SPICY SMOKEY VEGAN CHILI 🌶
I’m currently on the 1st day of @arbonne 30 days to healthy living program 🙌🏽 I’ll post more details later. The goal is to help reset your gut, strengthen will power, and focus on fueling your body with whole foods. The smoke comes from smoked chipotle powder. I used @chocolatecoveredkatie vegetarian chili recipe just added more spices/some different amounts. I like my chili spicy so use less spice it spicy ain’t your thing.
INGREDIENTS
1 large onion diced
1 can black beans
1 can garbanzo beans or beans of choice
3 cups vegetable broth
2 14- oz cans fire roasted diced tomatoes
1 tbsp chili powder
1 tbsp smoked chipotle powder
1 tbsp cumin
1 1/2 tsp garlic powder
1 tsp kosher salt
1 tsp oregano
1 tsp cayenne (optional if you don’t like spicy)
few shakes of your fav hot sauce (mine is @tapatiohotsauce)
lots of baby carrots
1 zucchini chopped small
1 can corn (drained and rinsed)
nutritional yeast or vegan cheese (for garnish, optional)
brown rice precooked
DIRECTIONS
Drain beans and rinse well. Add all ingredients to a large pot, cover, and bring to a boil. Once boiling, turn heat low and cook the chili uncovered until the carrots are fully cooked (can easily put a fork in it) and chili has thickened. Top the chili with garnishes and hot sauce if you’d like!

Good morning everyone! Today I take my MCAT. I woke up early to relax a little during breakfast and review a few more physics and chemistry equations. For breakfast I had a plain Quaker Oats packet with cinnamon, lil honey, natural pb, and banana. On the side I had iced coffee with cashew milk and a little bit of nondairy vanilla creamer. Wish me luck!

Breakfast was a 4 ingredient gluten free pancake topped with coconut peanut butter. Wish I had some fresh berries to top it with but I need to go grocery shopping soon.
4-ingredient gluten-free pancake recipe
1 fresh banana mashed up, 1 egg whipped into it, lol bit of vanilla extract (just a few drops), add as much cinnamon as you want. I also add a lil salt in there too but that’s optional. Cook the pancake on medium heat and don’t flip until the bottom is fully cooked. If you flip it too early it’ll turn into a scramble but that’s fine cause it still will taste delicious. I did 30 minutes of yoga and took my dog Stella for a walk for my workout today. Didn’t feel like going to the gym so I just listened to my body and knew it needed some gentle movement and stretching. After that I made myself a peanut butter vanilla protein shake for dinner. I’m keeping things light today because this week I ate a bunch of pizza and mango bread. Life is all about balance and of course I don’t normally just have a protein shake for dinner. I also plan to drink two alcoholic drinks later, probably 2 white claws hehe. Hope you all had a great Saturday!
Here’s the recipe for this protein shake:
1c almond milk, 1 scoop vanilla sunwarrior collagen protein powder, 1 tablespoon peanut butter, 1 frozen apple banana, 1 tablespoon chia seeds, 1 teaspoon spirulina powder, and 1 cup of ice. Blend everything together until smooth! Enjoy :)

For lunch I had a mango (not pictured) and honey oat pesto toast topped with a scrambled egg, salt, pepper, nutritional yeast, and tapito hot sauce. This doesn’t look like much but it tastes so damn good!

Breakfast this morning was a double fiber English muffin topped with natural pb, banana, and cinnamon. On my iced I had an apple cider vinegar cocktail (water, 1 tablespoon apple cider vinegar, cinnamon, and cayenne pepper). After this I had some iced coffee with cashew milk.

I had some beet hummus and baby carrots for another snack cause the mango and protein bar didn’t fill me up enough. This was so tasty. I love beet hummus! :) Also, yes my nails are painted different colors. Why? Bc it’s more fun duh.

Didn’t post yesterday’s lunch or dinner but I had a protein shake yesterday for lunch then tofu veggie Indian curry last night. This is lunch/more of a snack but I wasn’t too hungry today and didn’t wanna feel weighed down because I teach aerobics soon. I enjoyed a coconut peanut butter protein bar and a ripe n juicy organic mango (from my friends backyard!). My sweet cravings are satisfied meow.

Happy Tuesday everyone! This is probably my all time fav breakfast at the moment. Toast with pesto, a scrambled egg topped with tapitio hot sauce. On the side with two veggie morning star sausages. I sipped on some iced coffee with cashew milk and agave to sweeten it. I had a bikini photoshoot for San Lorenzo Bikinis this morning so I had a banana before this and then once the photoshoot was done and I got back home I made this.

Breakfast this morning was quick and light. Just had a peanut butter protein perfect bar and some iced coffee + cashew milk. I’ll have a bigger lunch later. But I have exciting news! I’m doing a bikini photoshoot today for San Lorenzo bikinis. I’ll post some pictures sometime this week :)

Dinner was a super delicious & easy salad. I lightly dressed some green leaf lettuce with papaya seed dressing and topped with with baby carrots, a cooked veggie burger, and some beet hummus. It was so tasty and super easy to make. After dinner I watched the first episode of Chernobyl (which is CRAZY! Who else is watching this show?) and ate some popcorn with my boyfriend. We also had some hibiscus tea to end the night with.

Breakfast this morning was iced coffee with silk vanilla oat milk and my apple cider vinegar metabolism cocktail. I took my B complex vitamin while I waited for my whole wheat English muffin to toast. I topped it with coconut peanut butter, banana slices and some cinnamon. In high school I’d practically have this breakfast or oatmeal every day. After this I’m heading to the gym! Hope you all have an incredible Monday.

Lunch today was a salad from The Counter. In the salad: Local mixed greens, 1/3 lb vegan veggie patty, sprouts, carrots, quinoa, roasted onion, fresh grilled pineapple, kale, dried cranberries, avocado, and dijon balsamic dressing. I ate the salad with my reusable bamboo fork. I carry bamboo utensils I bought off Amazon in my bag at all times! :)

May is mental health awareness month. I didn’t always feel this happy. I’m extremely passionate about mental health because I was in pain for a long time until I reached out and got help 8 years ago. My mind was a prison and I felt trapped. My eating disorder stole my light and left me tired, depressed and anxious. I got help and changed my whole thought process and relationship with my body. Happiness is your own responsibility and we must fight for it. It’s easy for social media to have a toxic effect on our lives. None of it is really REAL. So stop comparing yourself to someone else’s highlight reel. No one is perfect and everyone is struggling with something. What are you going to do this month for your mental health? I’d love to create more of a community on here and that’s one of my goals! Life is better together.
