Fork Crushed Purple Potatoes are a tasty change from regular mashed potatoes. They make a tasty and pretty side dish because of their bright color and crunchy texture.

Ingredients: 1 lb purple potatoes. 2 tbsp olive oil. 2 cloves garlic, minced. Salt to taste. Black pepper to taste. 2 tbsp chopped fresh parsley.

Instructions: Wash and scrub the purple potatoes thoroughly. Boil the potatoes in a pot of salted water until tender, about 15-20 minutes. Drain the potatoes and let them cool slightly. Preheat the oven to 400F 200C. Place the boiled potatoes on a baking sheet and gently crush them with a fork to flatten them slightly. Drizzle olive oil over the crushed potatoes and sprinkle minced garlic, salt, and black pepper evenly. Roast the potatoes in the preheated oven for 20-25 minutes, or until crispy and golden brown. Remove from the oven, sprinkle chopped fresh parsley over the potatoes, and serve hot.
