post ko lang dito sa tumblr ko yung luto ng aking mahal kahapon. Ang sarap nung niluto nyang breakfast na sardines with egg plus madaming sibuyas. Alam na alam nya talaga na fav ko madaming sibuyas e. Tapos pinaka the best yung pork creamy mushroom. Grabe 1st time nya ako lutuan nun, at ang sarap sobra! kung pwede lang talaga mag take 2 sa rice ginawa ko na baka maka take 3 pako. Kaso kainis tong sugar ko kelangan kase hindi tumaas kaya bawas sa rice. Pero ayun ang saraaap! nung pini prito pa nga lang nya yung pork tinitikman ko na e, at ang sarap na lalo na yung nilagyan na ng creamy sauce.
Haaaayss request ko nga sa pagbalik ko luto sya madami e. New favorite dish ko na to sa kanya, kahit na lahat naman talaga kase ng luto nya masarap.

Pini Amir, a Yemenite Jew from Beit Yitzhak in Israel, bakes some of the best flatbread I’ve ever tried: fluffy, thick Yemenite saluf dotted with nigella seeds. When fresh out of his backyard taboon (clay oven), charred here and there for extra flavor, the saluf is dipped in freshly whipped tahini sauce or the lemony juices of a chopped Israeli salad. And it’s simply sublime.
But for Pini, the best part of making his own saluf comes the next day, when the bread starts getting stale. That’s when he puts a large pot of chicken wings, marrow bones and root vegetables on the burner, covers it all with water and cooks a rich chicken soup. Once it’s ready, Pini takes just the broth and mixes in hilbeh (a Yemenite fenugreek condiment, recipe below) and spicy zhug, and crumbles in a large pile of dried saluf to soak it all up. This dish is called ftout, or fatout, and it’s been Pini’s favorite dish since childhood.
“In a way, ftout is really a verb, not a dish,” David Moshe told me from his home in Israel. Moshe is an Israeli with Yemenite roots, an eighth-generation jeweler and a cookbook author who specializes in Yemenite food.
Fatta (فتّ) in Arabic means “to crumble,” and in this context it means to crumble or break flatbread into small segments and soak in liquid. (The Hebrew word “ptit” means a crumb or morsel and comes from the same root. Ptitim, which is plural for ptit, is the Israeli name for Israeli couscous.)
The Yemenite Jewish ftout is really a part of a bigger family of dishes from the Arab world called fatteh or fatta. They all contain crumbled crispy, sometimes toasted, day-old flatbread that soaks up some of the liquid in a dish. The most popular is fattet hummus from the Levant, a dish of broken toasted pita that’s topped with freshly cooked chickpeas and yogurt and is served for breakfast. Other examples include fatta with eggplant or chickpeas and yogurt on top; with beef, lamb or chicken stews; and even with rice. The famous and delicious fattoush salad comes from the same family. Tharid is another type of fattah dish, popular in the Gulf. In this version, the bread plays a larger role and is topped with a rich vegetable and meat stew. According to the cookbook “Feat – Food of the Islamic World” by Anissa Helou, tharid was Prophet Muhammad’s favorite dish.
Fatteh are usually very homey and messy dishes, and are served within the family, not for guests. Using leftover stale bread instead of tossing it away makes these dishes, which are served all over the Middle East, from Saudi Arabia to Yemen, Egypt, Lebanon and Syria, smart both economically and environmentally.
In the Yemenite Jewish community, the beloved fatout/ftout has several variations. One popular version is made with samneh (fenugreek-spiced clarified butter), eggs and honey. The saluf is broken into pieces and fried in samneh, then mixed with eggs, and sometimes milk, and cooked. It is served with honey and a sprinkle of nigella seeds. Some people serve the dish for lunch before the pre-Yom Kippur meal (Seuda Mafseket). It is sometimes prepared with other Yemenite flatbreads like malawach or lachuh. During Passover, the dish is prepared with broken matzah instead, similar to the Ashkenazi matzah brei.
