In another pot add onions in heated oil and fry till translucent then add bay leaves, cinnamon, green cardamom and fry until golden brown and crackled..
Then add green chilies, tomatoes, turmeric powder, salt, red chilli powder, prepared spice mix, garam masala powder, ginger garlic paste, mix and add yogurt, then mix well and cook until oil separates..
Then add fresh coriander, mint leaves, fried onion and the BBQ chicken..
Whisk yellow food colour in yogurt and add in the biryani mix..
Add the boiled rice and sprinkle with fried onion and the prepared spice mix then cover with lid and steam cook for 8-10 minutes.

A winter treat to relish at Dubai Marina

Tucked away amidst the yachts, food trucks and tourists at the Dubai Marina, Zafran (which translates to saffron in Urdu) hopes to add sweetness and zest to the winter ambience with its 'fiery' food. While for people familiar with Indian cuisine, the flavours at Zafran Indian Bistro may seem normal, it is definitely a must-try for those who've always wanted to explore the Indian side of food, but were sceptical of the fiery flavours this style of cooking entails. However, rest assured, newcomers to Asian cuisine won't be disappointed as the spices at Zafran have been tempered to suit most palates. Located on the promenade of the Dubai Marina Mall, the restaurant overlooks a rather busy food street. With yachts moored alongside the pier, it's really a pleasant sight. Walk into the restaurant and you're greeted with lounge music and the aromatic whiff of Mughlai dishes. With the winter evenings getting breezier and colder and the skies getting clearer, there's nothing better than sitting on the terrace overlooking the marina and enjoying some piping hot and spicy Indian dishes. The food and the ambience here seem to complement each other. As we watch seafaring revelers return in their luxury yachts and tourists stroll along the promenade, some stopping over at the food trucks for a quick bite or to take a selfie, we decide to tuck into our first course - Chaat Platter. The starter comprised an assortment of Indian street food items like Onion Pakora, Samosa, Dhokla, Bhel Puri and Aloo Tikka. Served with a variety chutneys, we devoured it in a jiffy as the chilled breeze blowing across made us feel unusually hungry. Though we liked the platter, we must say that such items are best enjoyed on the roadside. Next up was a platter of grilled kebabs featuring Murgh Malai Tikka, Chicken Tikka, Murgh Pudina and Rampuri Seekh Kebab. Full marks to the Rampuri for being fresh and juicy with its unusual blend of spices. An assortment of gravy-based dishes was next on the list and we chowed on Dum Ka Murgh, Laal Maas, Paneer Makhani and Pindi Chole. Here the Dum Ka Murgh was a unique presentation. The boneless cubes of chicken blended well with the cashewnut, almond and yoghurt gravy, reminded us of the mildly-spiced chicken Afghani in look and taste. Another pick amongst the mains was the delectable Laal Maas. One of the top dishes to originate from the state of Rajasthan, it featured succulent pieces of lamb cooked to perfection in a delicious onion and tomato gravy. The rich 'laal' (red) colour was brought about by the generous use of Kashmiri chillies, which are known to impart flavour and colour and they're not as pungent as other Asian red chillies. The gravy was so delicious that we swiped off the remains with the leftover rotis and parathas. And how could we make a meal of it without taking a bite of the restaurant's famed dish, Chicken Zafran Biryani. This dish is served in an earthen pot and sealed with dough to make it more aromatic, of course every morsel is enriched with saffron and spices. We ended with a dessert platter featuring Malai Kulfi, Rasmalai, Baked Yoghurt and Beetroot Halwa. A special mention has to go to the baked yoghurt. If you happen to be from Kolkata or have been a visitor to the city, you'd surely be familiar with their ubiquitous Mishti Doi and the baked yoghurt gave our taste buds that feeling of Oh! Calcutta. This delectable dish is made with tender, juicy pieces of chicken cooked to perfection with Indian Spices and caramelized onions, each rice grain bearing the flavors of this royal treat.
When I started to cook, I never thought that Biryani can be made at home. It was always a special dish we went out to eat.
Then one day, a friend of our’s invited us over a biryani dinner and that day changed everything for me.
The biryani he made was out of the world and was made at home from scratch. I became his fan immediately and we had many biryani meals at his place later.
