Instructions: Preheat your oven to 400F 200C. Slice the spaghetti squash in half lengthwise and scoop out the seeds and fibers with a spoon. Place the spaghetti squash halves, cut side down, on a baking sheet lined with parchment paper. Bake in the preheated oven for 30-40 minutes, until the squash is tender when pierced with a fork. While the squash is baking, cut the avocados in half and remove the pits. Using a spoon, scoop out some of the flesh from each avocado half to create a larger cavity for the egg. Once the squash is done baking, remove it from the oven and let it cool slightly. Carefully crack an egg into each avocado half, ensuring that the yolk stays intact. Season the eggs with salt and pepper to taste. Gently place the avocado halves with eggs on top of the cooked spaghetti squash halves. Return the baking sheet to the oven and bake for an additional 10-15 minutes, until the eggs are set to your desired doneness. Remove from the oven and let cool slightly before serving.