Fatta samneh, as the dish is called in Arabic, is still made in Yemen, with variations including chopped dates or bananas, making it a porridge-like breakfast. And since dishes morph and develop with time and change of location, you can find Israeli versions that omit the honey altogether, and mix in Edam-style grated cheese, or sprinkle with za’atar, turning it into a delicious savory omlet.
Another dairy version of ftout is a warm yogurt soup called zom: Yogurt is cooked with a little garlic and samneh, stale saluf is broken inside, and it is served with zhug and lemon. This dish is sometimes eaten after Yom Kippur for break the fast.
But the most famous version, and Pini’s favorite, is the one made with chicken or meat broth. The Yemenite cuisine is known for its soups and it’s only fitting that the Yemenite fatteh would be made with it as well. Just like the famous Yemenite bone marrow soup, available at Yemenite eateries throughout Israel, the soup for the ftout needs to be fatty and rich. That’s why Pini makes his soup with chicken wings, rich with fat from the skin, to which he adds marrow bones or beef chuck for extra flavor and fat.
Hilbeh, a popular condiment that is served with every Yemenite meal, is an important component in the ftout. To make it, ground fenugreek seeds are soaked in water overnight, when they become jello-like as they expand. The seeds are then whipped with spices, salt and lemon juice or vinegar. More elaborate versions include chili peppers or zhug, fresh cilantro and even tomato. It is addictive in its own right.
Pini mixes the rich clear broth with a lot of hilbeh, some grated tomatoes and cilantro. He adds a lot of zhug, because as a proud Yemenite he believes that spicy food is always better, and breaks all the stale saluf he has from the day before into the mixture. A few minutes of cooking together is all it takes, and the results, while some may say are not the best-looking, are so delicious, especially with a little lemon on top. For most of us, it’s a flavor combination we’re not familiar with, and I cannot recommend this enough.
Notes:
Fenugreek seeds, preferably ground (not the dry leaves!) are available at most Middle Eastern supermarkets and online.
A real shortcut would be to use a store-bought chicken broth. Just make sure to mix in some oil (olive oil is fine) or add some bone broth into the chicken broth so it is rich and fatty, as needed.
Another major shortcut is to use store-bought flatbread instead of making your own saluf. Just be sure to use a thick flatbread, not the skinny pita bread available at most American supermarkets; look for Israeli-style pita bread (available at many Kosher supermarkets and some Whole Foods branches) or get Persian flatbreads from a Persian supermarket. (If you’re in Israel, any pita bread is fine.)
You can use the hilbeh as a dip with pita bread. It keeps in the fridge in a sealed container for two days.
Ftout keeps in the fridge for up to four days. Reheat in the microwave.

"Us Staying Together Is The Biggest Mistake Of All!"
Thursday 12th November 2020
Hello again everyone! Hope you're doing okay. Okay so even though I'm writing about yesterday's episode (Thursday 12th) - today is Friday 13th! I know it's just superstition, but I hope your day goes well without any issues or unfortunate happenings. I hope today will be lucky for us all! As it's Friday, EastEnders will not be on tonight due to Children In Need, which is why there was two episodes on Tuesday evening. I'm looking forward to getting right into it, so let's not dilly-dally! Let's get started!
The episode begins with Kat waiting by her Dad's taxi, it looks as if this could be the day she and Phil plan that robbery. Phil makes an appearance as he walks out of his household towards her whilst carrying a carrier bag, he makes a slight point that he won't be going into an office whilst wearing what's inside the bag. I'm beginning to wonder what it might be, considering he's doing a job with Kat, who knows! Kat informs him that they will have the whole place to themselves as everyone who works there will be working at home, but she instructs him that she will the uniform she's provided for him. Can I just mention that I am loving the recent scenes between Jessie Wallace and Steve McFadden, it must've been so much fun to film!
