today in cooking news i made tartar sauce for the first time in my life and it made me feel very powerful. 10/10 would recommend with ambiguous fried breaded fish products

I can still picture it, memories so vivid that it could cut through five layers of cake. A memory so uniquely Bisaya, you can feel the pinakurat and Julie’s ensaymada creep through the text of this blog and invades your taste buds.
During grade school and all through out high school we would have classes for a half a day every Friday. This was dope because we could go home early and we would be in our PE uniforms that were basically pajamas that you wore to classes that you half payed attention to.
This was during a time my cousins and my brother all went to the same school and when we would hear the bell ring for dismissal. This was early highschool for me, so I would just phony cleaning, up until you heard the bell and rushed your classmate to finishing the class prayer quickly.
When I was this age Fridays were momentus, finally the weekend, we could go to Cagayan and watch a movie (or more realistically have my mom drag me around Cogon otherwise known as Cagayan De Oro’s Chinatown, and then some quick dinner at Mandarin’s). Fridays could also be spent at home, doing whatever the fuck I was doing at that age, I can barely bring myself to remember.
This Friday was different though, because my brother and I heard whispers in the morning, we heard, “naay handa sa ilang Tatay Pems”, so we knew there would be lechon and Spaghetti and if Tatay was feeling extra good there would be salad with enough condense milk to kill a diabetic.
When the school bell would finally ring and we heard the bubble engine sound from Tatay’s old Maroon Tamarraw FX or REVO, because this was more an SUV from the 90s than your classic Tamarraw FX, think 90’s patterns, cigarette lighter and knob and switches on everything.
We then would be greeted by Nong Dinsing saying “Ako mag drive sa inyo, na-a inyong mga mama ug papa didto”. So it would be me and my brother and three of our other cousins pack into this car. Inside we would be sharing stories from school, or some gossip, Euma (my cousin) and I never did any schoolyard talk just some nerd shit.
Arriving at Tatay’s was this best place, his house was made out of hardwood, decorations that were in at the time soon became drab, but I didn’t care as a kid, this was Tatay’s house and when you were there you would always be flanked by your loved ones and just a wave of comfort that doesn’t compare. We would be greeted by trabahantes and titas who we would couldn’t remember but were forced to bless. Tatay Pems would always be there smiling because I think that man always lived to see his family.
So there we would be anxiously waiting for the prayer to end, these prayers would normally last extraordinarily long because there would be an actual priest that would be invited to the bisperas.
Ever since I moved to Manila all I ever crave are moments of pure bliss while being surrounded by the ones you love. Moments of pure joy, moments that wasn’t captured by the media we were consuming as kids, because it was all western.
It’s been 6 years since Tatay Pems has died, I miss him dearly, I think my whole family does, here was a man who was doing his best, but also loved his grandchildren that came in all kind of shapes and sizes.
Yesterday I attended a fiesta, I went to church and everything and I just long for those moments of being with my whole family. We’re older now though, most of the time people opt not to go and no shame on them, it just doesn’t feel the same.
I miss you Tatay and I love you so much.

so i accidentally made jade garlic pinakurat.
pinakurat is a filipino condiment that is made by adding garlic, hot peppers and other things (optional, depends on regional preference i’m pretty sure?) like black peppercorns, bell peppers, greens, etc. to vinegar and letting it sit. it’s then drizzled over food.
i think i used vinegar that was too strong? oh and it’s yellow because of the bell peppers in it (not visible in the pics bc they floated to the top). the black things are black peppercorns.
very thankful that i happened to learn about blue garlic/jade garlic a few months ago, otherwise this would’ve scared me so much! it seems like such an unnatural color for food to have.

The Living Alone Vortex
For the past few days, I find it entertaining to watch ‘living alone’ videos on Youtube. These are videos that usually show tailored clips of a person’s everyday life mostly including, but not limited to, working out, cooking, watching TV, doing laundry, groceries, etc. The uncanny trend was started with Koreans, if I’m not mistaken, and I’m not going to deny that I, as well, have thought of joining this bandwagon that is fondly appreciated by kids nowadays. But, nah. Even before I did, I’ve already thought beforehand that I’d have little to no time filming and editing clips. I don’t want to have my days off being spent in a quicksand of editing. Twenty four hours ain’t enough for a day.
Like seriously. It sometimes crosses my mind if there’s any way to decrease the rate of the earth’s axial rotation so we’d come up with longer hours to do our things accordingly and have a little more time for ourselves. But that’s how the universe is meant to tell us ‘f*** you, deal with it, you puny peasant!’
And then, in the middle of these dubiously mundane thoughts about striking the Earth with thousands of kilotons of nuclear energy to slow its rotation, I sometimes find tranquility. A sea so peaceful that it made me take the wok (gifted by Ez-chan) out and toss some rice in. I had groceries from Marketplace delivered to my doorstep by Grab the other night so I included chorizo in my bag to go together with my egg fried rice. The Vigan longganisa was a bargain that Ez-chan bagged from Farinas Ilocos Empanadas via FoodPanda. Mix ’em altogether in a bowl, together with sukang Iloko or pinakurat, and you can die happy.
As a highly introverted demigod, I was baptized with a little to an almost nonexistent self-esteem. It could sometimes reach abysmal values at some point. I have thought endlessly of producing videos and uploading them online but I always get to the same, exact point ultimately—it’s always better when I just write these thoughts up.
So, here we are, lurking in the shadows and the thick canopy of my abode. It’s always better this way. For people like me who’s incessant in enjoying solitude, living alone is the dream. I meant, THE DREAM. Now I made a mess of my finances and hauled another budol buy from the latest 7.7 Shopee sale. Thank you, Ez-chan for fueling my desire of spending money on things that make me happy. Hehehehe.

Isaw is a popular street food from the Philippines, made from barbecued pig or chicken intestines.
The intestines are cleaned, turned inside out, and cleaned again, repeating the process several times; they are then either boiled, then grilled, or immediately grilled on sticks.
They are usually dipped in vinegar or sukang pinakurat (a spicy vinegar made from coconut.)
They are usually sold by vendors on street corners during the afternoons
