Simple homemade almond milk that's creamy, delicious, and entirely customizable! Perfect for cereal, baking, and drinking straight alongside baked goods.

Serves: 5 cups
Ingredients:
1 cup (112 g) raw almonds, soaked overnight in cool water (or 1-2 hours in very hot water)5 cups (1200 ml) filtered water (less to thicken, more to thin)pinch sea saltoptional: 2 dates, pitted, or other sweetener of choice (omit for unsweetened)optional: 1 tsp vanilla extract or 1 vanilla bean, scraped (omit for plain)optional: 2 Tbsp (10 g) cocoa powder for "chocolate milk" or 1/2 cup berries for "berry milk"
Instructions:
Add your soaked almonds, water, salt, and any additional add-ins (optional) to a high-speed blenderand blend until creamy and smooth. Keep it running for at least 1-2 minutes so you get the most out of your almonds.Strain using a nut milk bag or my favorite trick - a thin dish towel. Simply lay a clean dish towel over a mixing bowl, pour over the almond milk, carefully gather the corners, and lift up. Then squeeze until all of the liquid is extracted. Discard pulp, or save for adding to baked goods (especially crackers).Transfer milk to a jar or covered bottle and refrigerate. Will keep for up to a few days, though best when fresh. Shake well before drinking, as it tends to separate.

Keto Peanut Butter Bars After making the Irish cream brownies from two weeks ago (thanks, u/bonappeteach!), I thought about other ways to approach the same basic recipe. Chocolate and peanut butter is one of my favorite combos, and if I can find a low-carb way to combine the two, I'm doing it. I used a 9x13" dish for a thinner brownie to serve as a crust. I also added some microplaned Lily's dark chocolate on top for garnish.The filling is a sugar-free version of Ree Drummond's chocolate peanut butter pie.Crust ingredients: • 4 oz. Cream Cheese, softened • 4 tbsp. Butter, softened • 3/4 cup Low-Carb Granulated Sweetener • 4 tbsp. Cocoa Powder • 2 Eggs • 1 1/2 cups Almond Flour • 1 tsp. Xanthan Gum • 1 tsp. Baking PowderFilling ingredients: • 1 cup Unsweetened Peanut Butter • 1 package (8 oz.) Softened Cream Cheese • 1 1/4 cup Low-Carb Powdered Sweetener (I used confectioner's Swerve) • 1 package (8 oz.) sugar-free Cool Whip, Thawed • Pinch of saltOptional garnish: • Low-carb chocolate for shaving or microplaningBrownie directions: • Preheat the oven to 350°F. Grease a 9X13" pan. • In a mixing bowl, combine the softened cream cheese, butter, low-carb sweetener, cocoa powder, espresso powder, and whiskey together until smooth. • Next, mix in the eggs one at a time. Then mix in the remaining dry ingredients (almond flour, baking powder, and xanthan gum). • Once thoroughly mixed, pour the batter into the 9X13" pan. Spread the batter evenly throughout the pan and bake for approximately 27 minutes. Use a toothpick to check the center. You may have to add additional baking time. • Fully cool before adding filling.Filling directions: • Beat the peanut butter with the cream cheese until smooth. • Add powdered sugar and salt and beat until smooth. • Add in the thawed sugar-free Cool Whip and beat mixture until smooth, scraping the sides as needed. • Pour filling into crust, evening out the top with a knife or spatula.Optional: Add shaved or microplaned low-carb chocolate for garnish.Chill and store in the fridge.