At the Minute Mart, (again, another brilliant scene I thought) Shirley and Tina are discussing the things that Gray owns in his house. How he specifically uses almond milk and how he owns a juicer, an ice maker, a rice cooker and all sorts, Tina appears jealous that her sister is living in the lap of luxury, but then Shirley does remind her that he has just lost his wife and he hasn't been in a good place recently. It's then she changes the subject to Mick, admitting that she hasn't been sleeping properly since Katy arrived. She reveals to Mick that since Katy appeared on the Square, she has been in the dog house and it looks like she will be for quite some time, Tina tries to reassure her sister that she was literally just trying to help her son and that he can't stay angry at her forever.
Meanwhile, out on the Square, Denise is taking little Raymond off to church. Little Raymond looks incredibly smart and yet still a bit shy as Jack approaches the young boy. Can anyone else sense that there's still love between Jack and Denise? Something tells me they might rekindle their romance, who knows - it might end up being because of little Raymond that brings them back together? They both visibly flirt with each other as they leave for the church.
In a posh looking building, Kat is waiting for Phil, only when he appears from behind she looks highly amused, and needless to say - I never thought I'd see the day that Phil would wear something with leopard print! Not looking very satisfied, he appears wearing a leopard print piny. But what followed afterwards was even more hilarious, Kat appeared to know someone who worked in the building and was making friendly conversation as Phil was stood not saying a word, Kat informed the man that he was actually named Malcolm and was her cleaning apprentice. I just love the fact that Phil just had to grin and bear it, but just to wind him up that little bit more, Kat informed the bloke that he pretty much a 5 year old stuck in a middle aged man's body. As Kat and man walked on ahead, Kat informed Phil to and clean the men's toilets, now of course, none of us can actually imagine Phil cleaning anything, least of toilets! I really do love these scenes, I hope we'll get more of Kat and Phil in the future.
At the Prince Albert, Tina is confiding in Iqra about her family issues at the moment, explaining that things are going to be completely different this year regarding Christmas if Mick and Shirley don't make up by then. Iqra tries to persuade Tina to get them together and talk things through, but Tina explains that they have already tried, Mick seems to be the one causing the problems at the minute, but whereas Shirley has done nothing but beg for her son's forgiveness, but he's just not having any of it. Tina then mentions that Mick hasn't been the same since he's moved out of the Vic, which then Iqra suggests that maybe it would help if he was given a job back at the pub, perhaps it would make him a bit happier? Tina admits that Mick wouldn't ask, but then it makes perfect sense, why doesn't she ask on his behalf? But then again, will that be something that Mick will be happy about? Who knows? He may feel right back in his element if he was back behind the Queen Vic bar.
Arriving at the church, Denise is visibly nervous as she approaches the doors. Gospel singing can be heard from behind the door, Denise turns to Jack before they enter and suggests that it was a bad idea and they turn back. But it looks to be a little too late as Raymond happily wonders in ahead of them, with a huge smile on his face he heads towards the front of the stage watching the choir singing. Denise and Jack slowly sneak in and sit at the back, taking in everything around them. Denise turns to Jack asking his thoughts, his response made me giggle a bit "Yeah, it's better than the Lord Is My Shepherd!" - with that they both smile and share a laugh, just then Denise turns to the front to see Raymond enjoying every single minute, clapping his hands with a huge smile on his face, Denise smiles seeing her son look so happy.
At the Vic, Tina has approached Ian about giving Mick a shift, at first he seems reluctant to help, explaining that they haven't got enough space on the rota. However, Sharon speaks up and claims that she is in desperate need of some help behind the bar now that her son, Albie is sleeping less. It's then that Ian agrees to give Mick and shift and that he will tell him himself, as Tina begs him not to let on about Tina asking for him.