This man gave me the confidence to try out biryani at home and with a little hand holding by him, it took me no time to become a Biryani champion myself. I made many variations later apart from chicken biryani and posted the recipes here.
Some of the other biryani recipes I’ve posted are: Mutton Biryani, Hyderabadi Vegetable Dum Biryani, Kathal Ki Biryani, Hariyali Jheenga Biryani, Egg Dum Biryani and a seafood special Fish Dum Biryani.
What is Hyderabadi Chicken Biryani?
Biryani is basically rice cooked with meat in layers and on very slow heat or dum. There are many ways in a which a biryani is prepared and each method is unique and have it’s own significance.
There is Hyderabadi Style Biryani, Lucknowi Biryani, Ambur Biryani, Donne Biryani etc to name a few.
Hyderabadi Biryani is prepared in two ways – Kacchi or Pakki Biryani. Kacchi Biryani is where the meat is not cooked separately but gets cooked along with the rice while in the pakki biryani, the meat is cooked prior to layering it with rice.
The method I have mentioned below is Kacchi Biryani method and I will soon be posting the Pakki Biryani method too.
How to make Chicken Biryani?
This royal treat is prepared by cooking the rice first, and then layering it with chicken. Long grain basmati rice is to be soaked and added into a bowl of boiling water with khada garam masala, salt and shahi jeera. The rice is allowed to infuse the flavours of the masala and jeera and cook in it.
The chicken pieces are marinated with ginger paste, garlic paste, garam masala powder, red chilli powder, turmeric powder, salt, vegetable oil, green chilli and lemon juice, it’s allowed to sit for a few hours so that it soaks in all the flavours of the marinate and become tender.
You must make sure to marinate the chicken well in advance for it to get tender and cook under dum to perfection.
Once marinated, this delicious Hyderabadi biryani is assembled by putting in the chicken first and topping it with partially cooked rice.
As the rice starts to cook, the biryani is topped with milk, soaked saffron, browned onions and ghee. Then the pan is covered and the biryani is allowed to cook on dum beautifully with the flavours of the spices and toppings.
At this point in time, the aromas in your kitchen are going to be simply divine. It’s important to slow cook the biryani so that all the flavours seep right through and the chicken gets cooked thoroughly. Once it’s cooked completely, the biryani is mixed and served hot.
It’s very important to see to it that the rice is cooked to perfection; you don’t want it to be too mushy. The flavours of this dish speak for itself, chicken is to be marinated well and the final touch of saffron give this whole biryani a royal touch.
People from all over the world flock to Hyderabad to get a taste of this delicious Hyderabadi Chicken biryani, but what most don’t realise is that you can bring the taste and flavours of Hyderabad to your home. In Hyderabad, the taste of the biryani differs from region to region, but the method of cooking the biryani continues to be the same.
So for your next party, do try this delicious Hyderabadi Chicken Biryani and you won’t be disappointed. This recipe continues to be one of my all-time favourite biryani recipes.
Tips to make best Chicken Dum Biryani
Use best quality rice to make biryani. Long grain basmati rice which is atleast 2 years old is considered best to make a good biryani. I use Fortune basmati Rice to make my biryani.
The chicken must be marinated before hand. Since we are not cooking it separately, marinating it beforehand will make it tender and easy to cook.
Use a heavy bottom pan to assemble the biryani. The biryani needs to be cooked for 35-40 minutes on low heat and if the pan is not heavy, it might burn.
The traditional potli masala used to make biryani recipe has many unusual ingredients, but since it is not easy to source them, I have a mix which is easy to find and not compromise on taste.
Making Birista at home is the best way to go. I always make a large batch and freeze it for later use. You can check the recipe to make golden fried onion or Birista here.
Be very attentive while cooking the rice. Do not stir the rice much while cooking otherwise it will break the grains.
Choose a pan with a tight fitting lid. This biryani cooks on dum or steam and we want to retain as much steam that is formed inside. Traditionally, a sealing of dough used to be put around the pan and the lid but I don’t think that it is required if the lid fits tightly.
How to choose rice to make best Chicken Dum Biryani Recipe?
Both the taste and visual appeal of Biryani should stand out in its preparation. Now while this recipe takes care of the taste, the visual appeal comes only through rice grains. Longer the grain, better would be the biryani. I always choose the rice which is extra long and stands out as individual grains.
