Yesterday, I picked up my Lady Jellicle, and on our way down, we stopped at a little place called the Country Cafe for a couple of great breakfast skillets. After getting settled in, and relaxing a bit, we had dinner at Cracker Barrel. At her suggestion, we had an order of fried pickles as an appetizer. She had chicken and dumplings, while I went with meatloaf. A nice day over all.

History of International Bacon Day
Bacon is a beloved meat that has taken its place at the breakfast table for many years. But, honestly, bacon can truly be eaten at any time of the day, whether for breakfast, lunch or dinner. Dating back a few thousand years to the time when folks in Ancient China would preserve their pork bellies with salt, the origins of bacon have spanned throughout many cultures. From China to Ancient Rome and Greece, and eventually making its way up to Germany, France and England, bacon has made its impact on various cultures and people groups in different ways.
International Bacon Day has a background that can be traced back a couple of decades, but the stories vary just a bit. Some accounts say that the day was founded in 2004 by a group of graduate students from Colorado University (CU) in Boulder, while others say it goes back a bit further, to the year 2000 when some residents from Bradford, Massachusetts.
But no matter who was foundational in establishing the day, the idea is that bacon is a food that is extremely delicious and certainly worth celebrating. And International Bacon Day is just the time to do it!

I made some great meatballs tonight, if I do say so myself, so I'm going to share the recipe. It's really quite simple -- you just have to not be afraid of getting your hands into raw meat. You have soap and water, yes? Recipe below:
I based it on the NYT "meatballs with any meat" recipe, as well as some comments there and my own experience. So here's what I did:
Put a large jar of pasta sauce to warm in a big skillet or a pot. Either way, you need a lid for it. I used Michael's of Brooklyn, but you can use whatever you like. You can also make your own pasta sauce, of course.
Soak 1/2 cup breadcrumbs in a bit of milk. I think I ended up using about 1/4 cup. You want it gloopy, but not thin.
Put 1 lb of ground beef in a large bowl. I used Aldi's 73/27 ground beef -- it's cheaper, and the higher fat content is good for meatballs. Also add:
1 tsp kosher salt, 1 clove diced garlic (the stuff from the jar is fine), about 1/8 tsp white pepper, about 1 1/2 tsp Italian seasoning. You can pretty much add any seasonings you want, though unless you have dietary concerns, don't skip the salt. I think I'll add a pinch of nutmeg next time.
Also add 1/4 cup fresh grated parmesan or romano (parmesan's usually a little cheaper). It does have to be fresh grated or it won't work. You can skip the cheese if necessary. Add one egg and the bread crumb-milk mixture.
Mix with your hands, being careful not to overmix. You want everything to be nicely incorporated, but for the mixture to be kinda loose. Then roll the meat into about 1.5-inch balls. Again, make sure they're not too tight. Don't worry about getting them exact, or making them uniform, so long as they're approximately the same size. I was able to sit on the living room couch while doing this, putting the meatballs on a plate after rolling them.
Place the meatballs with a bit of care into the sauce. You don't need to be precious about it, but if you just plop them all in at once you'll probably end up with meatloaf. Turn the sauce up to a low boil, then turn it low to simmer, which on my stove is between 1 and 2 on the dial. Put the lid on, but somewhat ajar, so that it mostly but not entirely covers the pan.
After 30 minutes, stir the meatballs a bit. After another 20 minutes, stir them again and start cooking your pasta. When the pasta is done, the meatballs are. You can also of course have this with spaghetti squash or whatever else you want to have with meatballs and pasta sauce.

Things in American Supermarkets that are not worth buying.
Just in case anyone was planning to stay for a while and was getting catfished by the advertisements.
Boxed scalloped/AU gratin potatoes. These potatoes are dehydrated so they’ll keep in the box, and they never rehydrate to the soft texture you want when making these sides. Buying an actual bag of potatoes is a better deal because you can prepare them any way you wish, and you don’t have to use the whole bag at once.
2. Digorno pizza. Not all frozen pizzas are bad, in fact I’d recommend Red Baron because the crust actually gets to a consistent crunchier texture, and the middle is warmer. Digorno’s is bad because the thick crust is lukewarm and dough-ey in the middle. Red Baron also comes in a big 3-pack if you go to Sam’s Club.
3. Frozen TV meals in general. Some things are ok, like the Stouffer’s lasagna, but most dishes do not translate well to being frozen and reheated. The meats in the standard meatloaf, chicken, and Salisbury steak meals are pretty mediocre, but passable. Noodles are usually mushy and not satisfying to eat. A good rule of thumb is not to buy anything that sounds too experimental, like a dish from another culture or something with a gimmick, like celebrity frozen meals.
4. Canned soup as a meal. There are two good reasons to buy Campbells meal soup; for a child or for someone who’s sick. Their cream of soups are ingredients that can be used in casseroles, and they work well. But canned soups meant to be eaten as a meal have mushy noodles and potatoes that are too firm; and some supermarkets have fresh soup for you to take home and heat up. Go for the fresh stuff in the plastic containers near the pre-wrapped deli sandwiches.
5. Hamburger Helper. Supermarket dry pasta can sell for as little as a dollar for a pound, and there are a variety of sauces to choose from. You can even make a casserole using cream of soup and partially cooked dry pasta.
Hamburger Helper is made in a skillet, so there’s always pasta getting stuck or only partially cooked, leaving you with inconsistent and unsatisfying textures when you eat it. College students who aren’t cooking for a crowd usually indulge in this boxed pasta, which is understandable. But you can also freeze your leftovers or meal prep when you make a pasta dish yourself.
6. The cheap snack cake brand donuts. I might get some flack for this, but they aren’t worth it in my opinion. America has a plethora of actual donuts that you can buy, that are the right texture. Krispy Crème donuts are commonly found in convenient stores, and some supermarkets have their own donut case next to the cake and bakery bread.
Cheap snack cake donuts are dry on the inside whether it’s the powdered sugar or chocolate variant, so you always need something to wash them down with. Actual donuts are fluffy, soft bread on the inside, with a good glaze, frosting, or filling for sweetness. There are better snack cakes than these.