Returning to Phil and Kat, Phil dressed in his piny and pushing along a mop bucket, walks into a room to find Kat chatting away with the man she was with earlier. Once the man disappears, Phil questions Kat on what he was talking to her about, she explains that they were talking about his Mum and how ill she's getting and that how tomorrow the place would be empty, and she has volunteered to clean again the following evening. Phil then asks her what her plan is for the following evening, it's then Kat reveals about a safe that they keep two floors down and she believes that there must be somewhere between 9/10 grand inside it, she proposes that if Phil helps her then she will split the money 50/50 and they will get £5,000 each! But Phil seems less than impressed of her idea and admits he doesn't want to risk the chance of going to prison for such a small amount of money. Much to Kat's disappointment, she kicks off at Phil for making her feel small and instructs him to finish his shift before they leave the premises.
Back on the Square, Kush approaches his stall and apologises for keeping Shrimpy on it for so long. Martin looks on as his friend makes himself comfortable on his stall, he slowly approaches him and asks whether he's okay. Kush admits that he's had a bad morning, but what happens next is what Martin reveals, he mentions to his friend that he called around and Jean informed him that Kush was still in bed, even though Kush tries to defend himself saying that it's not what he thinks and that he's put all the gambling behind him. But Martin reveals that in fact last night, he was snooping through all the poker and gambling websites trying to find his friend and reveals that it only took half an hour until he spotted his friend online gambling again. Kush once again has been caught out and admits to Martin that he simply can't help himself, he claims that he's trying his absolute best to try and fix the situation that he's caused, but Martin tries his absolute best to get through to his friend that by gambling again to get himself out of the situation is not going to help, as it was the thing that got him there in the first place! How is Kat going to react when she finds out he has once again been gambling behind her back? Especially when he promised her he wouldn't do it again!
Back at the church, the gospel singing comes to an end. Raymond is still clearly enjoying himself, after the pastor makes a speech, he notices Raymond stood right in front of him and acknowledges the little boy, saying how good it was to see him. After her persuades little Raymond to play with some toys, the pastor approaches Denise and begins informing her how nice it was to see Raymond again after they were concerned about how he never turned up again with his Grandmother. He questions who Denise is to young Raymond and she admits to him that she is in actual fact Raymond's birth mother and reveals that the little boy is now living with her. She informs him that she's seeking help regarding his family, as she hasn't been told much about them, the pastor introduces himself and smiles as if he'd be glad to help her out.
Returning to Phil and Kat, Phil is making his way to some kind of parking bay as he's taking some bins out. He seems to notice the handful or flashy cars parked up and dumps the bins to one side as he goes to take a look. As Kat appears, he questions her whether they always park their cars there, to which she admits they do as they must think it's a safe place. Phil laughs and informs her that she was in fact right, there is a job for them there, but she could've been looking at the wrong one. Something now tells me that perhaps Phil might nick one of the cars and attempt to sell it, we know that Phil is known for dodgy car deals, so perhaps this might be the way that he and Kat get a decent amount of money?
Back at the Vic, Mick is looking dapper and happy to be working a shift at the place he once called "Home!". As he makes himself comfortable behind the bar, Shirley and Tina make their way inside. Shirley is surprised to see her son working at the Vic and questions her sister, who simply just smiles and shrugs but Shirley knows instantly that he sister set it up for him. As they approach the bar, Tina, pretending to act suspicious questions her brother as to why he's there. Mick informs them that Ian approached him and asked him to help out. Tina acts very happy for her brother and happens to mention how nice it is for all of them to be back in the Vic again together.
