tjs pre prepped veggie kits are a game changer
#i love those tubs of pre chopped mirepoix#and rn i'm using that seasonal holiday hash to make a soup rn and it smells amazing#but also just. bag of pre washed and chopped cabbage. that kinda stuff#ik those aren't unique to tjs except maybe the specific seasonal flavored stuff like the holiday hash#but tjs is where i do most of my shopping and i like their products#i love cooking but i can be strapped for time and energy so it's a gdsend to be able to just#dump a bag of veg into a pot and let it cook for half an hour. and then that's like three or four meals done.#sasha speaks#my soup smells good. i hope it tastes good. but the holiday hash sounded good and smells great#it's like. butternut squash sweet potato red onion celery rosemary sage and parsley#i dumped it into my instant pot with two chicken thighs seared in butter and flour then covered with broth and threw in some thyme#and hitting it on high for half an hour. it smells good#if my cream is still good i might finish it with that#but i think it'll be alright without it#soup is the best way to eat a huge bowl of tasty veggies...#which i need to do more of

ive recently come up with another great creative idea that will also cost a fair amount of money
#it would involve those recipes by people who were guest stars on columbo and i was rereadin em yesterday..... guys . put down the beef#bc what im considering doing is making every single recipe from the 70s era (but with an added fun detail that i wont spoil)#but like. imagining eating all these dishes. they don't all seem good!#resurrecting some of these actors to ask them what the FUCK they were doing in the kitchen#ill never be over leonard nimoys potatoes and bananas recipe. WHAT are you doing. atone for that#and i love laurence harvey dearly but babygirl stop with the fucking gelatin sheets. WE DONT NEED THAT! seasonings are great cus you can make most things taste similar
#my favorite flavors of tajin garlic onion italian seasoning peprika and cayenne#in almost every dish i make#mmm comfort food#had green pepper quesadilla and mashed potatos and because i used those seasonings in both they tasted so similar#recently i learned you can sensory seek via food and wow that really describes me because i season heavily just to get the strong flavor#well after ive eaten too#yum yum#bland foods make me so understimulated sometimes#which is sometimes needed when im overstimulated

a life-changing food option a good friend introduced to me that i officially adore:
potatoes in chili.
#i have no personal history of loving any specific kind of chili#nor arbitrary regional loyalties to this specific dish#therefore any alteration i make is in service of Tasty crockpot Meal With Cheap Ingredients#(tomato based and spiced with cumin among others)#and my husband hates beans but chili still needs to be cheap#so! potatoes!!! also lentils he will tolerate those#and i also like corn in chili myself so i put that in too#also an onion and a little ground beef.#this time i put in liquid that wasn't just tomato sauce#it was the turkey stock i made a few weeks ago#and tbh this chili is fantastic i just wish it had more chunky stuff in it#(aka more potatoes and lentils and corn)#this would be damn good Friday chili if I hadn't put the beef in

#selfie#i can tell you something about every one of these#the sushi was like a spicy deluxe type. i bought it bc I had never seen that fancy packaging before#pictures 2 and 9 are both $5 schnitzel and chips. back when they were $5 not $7#god it's such a great deal. and it's so delicious#third pic is either Christmas or easter dinner. ham and potato salad and red salad#which is made with baked beans onion pickles sauerkraut potato and beetroot#it ties together really well#fourth pic is a satay chicken roll I got from a restaurant that closed down like a week later without warning#those are whole-ass peanuts btw. I remember this so well bc it was during my internship which was during my first year of tafe#the fifth picture is spicy ramen out if a packet. and when I say spicy I mean fucking SPICY#as in tears-streaming-down-my-face spicy#pic six is a steak my mum made me#the seventh picture is a mexican schnitzel. it's avocado sweet chilli sauce and cheese on top of a schnitzel and topped w jalapenos#the salad next to it is leafy greens with julienned carrots#picture eight is a pub schnitzel with just the richest gravy. so dark and savory and delicious bwaaaaah#picture ten is a takeaway schnitzel I got from a local pizza place/italian kitchen. it's notable because the schnitzel itself was bland#like it didn't taste like anything. it was bizarre#the dish on the left is called the [franchise name] hero. it's garlic bread topped with spicy salami and cheese

