You ought to see the Scotch I’ve got home in my cupboard; at least it was in the cupboard this morning—it’s probably eaten its way out by now. I got it for my birthday. It’s Fine Press Friday!
This copy of James Joyce’s, Dubliners, with introduction by American academic Thomas Flanagan and photogravures by Irish artist Robert Ballagh (b.1943), was published in 1986 by the Limited Editions Club (LEC), New York, in an edition of one thousand copies signed by Flanagan and Ballagh. It was in 1905 that Joyce first took his manuscript to a publisher, although he had a lot of difficulty finding someone to print his book. After many rejections a publisher accepted but demanded changes, resulting in the termination of their agreement. This drama continued for years until the book was finally published in 1914 by Grant Richards Ltd., London. 
Dubliners is a collection of fifteen short stories that is a portrait of Dublin during a time when Irish nationalism was at its height. Joyce used his own family, friends, and acquaintances to depict the people of Dublin “in all their uniqueness, their generosity, and love of music, as well as their moral confusion and psychic paralysis” (LEC Letter number 547). This psychic and moral paralysis stems from the long history of Ireland’s subordination to British rule. 
Robert Ballagh was born and raised in Dublin and shares Joyce’s fascination with his city. His six photogravures express the sense of isolation and paralysis that exists within the stories. They are velvety and still, and rest alone in the center of the page. They themselves are isolated by the many pages of text that exist between it and the next image.
The type design also illustrates a sense of isolation, with each short story beginning with a title in a single line on the right resting in the expanse of an empty page spread, and after turning the page, another blank page, and opposite to it the beginning of the text with no header, but space for one.  
The type was printed at Wild Carrot Letterpress and Heritage Printers. The text was set in Monotype Scotch by Dan Carr and Julia Ferrari at Golgonooza Letter Foundry. Benjamin Schiff, son of then LEC owner Sidney Schiff, designed the book. The photogravure plates were made by Jon Goodman and printed by Bruce Chandler, Peter Pettengill, Catherine Mosely and Greta Lintvedt. The paper was made at Cartiere Enrico Magnani. The book was hand sewn and bound at the Jovonis Bookbindery in West Springfield, Massachusetts. Our copy is a gift form our friend Jerry Buff.

Arguably one of the oldest foods known to man, eggs have played an important role in the lives and health of humans since time out of mind. History of World Egg Day
Typically, when most tend to consider the egg, they think of those white or brown shelled emissions that come from the common chicken. Containing a small treasure with a golden yolk, and the potential to become so many things that it strains the boundaries of human imagination, the Chicken Egg has become the definitive image when the word ‘egg’ is spoken.
But these are not the only type of eggs that mankind finds valuable, consider for a moment caviar, a symbol of wealth in its own right. These are, of course, the eggs of various fish, and World Egg Day represents their importance as well.
The history of the egg expands far beyond merely a culinary concern and, in fact, has had great importance in multiple cultures for reasons both decorative and religious. In many cultures around the world, eggs have been a sign of fertility and representative of life, renewal and rebirth.

Celebrating World Egg Day best starts with a great big plate of scrambled eggs served along with their most bosom companion, bacon. With a dash of salt and pepper, plus a little bit of cheese, that simple plate of eggs will be absolutely delicious!
For lunch, a great idea would be to create a sandwich upon a slice of Challah bread, a Jewish Egg bread that is nothing short of amazing. And the center of the sandwich? Well, that probably needs to be egg salad, of course. Make it with some boiled eggs, mayonnaise, mustard, and some chopped dill pickle relish. 
Those who are feeling a little bit adventurous may look and find if there are types of eggs that they have, perhaps, never tried before. Duck Eggs are especially prized, and Goose Eggs are larger than the typical chicken egg but can be quite interesting when cooked in a variety of ways.

Chefs Hats are Influenced by Eggs. Some people aren’t aware that going back a little in history, the meaning of the number of the pleats in a chef’s hat was related to the number of ways that the chef was able to cook an egg. The ultimate goal and badge of true honor was to get to 100 pleats.