FALAFEL MUSHROOM LOAF YIELD4–6 servings ACTIVE TIME50 minutes TOTAL TIME2 hours 20 minutes plus cooling
INGREDIENTS
For the Meatloaf: Nonstick vegetable cooking spray 2 1/2 pounds mixed wild mushrooms, trimmed 1 medium onion, coarsely chopped 1 garlic clove, peeled, smashed 1 teaspoon ground coriander 1 teaspoon ground cumin 1/2 teaspoon ground cardamom 2 tablespoons vegetable oil, divided 1 (15-ounce) can chickpeas, rinsed, drained 1 large egg 3/4 cup chickpea flour 3/4 cup coarsely chopped cilantro 1/2 cup coarsely chopped parsley 2 teaspoons kosher salt
For the Tahini Sauce: 1 garlic clove, peeled 1/2 cup tahini 5 tablespoons fresh lemon juice (from about 2 lemons) 1 teaspoon kosher salt
For Serving: 1 pomegranate, seeds reserved 2 tablespoons coarsely chopped mint 2 tablespoons coarsely chopped parsley
PREPARATION
Make the Meatloaf: Preheat oven to 350°F. Lightly coat a 8 1/2" x 4 1/2" x 2 1/2" loaf pan with cooking spray. Working in batches, pulse mushrooms, onion, garlic, coriander, cumin, and cardamom in a food processor, scraping down sides as needed, until coarsely chopped, 30-45 seconds; transfer to a large bowl. Heat oil in a large skillet over medium-high. Add half of the mushroom mixture and cook, stirring occasionally, until the edges begin to crisp, about 5 minutes. Transfer to another large bowl; repeat with remaining mushroom mixture. Meanwhile, pulse chickpeas in food processor until coarsely chopped; add to bowl with cooked mushroom mixture. Add egg, chickpea flour, cilantro, parsley, and salt and gently stir to combine, being careful not to mash mixture too much. Spoon mixture into prepared loaf pan and bake until edges are browned and center is completely set, 75–90 minutes. Transfer pan to a wire rack and let cool 30 minutes, then invert onto a cutting board.
Make the Tahini Sauce: While meatloaf cools, purée garlic, tahini, lemon juice, salt, and 1/2 cup water in food processer until very smooth. Serve the meatloaf: Slice meatloaf into 2" pieces and transfer to a platter. Top with Tahini Sauce, pomegranate seeds, mint, and parsley.
Do ahead Loaf can be made 3 days ahead; Tahini Sauce can be made 1 day ahead. Keep both chilled.

Roast Red Dragon Meatloaf
makes 4 to 6 servings
chicken stock | 0.5 cup
buttermilk | 0.25 cup
unflavored gelatin | 0.5 oz / 2 packets / 1.5 tbsp

button or cremini mushrooms | 4 oz | cleaned

anchovy | 3 fillets
marmite | 0.5 tsp
soy sauce | 2 tsp
paprika | 1 tsp
garlic | 2 cloves / 2 tsp | roughly chopped

carrot | 1 small / about 0.5 cup | peeled and roughly chopped
celery | 1 stalk / 0.5 cup | roughly chopped

eggs | 2 large
cheddar, provologne, monterey jack, or muenster cheese | 4 oz / about 1 cup | finely grated
parsley | 0.25 cup | finely minced

