This Roasted Salsa Verde Salsa is a zesty and tangy addition to your tacos. The roasted tomatillos and serrano peppers bring a smoky flavor, while the fresh cilantro and lime juice add a burst of freshness. It's perfect for topping your tacos or as a dipping sauce for chips.

Ingredients: 6 tomatillos, husked and rinsed. 2 serrano peppers. 1/2 white onion, chopped. 2 cloves garlic. 1/4 cup fresh cilantro leaves. 1 lime, juiced. Salt to taste.

Instructions: Set your grill or broiler to high heat. Put the peppers and tomatillos on a grill grates or baking sheet. They should be roasted or grilled and turned every so often until they are charred and blistered all over. That's how long it should take. Take the peppers and tomatillos off the heat and let them cool down a bit. The roasted tomatillos, serrano peppers, chopped white onion, garlic, fresh cilantro leaves, and lime juice should all be put into a blender or food processor. Blend the salsa until it's mostly smooth but still has some chunks. Add more salt if you think it needs it. Put the salsa in a bowl that can be served and put it in the fridge for at least 30 minutes so that the flavors can mix. Enjoy with your favorite tacos.
