Ingredients: 2 batatas grandes, peladas y cortadas en cubos. 1 cebolla roja, finamente rebanada. 1 pimiento rojo, cortado en tiras delgadas. 1 pimiento amarillo, cortado en tiras delgadas. 1/4 taza de aceitunas negras, sin hueso y rebanadas. 1/4 taza de cilantro fresco, picado. 1/4 taza de aceite de oliva. 2 cucharadas de vinagre de vino tinto. Sal y pimienta al gusto.
