This refreshing Chickpea, Cucumber, and Kale Salad is served in hollowed-out tomato bowls for a unique presentation. It's a healthy and flavorful dish that's perfect for a light lunch or appetizer.
Ingredients: 1 can 15 oz chickpeas, drained and rinsed. 1 cucumber, diced. 2 cups kale, chopped. 4 large tomatoes. 2 tablespoons olive oil. 1 tablespoon lemon juice. 1 clove garlic, minced. Salt and pepper to taste. Fresh basil leaves for garnish.
Instructions: In order to make tomato bowls, cut off the tops of the tomatoes and carefully scoop out the insides. You can use the tomato flesh another time. Put the chickpeas, diced cucumber, and chopped kale in a large bowl. To make the dressing, mix the olive oil, lemon juice, garlic powder, salt, and pepper in a different bowl using a whisk. Add the dressing to the chickpea, cucumber, and kale mix and toss to cover everything. Put some of the salad in each tomato bowl. Add some fresh basil leaves as a garnish. Serve right away and enjoy!

Colours of Yee Sang, a unique combination of raw ingredients consisting of pickled fruits and vegetables arranged in different colours on a round platter. There are also plum sauce, crackers, sesame seeds, grounded nuts, oil, and raw fish (where the dish derive its name from, for the homonym for fish also means Life, thus it means “easy life”). It is an auspicious dish which started in Malaysia and is also practised in our neighbouring country, Singapore, during the Chinese New Year/Spring festival, where families and friends gather around the table and the plate, with their chopsticks held to stir and toss these ingredients while shouting phrases with auspicious meanings to wish for a good year ahead. The belief is that the higher they are tossed, the higher the chances are for the wishes to come true. Initially served on the 7th day of CNY to commemorate the day which was believed to be the birthday of mankind (人日), this act/ practice of Lou Sang/Lou Hei (act of tossing the Yee Sang/toss towards happiness) skyrocketed to such popularity that it already makes its appearance a few weeks before CNY, and continues to dominate the scene until the end of the festive season. Sneak Peek! Chef Robert Felios III Brix and Ale Georgetown, Texas Pleasure meeting with the brand new chef of this inviting restaurant! His specialty is drawing from traditional dishes & adding his own twist on each! He created these 3 dishes for me, that will be on the menu, rolling out this Fall. The masterpieces included: •Tatar’s & Beer Whip... locally crafted beer whipped in cheese, covered in house-made fried chips, chopped rendered pork belly, green onion & seared tomatoes. He called this “Fair Food” • My absolute favorite of the three: Espresso Rub Pork Belly with blackberry compote, caramelized cream, topped with avocado. The deep colored pork paired well with the fruit & lime color topping! “Breakfast meat” •Lastly was the unique flare to Seared Ahi Tuna, served on a bead of sliced green apples, celery, fennel, pecans & beet vinaigrette. Adding warmth to a Salad will work well placing on menu this Fall! All in all, artfully presented dishes & each piece of food impeccably perpared.