(I know this is quite repetitive, I apologise about that!) Returning to the church, Denise is getting all the information she's seeking about Raymond. She questions whether Raymond knew he was adopted, and the pastor informs her that his parents did tell him when they felt he was at the right age to know. Sorry to be so blunt here, but am I right in thinking that Raymond is only 3 years old? Or is perhaps a little bit older? Only because a child that age I don't think will understand what being adopted means, how could they even begin to understand? Hmm - but I'm not one to judge, who knows, maybe some kids are told in their much younger years that they're adopted, I really don't know?! The pastor can tell that Denise is nervous to inform Raymond about who she really is to him, and Denise admits that she feels that she fears it would be betraying them in a way. The pastor reassures her that Raymond's adoptive parents wouldn't have seen it that way, and they would only want him to be happy and want what's best for him. He assures Denise that Raymond knows exactly who his parents are, but also gives her some food for thought, for him at such a young age, living with a stranger who he has no connection with, is bound to be confusing for him. Perhaps this may give Denise the comfort to tell him the truth about her identity? She asks whether she'll be able to bring young Raymond back to the church more often, just for him to keep that connection to his adoptive family and the pastor is more than happy to oblige.
Ahh so, Kat and Phil have returned from their cleaning job. They're sat in the Mitchell household around the table with Ben. It looks as if they have informed Ben about everything they know about the potential building and plan they have made to rob the place. As the conversation continues, Kat is adamant that it's still her job whether she came up with the plan or not, considering she was the one who found the building in the first place. As they discuss their way of getting inside and the possibility of needing another driver to make their escape. Kat informs them that she wants to make sure either Phil or Ben are inside with her, otherwise the job won't happen. It's understandable, I guess you could she wants to make sure her share of the money is safe. It sounds as if the people involved in this robbery is going to be Phil, Ben, Shirley, Kat and someone else - who is going to be that 5th party? - Who will Kat drag into doing this job with her? Kush? or Stacey? Only what they don't know is while they're discussing their plan, Callum has been listening to everything behind the door. Something tells me that their plan is going to go horribly wrong - is Callum going to use this information and tell DI Thompson that this will be the only way of getting Phil behind bars? Also I do fear that perhaps the 5th person they get involved in the plan will also cause them problems, I don't know why, but something tells me something is going to go wrong. A successful robbery between Phil, Kat, Ben, Shirley and someone else - nah! Something is going to happen!! What do you guys think?! Maybe if Ben finds out that his boyfriend knows, he could persuade him to take part?! You never know?!
Back at the Vic, Tina is adamant she's wanting to celebrate Mick working behind the bar again, back in his comfort zone. As she starts speaking about a memory about her and Mick getting drunk on vodka, she recalls how Katy had to put Mick to bed. But Mick's mood does a complete U-turn as she mentions Katy's name. Tina pleads to her brother to try and make up with Shirley, but as Mick move his arm along the bar he knocks off an expensive bottle of vodka on the floor. Ian comes from behind and (in typical Ian style) has a go at him for breaking an expensive bottle, Ian also lets slip that it was Tina who got Mick the job. Mick once again looks disappointed and leaves the pub, Tina following him as he does so. Once their outside, Tina is begging her brother to tell her what's troubling him. She mentions how she can see he's been struggling the past couple of weeks, she explains how she was trying to cheer him up by asking Ian to give him a shift at the Vic. As the camera zooms closer onto Mick's face, it looks as if he's about to admit something to her, it looks as if he's finally going to tell someone exactly what's been troubling him. But instead he tells her sister to not apologise and acknowledges that she tried to do a nice thing for him, he admits that he's not angry with her and makes up the excuse that it was hard for him to be working at the Vic as it brought back so much memories of what he missed. As he goes to walk away, he calls back to his sister not to worry about him, he reveals he'll go and stay with Lee for a few days to help clear his head. They send each other their love and as Mick walks away Tina looks over to pub to see Ian look back at her with a really smug grin. She softly speaks to herself threating Ian to enjoy it while he can - what does she mean by that?! Is she going to attempt to get the Vic back off Ian?! What do you guys think? We know Tina will be leaving, could this be the start of her exit storyline, could she get herself in so much trouble in an attempt to get the Vic back that she'll need to leave the Square? What are your thoughts of this?!
