素晴らしいお料理がさまざまある中で、ヴィーガン料理は少しづつ増えてきたとはいえ、まだまだ発展途上。 だけど自分はヴィーガン料理というジャンルに明るい将来性を抱いています。

誌面冒頭の案内にもありましたが、最近少しづつですが世の中の贅沢というものの概念に変化を感じるようになりました。

何を持って贅沢とするかは千差万別ですが、贅沢イコール高価だったり希少な食材に必ずしも限定されるものではなく、私個人的な例をあげると、人の手間暇や背景にある環境が合わさって贅沢を感じるようになってきました。

この変化は昨年、長野の野沢温泉を旅したときに朝食で出された麻釜（温泉源泉）で茹でた野沢菜漬けや、飲みの締めに自ら育てた蕎麦の実で打ったざるそばと自家製のわさびをすってを出されたときに、おもてなしに込められた非日常の贅沢という価値観に開眼したことがきっかけになっています。

KLASINAもささやかな贅沢で幸福感に包まれる料理を目指し、もっといろんな物を見て、食べて、もっと勉強を重ね精進して参ります。
