Ingredients: 200g firm tofu, sliced into cubes. 2 packs of ramen noodles. 4 cups vegetable broth. 2 tbsp soy sauce. 1 tbsp sesame oil. 2 cloves garlic, minced. 1 tsp ginger, grated. 2 cups mixed vegetables such as sliced mushrooms, shredded carrots, and spinach. 2 green onions, chopped. 1 tsp chili flakes optional. Salt and pepper to taste.
Instructions: In a pot, heat sesame oil over medium heat. Add garlic and ginger, saut for 1 minute. Add vegetable broth and soy sauce. Bring to a simmer. Add tofu cubes and mixed vegetables. Cook for 5-7 minutes until vegetables are tender. Meanwhile, cook ramen noodles according to package instructions. Once noodles are cooked, drain and divide into bowls. Ladle tofu and vegetable mixture over the noodles. Top with green onions and chili flakes if desired. Season with salt and pepper to taste. Serve hot and enjoy!