This gives the visual appeal of a blooming flower and makes eating biryani an enjoyable experience. Hence Basmati rice is the best choice to make Biryani, it stands out individually, without forming lumps while cooking.
In the market, you now even get specially selected long grain Basmati Rice, which is perfect for this Biryani.
The age of the rice is also very crucial to make good biryani. Choose the rice grain which is at least 2 year old. The older the rice, the better it is.
What to serve with Chicken Biryani?
Chicken Biryani can be served with any raita of your choice like Onion Tomato Raita, Boondi Raita or Pineapple Raita.
You can serve Mirchi ka Salan with it too.

EDigest Foods Serves the Best Biryani in Greater Noida

Aadaab to all my readers! How long it has been since I am away from you all . I was bit busy in my project in Greater Noida . Greater Noida is a nice place but there are only few places where you all can have a good food and too that of authentic taste. In my 45 days stay I went to many restaurants and ordered from many restaurants. As I am from Lucknow my love for biryani is neverending and I ate Biryani at the best biryani restaurant in greater noida. And that is EDigest Foods.
Here is the most awaited post on Aadaab; the Biryani, sorry to keep all my readers waiting.
Biryani is synonymous with Hyderabad. It is an iconic dish, loved not just in Hyderabad but a favourite all over the world.
The mere mention of Hyderabad and your mouth starts watering for biryani. I am a Hyderabadi and Biryani runs in our blood! It’s my favourite, favourite and the most favourite dish, like it must be for most people who belong to this city. It is usually on the menu in our home for the Sunday family lunch.
The Biryani Tales
The aromatic Dum Biryani is a historical dish and has been a celebrated dish on the menu since the Mughal era. Even today, no wedding or party is complete without a few rounds of scrumptious Biryani.
However, there are two distinct types of Hyderabadi biryanis: A ‘kachchi yaqnee dum biryani’ and a ‘pakki yaqnee dum biryani’.
Kachchi Yaqnee Dum Biryani: Kachchi means raw or uncooked, hence this is made from raw meat marinade, layered with semi-cooked rice and cooked in the dum style.
Whereas, Pakki means cooked or ready, therefore, in Pakki Yaqnee Dum Biryani the meat is pre-cooked and then layered with the semi-cooked rice and cooked in the Dum style.
Cooking with Dum is a traditional technique, which requires sealing the vessel with hard dough or foil and trapping the steam inside. The food will cook in its own steam. The Dum is removed once the biryani is ready.
The Kachchi yaqnee is the more popular of the two biryanis.
People savor the Chicken biryani the most, although chicken and beef biryani is equally enjoyed.
For all my readers who have been waiting for the biryani post on aadaab, here is my mum Aqsa Fatima’s authentic recipe of kachchi yaqnee Chicken Dum Biryani. It was passed down to her by her father, Nawab Mahboob Alam Khan, a connoisseur of Hyderabadi food and history.
I have divided the recipe in four parts.
Recipe and Ingredients Serves 6-
I. BASIC CHICKEN MARINADE
Chicken 2KGS
Fresh Ginger-Garlic 3TBSP
Salt A few TSPS (adjust as per your taste)
Chili Powder 1TBSP
Turmeric Powder ½ TSP
Mix these ingredients well with cleaned Chicken and leave in the fridge covered for marinating overnight or for entire day.
II. ADD THE BELOW INGREDIENTS TO THE MARINATED CHICKEN AND MIX WELL, A FEW HOURS BEFORE COOKING( 3-4 HOURS AT LEAST)
Yoghurt 1KG
Cinnamon 2 sticks
Lemon Juice 3 TBSP
Shah Zeera Powder (Cumin powder) 1TBSP
Cardamom Ground powder of 15 pods
Cloves 4-6
Coriander 2 whole bunches, finely chopped
Mint leaves A bunch
Green chilies 6-8, slit
Onions 1 large, finely chopped
Fried onions A handful (preserve the oil in which these are fried)
Fresh cream 2 TBSP
Oil 1 cup (add the oil from the fried onions)
Ghee or melted butter ½ cup
Raw papaya powder or paste (meat tenderizer) 2 TBSP
Mix ½ cup milk with saffron and melted butter or ghee. Divide into two equal portions. Use one half of the mixture in this marinade. Preserve the other half for the rice.