The final scene of this episode, Kat arrives home, she informs Kush that she now has Phil on her side. Kush is stunned to hear that Phil has listened to her plan. She admits that if her plan is a success, they wont have to worry about money for a long long time. They make themselves comfortable in the kitchen and Kat informs Kush about everything, the fact that Phil knows someone who will be able to give them 100 grand for the cars. The only thing they need for the plan to work is one more driver, Kush then suggests himself for the role, but Kat isn't sure whether Phil would agree, but Kush insists that seeing as he was the one to get them into this mess, he wants to help get them out. Kat admits that it's a big job and there is no room for mistakes, she makes the point that she could go to prison for doing this job, she has her children to think about. It suddenly becomes clear to Kush that she no longer trusts him, but then again - she probably has good reason to, as she makes the fair point that he has been making a lot of mistakes recently. He pushes her to admit that she doesn't trust him and eventually she does, which appears to hurt Kush as he then asks her why are they together? Why are they still a couple if she no longer trusts him? He then states that perhaps them still being together is the biggest mistake of them all and he leaves the room, leaving Kat speechless.
But does he have a point? Her point is also a valid one? Will she agree and let Kush help her out with the job? What do you guys think is going to happen? Will the robbery be a success or will something terrible happen? What do you think Callum will do now he knows the full idea that they're all planning?! Shen Zhou (沈周, 1427 - 1509) was a Literati painter and foundator the Wu School. His painting stile is clean and refine. I like the way he uses dots to depict plants or trees far away. You can notice that the classical topics of the ShanShuiHua (山水畫) are clearly represented in the painting: long spiritual journey going through water and mountain to reach a place with great interest (the temples behind the mountain in the painting). . During the Ming Dynasty (1368-1644), painters of the Wu School (close to modern Suzhou) continued the tradition of the literati painters (文人畫, pinying: wenrenhua, amatorial scholar-painter) claiming painting as a personal artistic expression, in opposition to the figurative and realistic painting of the imperial court. Shen Zhou was regarded as one of the painting elite of his time, part of the "Four Masters of Ming Dynasty", with Tang Yin (唐寅) (I have introduced several reproductions of painting of this latter on my previous posts). . I did the painting of the present post in May 2018 in Sabetta (Russia). I used only dark black ink, no colors. I Bontoc (in alternativa Bontok ortografato) vivono sulle rive del fiume Chico nella provincia della Montagna Centrale. Parlano la lingua Bontoc . Hot hands, cold heart
Wow, what a crazy few days it has been! I staged at Flower Child on Friday, the 15th of September and then proceeded to work there for the following 5 days straight. I have only been in Korea for two weeks, but it feels like I’ve been here for much longer.
Heres how it all went down. After my stage, Jamie and I sat and talked about the coming two months that I’ll be in Korea. I explained that I technically have a job copywriting, plus I want to be able to still be a tourist in the Seoul, especially once Chris gets here. We agreed on me working 3-4 days max and she also offered to compensate me for my work.
I guess it was something like the stars aligning for both of us - I was looking for some fun/learning in a Korean kitchen and she was desperately looking for some helping experienced hands for recipe development, photo shoots, and events coordinating. It just so happens that those are some things that I’ve done a ton of in all of my recent work.
Anyway, the idea of me working part time did not make sense for this first week. Jamie is being featured in two Korean magazines - a great opportunity for promoting the restaurant and herself, however, the catch being that the dishes she presents must highlight cheese in some way. Koreans do not use a lot of cheese in their diet, so the Korean culinary world is trying to promote cheese by having chefs present dishes that make cheese enticing and exciting. This meant that Jamie had to create new dishes entirely from scratch. The first photo shoot was just for one dish - a dessert featuring bleu cheese. The second photo shoot (which we are doing on Tuesday next week) is going to feature an entire menu of completely new dishes featuring cheese.
So that’s what I’ve been doing. We immediately hit the ground running and Saturday, Sunday, Monday were devoted entirely to recipe concept design and plating and testing out the bleu cheese dessert, with Monday being the actual day of the shoot.