Download or keep personal physical copies (best purchased with cash to make the purchases less traceable) of all media you want to protect from erasure or censorship, by the way. tv shows, music, games, and ESPECIALLY BOOKS. Historical and scientific literature should be protected at all costs. For digital files I recommend keeping a storage device outside of your personal pc or phone. Thumb drives are inexpensive, small (easy to hide) and can hold a fairly large amount of files. Good luck.

Should you have kids, try to supplement history/social studies education. That's the first place they will attack, if you need help ask, history teacher will help
Try and do what you can to be aware of your health before January.
Help one another. That's the best way we can move forward and make change in the future.
#pumpkins and potatoes are famously easy and plentiful crops to grow by the way as a starting point for a garden#you can replant food scraps sometimes too. green onions can just be stuck in the dirt anywhere and they'll grow#if you have the ability to plant trees do so not just for food but for temperature and air quality regulation#other plants do those things too but trees are Big and provide shade and have big root systems that do a lot of important work#good luck out there everyone

Chicken Fajitas by Lisa Bryan at Downshiftology
Prep time: 10 minutes
Cook time: 16 minutes
Total time: 26 minutes
Servings: 6
Ingredients
3 boneless skinless chicken breasts
1 onion, thinly sliced
3 bell peppers, thinly sliced
2 tablespoons olive oil
1/2 lime
1/2 tablespoon chili powder
1/2 tablespoon ground cumin
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon oregano
1/2 teaspoon kosher salt
1/4 teaspoon ground black pepper
Tortillas (for serving)
Sour cream (for serving)
Pico de gallo (for serving)
Avocado (for serving)
Instructions
1. Make fajita seasoning. Add the fajita seasoning ingredients to a small mixing bowl and stir together.
2. Season the chicken. Generously sprinkle the fajita seasoning on both sides of the chicken and use your fingers to press it into the chicken.
3. Cook the chicken. Heat the oil in a large skillet over medium heat. Sear the chicken breasts for about 7 to 8 minutes on each side.
4. Slice the veggies. While your chicken is cooking, cut the bell peppers and onion into thin slices.
5. Cook the veggies. Once the chicken has finished cooking, remove it to a plate and let it rest for a couple of minutes. Add the bell peppers and onion to the same skillet over medium heat and saute for 4 to 5 minutes, stirring frequently.
6. Slice the chicken. When the bell peppers are just about done sauteing, slice the chicken breasts into strips. You can slice those pieces in half again for thinner strips of chicken.
7. Mix and serve. Add the chicken back into the skillet, add a squeeze of fresh lime juice and stir everything together. Serve immediately with tortillas and extra toppings such as sour cream, pico de gallo and guacamole.

Probably better with sour cream or guacamole or something#May have slightly overcooked the chicken because I have no cooking thermometer and I am worried about undercooked chicken#The potatoes were large russet potatoes diced into small cubes and they took forever to cook. They tasted like potatoes they were fine#I keep trying to make zucchini because it's easy to prepare and cook but I keep forgetting that I don't like it that much. Very meh

ok but real talk fellow grocery shoppers find your local asian grocery stores and get produce from there bc it tends to be cheaper. you won’t be able to find everything but def most things and they have bulk sizes of onions and potatoes etc

