Here it goes: Peel the tough edges and cut into bite size pieces. In a sauté pan, add oil, mustard seeds, curry leaves, hing, turmeric, salt. That Meal For Two Days - Done Watching the news these days is so dis-heartening. Our Government is trying to cope with this scary virus that's gripped the world by storm. My heart is going out to the daily wage workers, migrant workers who've been left stranded by their bosses. I'm feeling guilty that we're so privilidged that we're getting 3 square meals a day. Very blessed indeed🙏 With all the additional housework we've made a rough time-table sketching out when we cook, clean, wash clothes etc. We decided it was best I cook extra so we eat it for two days before I cook again. So I make extra dal & then one vegetable per meal. I've just put it all together here. A combination of these dishes will be consumed by us over the next 4 meals Clockwise : 1. That Makhmali Mungdal/Velvetty Mungbeans I pressure cooked whole mungbeans in salted water along with asafoetida & turmeric powder. Once cooked, I roughly mashed & left to simmer along with fresh coriander, coconut milk & tamarind pulp I tempered coconut oil with mustard seeds, curry leaves, garlic, onions & red chilli powder & poured this into the simmering lentils, mixed well & cooked till done 2. Those Foofoo Ridgegourds I tempered seasoned mustard oil with mustard seeds, curry leaves, green chillies, onions & garlic. I added the ridge gourds, dried & once half cooked, I added a foofoo spice mix from the Malvan region of India & cooked till done. I finished by adding fresh coriander & tamarind pulp 3. That Chutput Cauliflower & Potato Masala Recipe in comments because of lack of space in caption 4. Those Whole Wheat Parathas 5. That Freshly Steamed Rice 6. BEERAKAYA POTTU PODI
Lets see how to make karam podi with bittergourd peel
This is a unique recipe. Since we will also be adding ajowan, this is a very healthy recipe Usually while cooking bittergourd, we throw away the peel. But, peel is the healthiest part of the bittergourd This powder, made with bittergourd peel, could be stored for 1 week - 10 days Firstly, coarsely grind the peel Don't add any water. Just add 1/2 teaspoon salt and coarsely grind the peels Heat pan and add 1 teaspoon oil Add 10-12 dried chillies and fry till they change colour Move them into a plate To the same pan, add 2 tablespoons black gram and fry till they change colour Move them into a plate Heat 1 teaspoon oil in the pan Fry the coarsely ground bittergourd peel on low flame till it becomes dry Add 1/2 teaspoon turmeric powder, 1 teaspoon ajowan and mix To a mixie jar, add fried dried chillies, black gram, 7-8 garlic cloves, 5-8 grams tamarind and grind it into a soft powder Then add the fried bittergourd peel and grind it into a soft powder Add more salt if desired Beerakaya pottu podi is ready to serve! This podi can be served for 10-15 days also if stored properly