Eggs that have a cloudy white are extremely fresh! Most eggs that come from the grocery store have been sitting around a little longer and will probably have “whites” that are actually clear and colorless. They’re still fine to eat, though, unless the “whites” are some color other than cloudy white or transparent.

Cool thrift store find today - a travel bar from the 50’s. It didn’t come with the bottle of Canadian Club whiskey, there is an interesting story behind that bottle. Before I tell the story, look at the top of the bottle and the production date - yes, you saw it right, it is from 1950. My parents were married in 1955, and that same year my dad started his time with the military. We believe he bought that bottle at the PX while he was at Fort Knox. My parents are packrats, and as they moved around the country, they kept moving this bottle. When they retired, they split their worldly goods among their kids and I ended up getting their various bottles of alcohol. Like them, I moved around the country a lot (via corporate moves) and ended up taking all of their stuff with me. A few years ago, I finally opened up all their boxes and found that unopened bottle from 1950.
Saturday is dad’s funeral and the time has come to open that 73 year old bottle and toast to his memory. Thanks dad.

Juicy Fruit
My last entry I talked about the bottle that made me love wine. It was "Soul Of A Lion" by Dauo. A rich and velvety Paso Robles Cabernet Sauvignon. That's a solid way to express the first chapter in what made me a wine lover. But what happened next?
Throughout my twenties I was tending bar anywhere I could. In small theaters, golf ranges, restaurants. The wines I was pouring were Kim Crawford, Coppola, Josh, Bonanza. Good brands, but nothing that made me feel like I needed to become some expert in the grape juice. Just pour it in the glass and keep it moving. I was more concerned about reading up on prohibition era cocktail recipes, visiting bars myself trying every style of beer, liquor, sake...just trying to figure out what I liked. I think that's an important step. Find things you like. What is your style?
Once you start searching for what you like you begin by asking what other people like, and that is the secret to becoming a Somm. A Sommelier is merely someone in service of finding their guest the best possible beverage or pairing with the least amount of worry or work. My mentor Chris Reid always says, "We drink the bad wine so you don't have to!"
There will be more on Chris later as we get to that chapter, but the lesson he taught me was that I no longer just drink wine for myself, but for everyone else. If I had stayed just drinking for me I would have continued drinking Cab, Rioja and Malbecs. Not that there's anything wrong with those varietals. They are staples, but my job is to know about Sekt, Verdejo, Tannat, Torrentes, Furmint...ever had any of those? You don't have to. But if you want to see a Somm light up like a kid, tell them you want to try one of these.

While being a bartender I knew nothing about those grapes. I knew what I knew, and thought that was enough. Being a bartender, I took pride in being able to mix drinks well and to be able to speak on a wide swath of what I had to offer. I was a jack of all trades, a master of none. I still feel this way. But studying wine has shown me how deep the well goes, and I learned I barely had my toes in.
My consumption habits were wrapped around scotch (Glenlivet, Chivas Regal, The Belvenie, The Macallen), delicious bourbon (Colonel Taylor, Blanton's, Buffalo Trace, Woodford Reserve, Jefferson's, Four Roses) and import/craft beer (Red Stripe, Turk's Head, Sierra Nevada, Firestone, Yuengling, Guiness, Heineken, Stella Artois, Golden Road and Goose Island) I was excited that I had found brands that I could be excited by. But I knew that not everyone liked what I liked.
After working at 10+ bars I can tell you, most bartenders see it as a job, not a profession. With that being said, when you learn enough to make 99% of your guests happy by nailing a perfect Cosmopolitan or knowing how to make a Vegas Bomb or a nice Manhattan you can start to feel pretty good about your skill level. You can get by on that for years.
As a bartender, it doesn't feel like there's a ladder to climb. It's a cash grab. Make the drinks, smile and collect the cash. Walk away and come back the next day and do it all over again. The wine world is not this way. It's competitive, it's never ending and there is always a bigger fish. That's what I love about it.
When I started becoming curious about wine I joined Naked Wines. You've probably seen a gift certificate show up in the packaging of some other product you purchased a while back. I never really had any amazing wines out of those boxes. But I was always intrigued by the different varietals. I also liked the TCM wine club because if the wine wasn't great, at least I could still collect a cool labeled bottle from it and turn it into a neat candelabra. Overall I was never really wowed by any of their offerings.