III. FOR THE RICE
The cooking of the biryani rice is called Adhan.
For this you need:
Rice 1.5 KGS (You are free to use a ratio of 2:1 of meat: rice, making it only 1 kg of rice )
Cloves 5
Cardamom 5 pods
Shah Zeera whole 1TSP
Lemon Juice 1TBSP
*Add the above ingredients to boiling water. Add handful of salt. Semi-cook the rice. It should open up slightly. Once it is half done, drain the water, remembering to save at least two cups from it.
IV. THE FINAL ASSEMBLING OF THE BIRYANI
Now it’s time to assemble part I, II and part III for the final cooking.
In a heavy bottom pot or a biryani ‘Deg’ (A traditional copper pot used to cook biryani), spread the meat marinade, evenly
Spread the slightly cooked rice on top of the meat
Spread the remaining saffron and milk mixture on the rice layer
Top the rice layer with a cup or two of water, saved from the adhan
Now place the lid on the vessel and seal it with dough and let it cook. You can place a weight on the lid to add more weight and seal the lid better
COOKING TIME:
Total cooking time should be approximately 45-50 minutes. However divide the cooking time in the following way:
Cook on full flame till you can see steam coming out of the vessel (About 15-20 mins)
Once you see the steam coming out, let it cook on the same flame. Reduce the flame after 10 minutes and leave it for final Dum for about 20-30 minutes
Before you know it, your house will be filled with the aroma of zafraani Biryani, telling you it’ ready!
Scrape the dough out and open the Dum. Gently mix the rice and meat layers. Serve the delectable piping hot biryani with Hyderabadi Bagare Baigan or Mirchi ka Salan (curry made with green chilies and spices), (Separate posts coming up).
The dish is quite simple to make, it only sounds tedious. Even if you think it sounds like a big task to prepare authentic biryani, it’s totally worth all your efforts!

Hyderabadi Cuisine: A Unique Blend of EDigest Foods
Hey this is Simba Singh and I am a true adventurer who has visited many places and restaurants and eaten many cuisines. In my recent visit to Greater Noida, I visited the best restaurant in greater noida , EDigest Food which serves hyderabadi biryani and trust me it is the most delicious one. While spending few hours at the restaurant I read across the Hyderabad History cuisine , In this blog I am sharing few history of Hyderabadi Cuisine.
Hyderabadi cuisine, also known as Deccani cuisine, is the native culinary art of the Hyderabadi Muslims, which started to develop after the founding of the Bahmani Sultanate, and more radically with the foundation of the Qutb Shahi dynasty around the city of Hyderabad.
As Hyderabadi cuisine began to develop further with the amalgamation of Mughlai, Arabic, and Turkish delicacies, blended with native Maratha and Telugu culinary traditions, it subsequently became a royal legacy of the Nizams, the erstwhile rulers of the State of Hyderabad.
The unique blend of Mughal, Turkish, and Arabic cuisines, along with traditional Marathwada and Telugu preparations, is what makes the Hyderabadi cuisine so special. These varied influences and exceptional diversity basically make the Hyderabadi cuisine stand out in a country where food is a religion, worshipped and celebrated all over.
The cuisine, mainly comprising of rice, wheat, and meat dishes prepared with various natural edibles, spices, and herbs, has different recipes for different occasions. It is broadly classified into banquet foods, festival foods, travel foods, and foods for weddings and parties. Jahaji Korma—a spiced meat delicacy—for example, derives its name from ‘Jahaj’, which means a ship, and can be categorized as a travel food meant to be carried for long-distance journeys.
Hyderabadi Cuisine in the Medieval Times
Native Andhra cuisines were prominent and popular until the rule of the Vijayanagara Empire, but when Muhammad bin Tughlaq shifted the capital of Delhi Sultanate from Delhi to Daulatabad, this Deccan region rapidly started adopting foreign cuisines. Later, when Turkic general Ala-ud-Din Bahman Shah revolted against the Delhi Sultanate in the 14th century and formed the Bahmani Sultanate, he appointed Turkish noblemen in high positions, who introduced the Turkish cuisine in this South Indian region.
