Zeytinyağlı (yemekler) (Turkish), Ladera (Greek λαδερά), or bil zayt (Arabic بالزيت) is a category of vegetable dishes cooked in olive oil in Turkish, Greek, and Arabic cuisines. The name in all these languages means "with (olive) oil".
‘Zeytinyağlı’ or ‘Ladera’ consist of vegetables, plain or stuffed, cooked in a tomato, onion, garlic, and olive oil sauce, and usually do not contain meat. Formerly, lemon juice was used when tomatoes were out of season.
They may be stewed on the range-top or baked in the oven.
‘Zeytinyağlı’ or ‘Ladera’ can be served on their own, typically with feta cheese and bread, or with potatoes, bulgur, or pasta. They may also be served as a side dish to fish or meat.
They are often served warm or at room temperature, and are popular in the summer. They are also commonly eaten as a fasting food.
Examples include:
Vegetables including green beans, zucchini, okra, leeks, and eggplant
With lemon, peas, artichokes, fava, carrots, and zucchini
A mixture of vegetables, called türlü (Turkish), tourlou (Greek), or briam.

Our bodies contain over 60% fluid and they can either be in an acidic or alkaline state. Studies have proven that the more we alkalize, the more energy, vitality and health benefits we will have, which makes it important to monitor. A pH of 7.0 is considered neutral: above 7.1 is alkaline and below 6.9 is acidic.We have direct control over our own pH, and can become more alkaline by eating a diet rich in high alkaline foods, and avoiding toxic emotions.
Acid-forming foods include sugar, white flour, grains, alcohol, caffeine, fried foods, meat, eggs, dairy, fish, sodas, legumes and processed foods. A balanced diet when it comes to pH is considered to be 20-40% acid-forming foods, and 60-80% alkaline-forming foods. So what are the best alkaline-forming foods for the body? Check out the list below! You’ll want to start incorporating these foods into your diet to keep essential minerals flowing and your immune system in tip-top shape. 
1. Avocados Not only are avocados delicious, they have a pH of 8.0, which alkalizes the body and helps to neutralize acidic foods in the stomach. Spread some avocado on toast or a sandwich, add it to a salad, or make some homemade guacamole!

LAKERDA
En iyisinin torik den yapıldığı ancak günümüzde bolca palamuttan yapılan mezedir. Evde yapmak için ise bir kaç püf noktası ve tarifi ise;

Efendim iyi bir lakerda yapmak için özellikle soğuk suda avlanmış torik ya da palamut kullanmanız gerekmektedir. Sıcak su balığın etini yumuşatır ve lakerdanız hoş olmaz. Dolayısıyla lodos ta avlanan balıktan lakerda olmaz der ustalar. 
Torik bulmak zor olduğundan en iricesinden palamut alınır yaklaşık 30 35 cm olanlardan. Balığın kuyruk kısmından 2 santim, baş kısmından 2 santim ayrılır ve geri kalan parçalar takoz ��eklinde kesilir. Lakerda yapmaktaki en hassas nokta balığın kanının ve iliğinin iyice yok edilmesidir. Bunun için takoz şeklindeki balıkları elinize alıp tam ortasında bulunan kanaldan süpürge çöpü ya da ince bir tel sokarak iliğini çıkarmanız gerekmektedir. bu aşamayı iyi uygulamazsanız balığınızı şimdiden çöpe atın.
Balıkların iliğini çıkardıktan sonra bir kaba kaya tuzu ( iri tuz ) koyun ve üzerine soğuk su + buz ilave edin. Balıklarınızı bu kaba koyun ve suyunu belli aralıklarla yenileyerek 1 gün boyunca buzdolabında kanının akmasını sağlayın. Kan balıkta pıhtılaşmaya ve bozulmaya yol açmaktadır. alıkların kanının aktığından emin olduktan sonra bir elek üzerine alın ve suyunun süzülmesini bekleyin. Daha sonra bir cam kabın dibine 1 cm kalınlığında tuz koyup üzerine balıkların etli kısımları gelecek şekilde doldurun.
Balıklar üst üste geliyor ise aralara yine mutlaka tuz koyun. balıkları pişirirken nasıl una buluyorsak aynı şekilde tuza bulayıp yine tuzlu kavanozlara balıkları basıyoruz. Kavanoza basılan balıklar yavaş yavaş sularını bırakacağından, ara sıra kontrol ederek balıkların bıraktığı suyu dökün. Yaklaşık 2 hafta sonra mis gibi lakerdanız hazır olacaktır. Daha sonra balıkları tuzdan çıkarın ve yine buzlu suda biraz bekleterek fazla tuzunun gitmesini sağlayın.
İki parmak kalınlığında keserek zeytinyağı ve kırmızı soğan eşliğinde servis edin. Rakıyı unutmayın hakkını verin.
