon seitan!
