#tacotuesday yesterday was delicious thanks to @sietefoods #grainfree taco shells, @renaissancefarms #grassfedbeef that I cooked up with taco seasoning, fresh pimiento, and jalapeño (all from @cyfarmersmarket!) and some @yellowbirdsauce on top. # I have a deep love and appreciation for authentic Mexican style street tacos (gimme all the lengua and carnitas!) and feel so lucky that #memphis has so many great places that serve them, but sometimes a good ol' American style taco like this really hits the spot. Who's ready for #CincoDeMayo?!?🇲🇽🇲🇽🇲🇽 #Repost @paleogoddess Try my healthy #grainfree take on #MexicanRice! 🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽🇲🇽PALEO GRAIN-FREE MEXICAN RICE INGREDIENTS............................................................. * 1 medium head of organic Cauliflower, Or try Trader Joe's Organic Cauliflower Rice in the frozen section * 2 Tables Organic Extra-Virgin Olive Oil * 1 Small organic onion, finely chopped * 2 Cloves organic garlic, finely minced * 2 Tablespoons organic Tomato Paste (make sure there’s no added sugar) * 1 tsp. sea salt * ½ cup organic chicken broth, * Fresh organic cilantro leaves, for garnish INSTRUCTIONS 1. Grate the cauliflower using a box grater or the grating attachment on a food processor. Set aside. 2. Heat the oil in a large skillet over high heat and add in the onion and garlic; sauté for 2 minutes or until softened and fragrant. Stir in the tomato paste and season the mixture with sea salt 3. Add in the cauliflower and the chicken broth and mix well. Cover and cook for 3 minutes. 4. Remove the cauliflower rice from the heat and garnish with cilantro.
