One of the things abt oxtail is the texture is just more fun than many other parts. there is the meat and then the gooey tendon and the wobbly fat. all in all this is just the best experience if ur eating smth thats been stewed for a long time

When times were better we had more places open at odd hours. its nice to have somewhere thats small, cozy, where u can just go sit with a bowl of noodles and stare into space for hours with nobody bothering u. probably more of a thing in east asia. for us the late-late-night refuges are usually the gerai sup and mamaks. some coffeeshops opened until 11pm or midnight

I feel really unhinged rn but have to edit some serious feerious materials @_@ hmm.... anyway. after i am done with this, i will make a nice ox-tail soup. sadly i did not buy the spices and veggies one needs to make malay ox-tail soup even tho that wouldve been very easy, because of momentary silliness. however there are enough ingredients lying around to make a nice soup anyway.
in this soup i will put, the oxtails, garlic, ginger, and onion, all of which have been slowly roasted. chunks of carrot, slices of celery, quartered tomatoes, some potatoes. also some birds eye chillies. then when i’m abt to eat it i will squeeze a bit of lime and sprinkle crispy fried shallots on there (shallots are v cheap and ubiquitous here). not really sup ekor. but will do. i have not tried this recipe that i just came up with. it seems like it will taste okay.