I would also go to the more affordable places like Trader Joes, Target, Kroger/Ralphs, Aldi, Lidl. I'd try boxed wine, bottles priced under 10.00, I'd try anything to try to learn. But I was never blown away, rarely were the wines memorable. It was like chewing Juicy Fruit. You get a decent flavor for a couple minutes but once the flavor is gone you don't think about it again. Now, I still shop at these places for my porch pounders and Wednesday Wines....but they aren't my special occasion or collector wines. The wines that would haunt my memory came from trips to wineries. I learned that the more specific a wine was, and if it wasn't mass produced it could be specific and say something so clearly that you wouldn't be able to forget it no matter how hard you tried. That there would be flavors, textures and memories moments that would live on forever and keep you chasing terroir (a wine word that represents the place the wine comes from) for many years, if not the rest of your life. Next week I'll talk more about the wineries that I visited that, like my list of favorite scotch, bourbon and beer, started up an entire catalogue of romantic affairs that would send me on my way. Like so many other creatures in the wild west Highlands of Scotland at this time of year, Algy was feeling a wee bit under the weather…
The Scotch mist had swept in, and – if the weather birds were to be believed – it looked as though it had come to stay, at least for the week ahead, if not for the entire winter. Over the weekend, Algy had had some interesting correspondence concerning the weather and light levels in various parts of the world, with some of his tumblr friends who lived in faraway places, and he wondered just how much of the west Highland experience it was possible to convey to those friends whose lives were spent in those very much drier and brighter environments…
Recalling that humans often remarked that "a picture is worth a thousand words", Algy smiled damply to himself when he considered just how many words-worth it should be possible to convey to those friends over the coming week 🌫🌧🌫
As Scotch mist occurs only in a few areas of the world, it does not tend to feature in literature in the same way as other atmospheric phenomena, but as Algy perched on the dripping twigs, scarcely bothering to lift his head to look around as the landscape had more or less vanished, he remembered a poem about fog which conveys at least some of the experience, providing you add in a very considerable amount of water…

Egg Color is Determined By Earlobes. The color of the egg doesn’t have anything to do with freshness, flavor or nutritional value. In fact, the color of the egg is determined strictly by the breed of the hen and corresponds to the color of the hen’s earlobe!
Chefs Hats are Influenced by Eggs. Some people aren’t aware that going back a little in history, the meaning of the number of the pleats in a chef’s hat was related to the number of ways that the chef was able to cook an egg. The ultimate goal and badge of true honor was to get to 100 pleats.
Iowa is a Big Egg Producer. In the United States, the state of Iowa leads the nation in egg production, with more than 14 billion eggs every single year! The next state comes in at around half of that: Ohio produces a little under 8 billion eggs per year.
Eating cooked eggs is healthier. While some people think that eating a raw egg will help to build muscle, that’s not true. Only about 50% of the proteins in a raw egg can be digested. After it’s cooked, the body can digest more than 90% of the proteins.

Bonus: Egg Freshness Tips
Not sure if those eggs are fresh? The best way to test for freshness is by dropping an egg into a glass of water. If it sinks, it is fresh. If it floats? It’s probably old.
Eggs that have a cloudy white are extremely fresh! Most eggs that come from the grocery store have been sitting around a little longer and will probably have “whites” that are actually clear and colorless. They’re still fine to eat, though, unless the “whites” are some color other than cloudy white or transparent.