had the consult for my gallbladder surgery. the doctor told me i need to "lose 10 - 15 pounds" before they'll perform the surgery on me, and that I would need to wait 2 - 3 months before they would schedule it. i told her i have PCOS which makes it difficult to lose weight. she told me that does happen, and offered to refer me to a bariatric surgeon who is used to bigger bodies who could perform the gallbladder removal instead. i asked her for the referral to them instead
i was very angry at her for this, as 10 - 15 pounds do not make any difference when you are 300 lbs. my weight fluctuates between 280 - 340 lbs depending greatly on what i've eaten, how much i exercise, and so on. this will also vary greatly depending on if the stone is blocking my gallbladder completely or partially- if it's fully blocking the neck of my gallbladder, i cannot get enough digestive juices into my stomach to properly digest my food, so i will begin violently vomiting to get the undigested food out, and to get bile flowing into my stomach again. i begin to lose tons of weight when this happens, and i put it back on during the periods where i can get enough bile in my stomach to properly digest my food.
i can't digest my food properly. eating "healthier" will not change this- i can't digest food at all, period. healthy or unhealthy, i can't digest anything, because a good half of my digestive juices are completely missing from my guts. there is a functional issue with the way my guts work, of course i will lose weight drastically and put it back on at times. of course the issues will be episodic.
both her and the student that was working with me kept assuming that i said that my pain got worse after "high fat" meals. both of them put this in my mouth-
the student did it first. she asked when the pain gets worse and i said sporadically, but sometimes after i eat. she literally asked me "so you said it gets worse after fatty meals, right?"
i got frustrated and said "no, it's really random." i didn't get to tell her that raw leafy vegetables and lightly steamed or cooked vegetables make me vomit. broccoli and cauliflower that aren't heavily cooked, salads, raw vegetables, lightly cooked carrots, applesauce and apples in general are all problem foods.
the doctor then came in and said "it gets worse after high fat meals, right? you said that" and i went, again, "no it just kinda happens."
i don't even eat a high fat diet. i cook at home now for every meal now that i have all the tools i need to do so. i make rice, fish, pasta, and certain vegetables that i can digest like potatoes, sweet potatoes, onions, mushrooms, and so on. i eat bread, seeds, nuts, dried fruits, and drink oatmilk. i don't eat land meats, eggs, or dairy. i don't have any of those things. i do eat french fries and fish sticks, but not for every single meal. i don't eat chips because they're too salty and irritate my stomach. i don't eat candy or sweets unless the food bank delivers them to me. i don't eat much sugar other than pancakes and certain fruits
she wouldn't listen to me and went "well when you eat fatty meals, your gallbladder has to contract more and it can cause you a lot of pain." you would not believe how many times she came back to "you need to eat a lower fat diet." "the pain gets worse after you eat a high fat meal, so eat lower fat meals and your pain will go down." "just eat a lower fat diet and it'll help."
i just kind of sighed. there were tears in my eyes. i felt defeated. they made a bunch of assumptions just because i was sitting there, being fat. i was wearing long sleeves due to it being cold and they didn't get to see that i have a lot of muscle in my body mass. quite a lot. i wanted to tell them that i'm on testosterone and physically active when and where possible, and that i frequently lift heavy objects and move, but i never got a chance. i wanted to tell them my BMI isn't what they think it is, but i just didn't bother to try
i despise that people assume that fat people are fat because they eat "unhealthy" foods. i ate high fat foods for a few months while i was homeless because i didn't have the resources to cook every single meal. it affected my liver, i'm dealing with some fatty liver. but my gallbladder has more important issues in the form of the literal stone inside. she would not stop pushing for me to eat lower fat meals. all because i was sitting there, existing, as a fat person. i wish i would've told her i can only eat fish and plant matter
i don't understand how a patient telling you they're vomiting and can't keep down certain foods does not sound like a more pressing issue than an arbitrary number. weight as a number means nothing, it tells you nothing about that person's actual body composition. i have trauma with vomiting and yet i'm going to have to keep doing it anyway despite the fact that it could kill me via dehydration or if i just. can't stop
either way i'm very unhappy with result as i already waited for a month for this consult. now i have to wait for a referral for another surgeon to go through, and to do the consult with them, too. all while being in pain and having GI issues the entire time. just because a surgeon doesn't want to take the time to learn how to operate on fat bodies. i'm tired. what a joke