Tuesday, Wednesday and Thursday we had to bust out an entire menus worth of mise in order to get most of our concepts down for the full menu. We have 3 amuse bouche, 1 cold app, 1 hot app, a main, and then the dessert is the same we did for Monday. The photoshoot for the full menu is on Tuesday the 26th, but the photographer asked for photos of the plates ahead of time so that she can prepare herself for how to set up the shoot. Those rough draft photos were due yesterday, Thursday the 21st.

All this on top of regular lunch and dinner prep and service and they only have one small kitchen to work from. This has meant that I’m both doing prep for the line cooks, plating food, and recipe development/photo shoot prep. It’s been very fun, but a lot more hours than I had expected.
The three cooks don’t speak any english (fortunately Jamie speaks perfect english and the manager/FOH guy also speaks english). However, we’ve all be able to communicate fairly well. The guys are all super goofy, yet very hard/serious workers. They attack their work with tenacity and thoroughness that you rarely see in line cooks in NYC. Their level of discipline is unbelievable - the kind of discipline you have to scream into some low level cooks in the US. Part of this might be that all men in Korea are required to do two years of military service. I remember a friend from Betony, who was from Singapore, saying how his own military experience helped him hone in his discipline and organization skills.
I’m embarrassed because I still don’t really know their names that well - they are slightly difficult to pronounce and their names all sounds exactly the same with slight variations. Their names all sound somewhat like the english word “corner” so I constantly think they’re announcing themselves coming around a corner, when really they’re just calling out to one another.
They also make killer family meal. The youngest, an intern from a cooking school in Seoul, is responsible for most family meal prep but everyone lends a hand. He busts out these delicious giant pots of various Korean cuisine. The first day I was there we had cold-buckwheat noodles. One of the other days we had this giant rondeau of stew. All meals are paired with different types of kimchi and rice. I found out that the kimchi is not made in the restaurant - its actually more often then not provided by the cooks moms :) (adorable).
The guys, as I said before, were very upfront to ask me my age and if I had a boyfriend. Ever since they found out my age (29) they started treating me like an older lady.... which makes me feel so self conscious and sad. In Korean, age is a huge deal, especially when it comes to women. An unmarried 30 year old Korean woman might as well be a spinster. Jamie laughed and told me that they refer to me in the formal now, essentially saying “Ms.Sophia”. They also make sure that both Jamie and I eat first, are served water first, and they try to step in and prevent me from doing the dishes. While endearing and kind of funny, it’s also annoying because it reminds me of my frustrations of being treated differently because I’m a woman in a US kitchen - to have agism layer on top of that feels insulting. The difference is that here, despite what they’re doing is some sort of discrimination, they treat me really kindly and respectfully. In the US I had to claw/scream/push/muscle my way into a position where people didn’t disrespect me or treat me differently. And even then I was labeled as rude and bossy. Even after 2 years of working at Betony, one of my fellow coworkers made a remark that set me over the edge - he said that the reason I was being so mean was because I was probably on my period.
So I have no real reason to complain - except that I don’t want or need the “special” treatment. Koreans seem to have these ridged rules and superstitions about everything though. My favorite was when I tried to help them portion out their bread for service. The dough kept sticking to my hands and we were laughing because I was so bad at it. Then the sous came over and grabbed my hands and inspected them. They all came over and touched my hands and nodded agreeing with whatever he was saying. Jamie laughed and explained that he said that I had hot hands, which were no good for working with dough. She also said that koreans have a saying about “hot hands, cold heart.” So they all have also made that judgment on me as well - that I have a cold heart. Little do they know - I don’t just have hot hands, I have extremely sweaty hands. What do the Koreans say about that???
