Went to Pho T&N for dinner last Saturday. I hadn’t been there in a very long time. That last time the server treated us poorly, so I was reluctant. Well, it’s changed a lot. They have spilled over to an area that was next to them (I don’t remember what was there). The decor and staff were very different. Like a new restaurant. I got their tofu spring rolls. They had even better peanut sauce, and there was a ton of tofu in the rolls. I got their steak pho without onions. I hadn’t had their pho before, even though that’s their main thing. It was pretty good. I think it was bigger than at Pho Kimchi. There were a lot of noodles. I couldn’t eat it all. Later, we went to Dairy Queen and I got their ultimate cookie Blizzard. I should have gotten a mini size, not small. Even the small is big. It was good, though.

New spring rolls recipe! I wouldn't usually go for one that includes noodles (I kind of feel that it's a little overkill combined with the rice paper wrappers), but this seemed worth a try.
I made roughly a third of this using 3 rice paper wrappers and 1 small carrot. I made my peanut sauce first (I don't know if it makes a difference, but I always like to think making the sauce first lets the flavor meld for a little longer) before getting my water boiling and moving on to prepping the veggies.
This is all pretty simple and straightforward as far as spring roll recipes go. Adding the sesame oil to the noodles was a great call, as it really prevented them from getting all sticky and added a nice additional dash of flavor. And honestly, the noodles were a welcome addition here — I can't believe how much I've shrugged them off up until this point!
At the end of the day, a fresh, delicious spring roll recipe with a yummy peanut sauce always has my approval, and this one was certainly no exception.

Vietnamese shrimp spring roll bowl with a ginger-lime vinaigrette -
Ingredients:
For the shrimp:
- 1 lb shrimp, peeled and deveined
- 2 cloves garlic, minced
- 1 tsp grated ginger
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp olive oil
- Salt and pepper to taste
For the bowl:
- 4 oz rice noodles, cooked according to package instructions
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 red bell pepper, julienned
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup chopped peanuts
For the ginger-lime vinaigrette:
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp grated ginger
- 1 clove garlic, minced
- Juice of 1 lime
- 2 tbsp olive oil
Instructions:
1. In a bowl, whisk together the minced garlic, grated ginger, soy sauce, honey, olive oil, salt, and pepper. Add the shrimp and marinate for 30 minutes.
2. Heat a skillet over medium-high heat and cook the shrimp for 2-3 minutes on each side, or until pink and cooked through. Set aside.
3. In a large bowl, assemble the cooked rice noodles, julienned cucumber, carrot, red bell pepper, mint leaves, and cilantro leaves.
4. Top the bowl with the cooked shrimp and chopped peanuts.
5. In a separate bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, minced garlic, lime juice, and olive oil to make the ginger-lime vinaigrette.
6. Drizzle the vinaigrette over the shrimp spring roll bowl before serving. Enjoy this fresh and flavorful Vietnamese-inspired dish that is packed with heart-healthy ingredients!

Also i do wanna give fish sauce a try... mostly ive noticed it in vietnamese recipes which is sad bc most of em also have cilantro as one of the important parts... or other igredients im not able to get. But i bought a bottle for the dipping sauce for spring rolls and it tastes interesting... way saltier than i expected... ill have to figure out what to do with it