Banquets were a common part of the Deccan medieval cuisine, very fashionable among the noble families. Multiple courses were cooked and served in royal banquets, in a style known as Dastarkhān, where a long cloth was laid on the floor on which dinner plates and side-dishes were placed. The menu largely comprised of meat-oriented preparations, either grilled or fried in tandoor. Curries were seasoned and flavoured by using a variety of spices. In those days, fruits were preferred after the main course, rather than dessert. After the end of the meal, Kahwa, a liquid hot drink was served, which contained ingredients that help digest food.
Hyderabadi Dishes Today
The continual influx of migrants into Hyderabad has transformed the Hyderabadi cuisine into a form of culinary art. The modern Hyderabadi cuisine, however, evolved during the rule of the Nizams in the mid-17th century. During that time, most of the foreign food experimented with various Indian spices, which led to the creation of different recipes that eventually excelled over the original versions to establish a separate identity. For instance, it is well known that Biryani is from Turkey, and Haleem is from Arab, but the Hyderabadi variety of Biryani and Haleem have elevated itself to achieve a unique status altogether.
Similarly, the native til-ki-chutney was modified with Arabic tahini, Persian dried lamb was refined with dalcha, and tandoori naan of Uzbekistan was modified to create Sheermal. Even, most of the modern day desserts in the Hyderabadi cuisine were also modified during the times of the Nizams, which have today become an integral part of the local cuisine.
The Nizams of Hyderabad State were great admirers of art, culture, and food. They, in fact, allowed a grand fusion to happen between North Indian, Central Asian, and Deccan cuisines, which led to the introduction of delectable recipes that form the core part of today’s Hyderabadi cuisine. The influence of several components, sourced from various parts of the world, is what makes the Hyderabadi cuisine so very fascinating.
Hyderabadi Cuisine Is Much More Than Just Biryani
The southern city’s 400-year-old culinary history, almost like its culture, is vibrant and diversified, but unfortunately, Biryani seems to have taken the centre-stage as the sole representative of Hyderabadi cuisine, pushing all other dishes to the back seat. Be it North Indian Peshawari delicacies like Sheer Korma, Chicken Korma, Bina Masale Ka Murgh, or Gajar-ka-halwa, Turkish delights like Asaf Jahi Kebab, or traditional spicy South Indian dishes like Dum Ke Baingan, Colocasia Curry, Mirch-Ka-Salan, and Bagaara Baingan, all these great preparations are slowly fading away.
Same is the case with mince savoury Lukhmi, Persian bread Sheermal, Badam-ki-Jhab, milk-based sweet dish Dil-e-Firdaus, or the popular bread pudding Double Ka Meetha. Though the footprint of some traditional Deccani dishes can be still found in the bordering towns and popular Hyderabadi restaurants, these rare recipes and ancient flavours are however dying gradually and surely. A systematic documentation of the history and recipe of these mouth-watering delicacies is the need of the hour, or else, these beautiful preparations will be lost forever.
Interestingly, most of the Deccani cuisines derive their name from the ingredients used, and the method of preparation, for instance, Murgh-Do-Pyaza, which gets its name from the onions that are added to the dish twice in two different ways. What makes these Hyderabadi dishes so exceptional is the use of diverse ingredients, meticulously chosen and cooked to the right point. The addition of condiments, special spices, and herbs, create an incredible taste and texture that adds uniqueness to the dish. The rich blend of Masalas, typically herbs, condiments, and spices, provide the dishes a tasty base, popularly known as the Gravy. Some of the ancient blends of herbs and spices used in special dishes are kept super-confidential and is only passed down the family line, or from the Ustad (Master) to the Shagird (Student).
The influence of religious and regional dishes, experimented time and again to perfection, enabled the Hyderabadi cuisine to create and uphold a unique identity of its own. One such example is the Hyderabadi Biryani, which is a major crowd puller, attracting a significant number of food lovers to the city from India, as well as from all around the world. Though we might complain about Hyderabadi Biryani stealing the show, there is no denying that other authentic Hyderabadi dishes need to be plucked from the pages of history and brought to the tables of food lovers across the world. Only then can we hope to restore the incredibly beautiful tradition that Hyderabadi cuisine is!