Another favorite moment I’ve had this past week was making gnocchi. Jamie and I were working out a dish that would pair gruyere with kimchi for the hot app dish. I suggested we do something that mimicked the Korean dish “tteok-bokki”. The gnocchi would mimic the texture of the rice cakes and be made with potatoes and gruyere. We’d also make a sauce and some rice crackling to add similar korean flavors to it. I ended up getting a recipe for gnocchi from my friend from Betony, Michael Pini. He went and traveled all over Italy this summer and spent some time learning pasta from the experts - elderly Italian women. He gave me a recipe he had been working on at home and we texted back and forth about technique and concept.
When I went in the next day and tested it out, it turned out perfectly. And, the guys on the line were very impressed. They do this thing where - when I “pull off” some technique or make something surprising, they slow clap. So as I started making the gnocchi, they came over and slow clapped while I rolled out the dough. The sous worked in Italy for a few years after finishing culinary school, so he immediately jumped in and started shaping the gnocchi for me. It was a really wonderful moment for me.
And then, finally, Jamie and I went to the market one day. The market happens to be pretty close by and I’m so surprised I never stumbled across it in my many meandering in this neighborhood. It was super fun to be able to go with a Korean and get to watch her interact with purveyors and pick and choose product for the kitchen. The markets in Seoul are unlike anything I’ve seen on the east coast of the US. They have crazy ingredients, and of course, an abundant and wide range of sea food.
I think thats it for now on kitchen stuff. I also made family meal one day - I made fried chicken. I got another slow clap from the guys for that one. I’m going to write another post about things I’ve done outside the kitchen - I’ve surprisingly found time to do stuff other than work in a kitchen too.
The most mindblowing thing for me to think about right now is that last week, my only plans were to stage at Flower Child and then maybe go on a bike ride with Inhee by the Han river. This week I’ve helped create an entire coursed out menu.

Tang Yin 唐寅 (1470-1524) was a literati painter of the Wu School (Chinese 文人畫, pinying: wenrenhua, amatorial scholar-painter). As his fellow members, Tang Yin was claiming painting as a personal artistic expression, in opposition to the figurative and realistic painting of the imperial court (mostly Beijing during the Ming Dynasty).
The painting of the present post is a reproduction I made in April 2018 of the original painting of Tang Yin named ‘Contemplating on a Donkey Ride Home’ (騎驢歸思圖). This painting depicts the classic theme to the ShanShuiHua 山水畫. You can note the harsh mountain peaks landscape, whereby few threes attempt to grow on the steep slopes. The waterfall contrasts with appeasing notes, almost whispered.
However, the core subject of the shanshuiha is depicted, as indicated by the title of the painting, by the journey undertaken by the main character (on a donkey) which will lead him to the small village on the top part of the mountain. It shall, of course, be understood as the journey that the literati painters are themselves undertaking to elevate their soul, to express their inner person and spiritually to “satisfy the heart”.

While exploring the rich History of the Chinese Painting, I discovered the Literati painters of the Wu School. . During the Ming Dynasty (1368-1644), painters of the Wu School (close to modern Suzhou) continued the tradition of the literati painters (Chinese 文人畫, pinying: wenrenhua, amatorial scholar-painter) claiming painting as a personal artistic expression, in opposition to the figurative and realistic painting of the imperial court (mostly Beijing during the Ming Dynasty). The literati artists painted ShanShui (landscape painting) with no intention to depict the nature realistically, but to express their inner person and spiritually, to “satisfy the heart”.They used shapes and forms borrowed from nature to create their own composition of a landscape in order to advocated sincerity and harmony with the nature (dadaism philosophy). . I found this approach exceptional for this period of time, providing perhaps for the first time in history, the artists with the circumstances to create for themselves, freed from the rules and orders, focussing on their own inspiration (and a remarkable one). . I affectionate especially Tang Yin 唐寅 (1470-1524), a painter of the Wu School (Ming Dynasty). He painted with a very clean and aesthetic style. You will enjoy several reproductions I have made of his paintings on the coming posts.
