3 Southern Girls’ Red Beans & Rice: A Home-Cooked Tradition

One of my favorite comfort foods is red beans and rice cooked in a slow cooker with a Cajun twist. In this recipe, beans and sausage are cooked slowly with fragrant spices to make a hearty and flavorful meal.

Ingredients: 1 lb dried red kidney beans, rinsed and soaked overnight. 1 lb smoked sausage, sliced. 1 onion, chopped. 1 green bell pepper, chopped. 3 cloves garlic, minced. 4 cups chicken broth. 1 teaspoon dried thyme. 1 teaspoon dried oregano. 1 teaspoon paprika. 1/2 teaspoon cayenne pepper. Salt and pepper to taste. Cooked rice, for serving. Green onions, chopped, for garnish.

Instructions: Soak beans, add sausage, onion, bell pepper, garlic, chicken broth, thyme, oregano, paprika, cayenne pepper, salt, and pepper. Put everything in a slow cooker. Mix things together well. On low, cook for 810 hours or on high for 45 hours, until the beans are soft. Put it on top of cooked rice and top with chopped green onions.

Prep Time: 20 minutes

Cook Time: 480 minutes

Despite the torrential downpour, I braved the city streets (if you live in the New Orleans area, you know) to visit Mawi Tortilla to sample its gallo pinto and talk to its chef/owner Will Avelar on all things beans, and in particular Camellia Beans.

Of note, the restaurant is now serving red beans and rice, but it is meatless and in a twist inspired by his father, it is served with slices of avocado and pupusas.

The beginning of moms red beans and rice ... yes.. she’s from Louisiana and we stay eatin’ good.

The Process

Hand pick red kidney beans (throw others away if not up to par), sauté spicy Cajun andouille sausage, remove and drain, sauté onion and garlic in sausage drippings, add hand picked beans, season and simmer. Add whole bay leaves. Add stock and sausage and slow cook until beans are tender. Eat next day.. if you can wait.

My suggestion: eat with cornbread