black pepper | 1 tsp

ketchup | 0.75 cup
brown sugar | 0.25 packed
cider vinegar | 0.5 cup

Combine the chicken stock and buttermilk in a liquid measuring cup and sprinkle the gelatin evenly over the top. Set aside.
Place the bread and mushrooms in a food processor and pulse until finely chopped. Transfer to a large bowl and set aside.
Add the anchovies, marmite, soy sauce, paprika, and garlic to the processor bowl and pulse until reduced to a fine paste, scraping down the sides of the bowl as necessary.
Add the onion, carrot, and celery and pulse until finely chopped but not pureed.
Heat the butter in a 10-inch nonstick skillet over medium-high heat until foaming.
Add the chopped vegetable mixture and cook, stirring and tossing frequently, until it is softened and most of the liquid has evaporated, about 5 minutes; the mixture should start to darken a bit.
Stir in the buttermilk mixture, bring to a simmer, and cook until reduced by half, about 10 minutes.
Transfer to the bowl with the mushrooms and bread, stir thoroughly to combine, and let stand until cool enough to handle, about 10 minutes.
Add the meat mixture to the bowl, along with the eggs, cheese, parsley, salt, and pepper.
With clean hands, mix gently until everything is thoroughly combined and homogeneous; it will be fairly loose.
Pull off a teaspoon-sized portion of the mixture, place it on a microwave-safe plate, and microwave it on high power until cooked through, about 15 seconds. Taste the cooked piece for seasoning and add more salt and/or pepper as desired.
Transfer the mixture to a 9-by-5-inch loaf pan, being sure that no air bubbles get trapped underneath. (You may have some extra mix, depending on the capacity of your pan; this can be cooked in a ramekin or free-form next to the loaf.)
Line a rimmed baking sheet with a sheet of heavy-duty aluminum.
Transfer meat mixture to the baking sheet and form it into a tight loaf, removing as many air gaps as possible.
Cover the meat loaf with an additional sheet of heavy-duty aluminum and crimp at the edges.
Refrigerate the meat loaf while the oven preheats. (The meat loaf can be refrigerated for up to 2 days.)
Adjust an oven rack to the lower-middle position and preheat the oven to 350°F.
When the oven is hot, remove the meat loaf from the refrigerator and bake until just beginning to set (the top should feel firm to the touch), about 30 minutes.
Carefully remove the foil cover and return to the oven and bake until the center of the meat loaf registers 140°F on an instant-read thermometer, about 40 minutes longer. There will be quite a bit of exuded juices; this is OK.
Remove from the oven and let rest for 15 minutes. Increase the oven temperature to 500°F.
Meanwhile, make the glaze: Combine the ketchup, brown sugar, vinegar, and pepper in a small saucepan and cook over medium-high heat, whisking occasionally, until the sugar is melted and the mixture is homogeneous, about 2 minutes. Remove from the heat.
Use a brush to apply some glaze to the meat loaf in a thin, even layer, then return it to the oven and bake for 3 minutes.
Glaze again and bake for 3 minutes longer.
Glaze one more time and bake until the glaze is beginning to bubble and is a deep burnished brown, about 4 minutes longer.
Remove from the oven and allow to rest for 15 minutes.
Slice and serve with any extra glaze and mustard or ketchup as desired.
For best results, grind your own meat. If grinding meat, use pork shoulder and beef chuck (or a mix of short rib meat and brisket).
Keep your hands well moistened when forming the loaf, to prevent sticking.
If you don't have buttermilk around, substitute it with more chicken stock or even water!

Certainly! Here’s how you can make a delicious Peppermint Donair inspired by the famous Atlantic Canadian “Halifax Donair” and the original East Coast donair:
Peppermint Donair Recipe
Ingredients:
1 pound ground beef
2 teaspoons cayenne pepper
1 teaspoon ground black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon paprika
1 teaspoon dried oregano
Sauce:
1 (12 ounce) can evaporated milk
½ cup white sugar
¼ cup white vinegar (or to taste)
Other:
6 large pita bread rounds
Instructions:
Make the Meatloaf:
Mix the ground beef, cayenne pepper, black pepper, onion powder, garlic powder, salt, paprika, and dried oregano together in a large bowl until well combined.
Shape the mixture into a loaf and place it on a baking tray.
Cover the loaf with plastic wrap and let it rest in the refrigerator overnight.
Preheat the Oven:
Preheat your oven to 350°F (175°C).
Bake the Meatloaf:
Bake the meatloaf in the preheated oven until it is no longer pink in the center (about 30 minutes), turning the loaf over halfway through cooking.
An instant-read thermometer inserted into the center should read at least 160°F (70°C).
Allow the meatloaf to cool so that it holds together for slicing.
Prepare the Sauce:
Stir the evaporated milk and sugar together in a bowl until the sugar is dissolved.
Add vinegar, 1 teaspoon at a time, to taste.
Refrigerate the sauce until ready to serve.
Slice and Brown the Meatloaf:
Slice the meatloaf into 1/4-inch thick slices.
Brown each slice in a skillet over medium heat until they are browned and crisp (about 5 minutes per side).
Warm the Pita Bread:
Sprinkle the pita bread rounds with a little water.
Warm them briefly in a dry skillet over medium heat.
Assemble the Peppermint Donairs:
Place several slices of meatloaf into each warmed pita bread.
Spoon about 2 tablespoons of the sauce on top.
Roll the pita bread into a cone shape.
Wrap each donair in aluminum foil to keep the sauce from dripping out.
Serve and enjoy your delicious Peppermint Donairs!
