The Kyoto Distillery is the first in Japan to be solely dedicated to making artisanal Gin. KI NO BI Gin is made using 11 botanicals sourced in its majority from the Kyoto Prefecture were the distillery is located. Another unique regional ingredient only available in Kyoto is found in its underground water source. Fushimi Spring water is renowned for its purity, softness, and mellow flavor. KI NO BI and KI NO BI TEA, the first two gins in the flight, were both elegantly smooth with classic juniper and citrus aromatics and flavors. The flagship KI NO BI is slightly fresher in its aromatics and more Yuzu forward in the palate. KI NO BI TEA delivers the similar freshness and citrusy quality, adding a layer of savory-fruity sweetness to its flavor profile. Tiezzi Brunello di Montalcino DOCG "Vigna Soccorso" (2015) This wine, which shows classic intense aromatics, with elegant and layered textural complexity in the palate, is made of 100% Sangiovese (Brunello) grapes grown exclusively in the vineyards of Podere Soccorso, near the church of the Madonna del Soccorso, just a stone’s throw from the old town of Montalcino. Adjacent to the 14th century walls and the Sanctuary of the Madonna del Soccorso, named in honor of the Patron Saint of the people Montalcino, the traditionally “alberello” trained, southwest-facing vineyard is found at an altitude of about 500 m above sea level. The soils in the Soccorso vineyard are silty/sandy, peppered with some heavy stones and volcanic rocks. After over 10 years of not setting foot on a ballet studio, today I had the wonderful privilege to watch United Ballet Theatre in training class, taught by the wonderful dance artist, athlete, company director, and amazing human Joseph Gatti . If you haven’t seen this classical ballet company perform, make sure not to miss them in action. Their next public performance in the Orlando area will be on October 2, 2021, at the Lake Eola Amphitheatre with a Gala celebrating Latin-infused ballets.
