Eating Well
If you are someone who struggles to figure out what to eat, this post may help.
There is a lot of information out there about eating well. It's important to know it's not as complicated as most guides try to make it. The following is a simple way of looking at food adapted from David Werner's Where There Is No Doctor:
You need a main food, or foods. A "Main Food" is one or more starch bases, like pasta/noodles, bread/tortilla/biscuits, hominy, rice, potatoes, taro, millet, barley, or another grain or starchy tuber.
These are usually cheap and should make up a majority of your calories. They often also provide an amount of protein, vitamins and minerals.
However, living on starchy bases alone is not adequate. To them, you need to add at least one or two each of "Go Foods", "Grow Foods" and "Glow Foods" every day.
"Go Foods" are energy foods. They are things like oils, fats, peanuts, other nuts, oily seeds (like sesame and sunflower), and sugars (like granulated sugar, honey, maple syrup, and fruit juices). Eat more of these if you are doing heavy work. They can also replace some of your Main Food, though they are often somewhat more expensive.
"Grow Foods" are foods that build muscle and other body tissues and heal injuries. They include animal foods (like meat, eggs, milk, and fish), legumes (beans, peas, peanuts, and lentils), and seeds (pumpkin, sesame, sunflower, melon, etc...).
"Glow Foods" are foods that contain a lot of vitamins and minerals. These include dark green leafy vegetables (spinach, kale, collards, turnip greens, radish greens, etc...), orange vegetables (carrots, pumpkins, sweet potatoes, tomatoes, peppers, winter squash of any kind, etc...), fruits (apples, pears, berries, quince, etc...) and other vegetables (turnips, radishes, summer squash, onions, cabbage, etc...), herbs and spices (chili powder, garlic, cumin, thyme, oregano, sage, cinnamon, etc...).
Example meals (each meal does not need to contain all types of foods, as long as someone is eating some of each every day):
A rice bowl (Main) with vegetable (Glow) and bean (Grow) curry (Glow).
Oatmeal (Main) with whole or coconut milk (Go, Grow) and berries (Glow)
Spaghetti (Main) with tomato sauce (Glow) and meatballs (Grow)
Tapioca pudding (Main, Grow, Go) with cinnamon and nutmeg (Glow)
Farrow (Main) with stewed tomatoes (Glow) and olive oil (Go)
Zucchini boats (Glow) with black beans (Grow), rice (Main) and cheese (Go, Grow)
Baked potato (Main) with broccoli (Glow) and cheese (Go, Grow)
Potato (Main) and spinach (Glow) curry (Glow)
Whole fat yogurt (Grow, Go), granola (Main, Go), and berries (Glow)
Peanut butter (Go, Grow) and jam (Go, Glow) on toast (Main)

The Kindhearted King's- Droid x Reader, Clooless x reader
Summary: ___ just had surgery, and The gang turned their cooking stream into making dinner for her.
TW: fluffy, Established relationship, platonic friendships
“Hi, chat!” Droid greeted the camera as he went live on Twitch. “So as yall know we are going to be doing a cooking stream and instead of doing something sweet, we are actually going to make dinner. Now why the change you might ask?”
“The change of plans happened since my lovely girlfriend, as yall know _, had to have emergency surgery on her knee.” Droid gives the information out as he was pacing on the camera
“So, let’s make this dinner extra special for____,” Droid added, peeking into the living room where was sound asleep with Sly, recovering from her surgery. “She deserves the best chat, like come on, look at me.”
Grizzy, with his chef’s hat perched precariously on his head walks into frame, boomed, “Alright, team! What are we going to whip up? I vote for a feast worthy of a queen!”
“Let’s make _’s favorite! Fettuccine Alfredo with garlic bread,” Droid announced, flipping through a digital cookbook app. The chat exploded with excitement.
As they gathered ingredients, Pezzy took charge of boiling the pasta. With a flourish, he tossed the noodles into the pot, making an exquisite splash that soaked his apron. “It’s a part of the cooking process!” he proclaimed, as viewers laughed along.
Meanwhile, Grizzy was in charge of making the sauce. “Butter and cream—a classic combo!” he sang, mixing in zest and a touch too much salt when he wasn't looking. Puffer, working beside him, tried to keep the peace. “Easy on the salt, Grizzy! We don’t want _ waking up thinking she just bit into the ocean!”
Across the countertop, Droid managed the garlic bread. He topped the slices with butter and herbs, all while playfully pretending to be a food critic for the stream. He raised an imaginary glass, saying, “I declare this garlic bread ready for the finest of palates!”
As the aroma of buttery, garlicky goodness filled the kitchen, Grizzy stirred the sauce with enthusiasm, and viewers began to leave comments about how amazing everything looked. Their streaming chat was alive with advice, encouragement, and playful banter.
“Maybe we should add a surprise ingredient?” Pezzy suggested, mischievously. “What if we make it fancier and add a little mushroom?”
“Or some peas?” Puffer added. Grizzy feigned horror, “No green—this is a classic!”
Just then, a soft snore echoed from the living room, causing everyone to stop and look over. “Shhh the baby is still sleeping!” Droid whispered, trying to keep the atmosphere calm. “Let’s finish up before she wakes up craving the food we’re cooking.”
Finally, after much laughter, splashes of sauce, and a tiny kitchen fiasco involving an overturned bowl of cheese, the feast was complete. They plated the fettuccine Alfredo alongside the golden garlic bread, and it looked like something out of a five-star restaurant.
“Let’s bring it to her together!” Droid said, excitement bubbling over. They carefully tiptoed towards the living room where _ lay sound asleep, surrounded by her cozy blankets.
As they approached, Sly was tucked into ___’s blanket then, _ stirred slightly but remained blissfully unaware of the deliciousness unfolding before her. Droid gently placed the steaming plates on the table nearby. “! Dinner is served!” he said softly.
With the four friends gathered around her, the aroma wafted through the air and finally stirred _ awake. Her eyes fluttered open, and she took in the sight of her friends, laughter in their eyes and kindness in their hearts. “What’s this?” she asked, her voice still sleepy.
“Your favorite!” Puffer declared with pride. “Made with love and hate.”
The joy on _'s face melted their hearts. They laughed and shared stories of their cooking escapades and streamed the moments that followed—her delight at the pasta, the playful teasing between friends, and even a few bloopers they had captured along the way.
As the evening wore on, the chat flooded with heart emojis and encouragement, each viewer feeling a part of the unlikely family gathering taking place. _, feeling cared for and cherished, recognized just how lucky she was to have friends like these and a loving partner by her side.
As the stream wrapped up, viewers couldn’t help but feel like they were part of something truly special—a celebration of friendship, kindness, and delicious food. They knew they'd be back for more adventures with The Clooless Gang, and that this was just the beginning of many more culinary capers to come.

Depression meals Battinson has made himself at least once while unsupervised to the shock and horror of Alfred
(Alfred has to sleep at some point. that’s when Bruce decides to wreak havoc and make these barely edible monstrosities)
(Btw he’s vegetarian, fucking fight me)
Pepper jack cheese between two seaweed sheets
Uncooked ramen dipped in the seasoning packet
Ready rice with cold tofu
Spoonfuls of peanut butter
Instant grits with one slice of American cheese
Pop tart dipped in hot chocolate
Spaghetti noodles with no other ingredient than a mountain parmesan, didn’t even put salt in the water
“Technically bread” (water and flour, microwaved…he was having a really bad day)
Bread, cheese, ketchup, microwave = pizza
Cream cheese and jelly sandwich
Vegan hot dog microwaved without a plate. He picked it up from the microwave with a piece of white bread and ate it just like that. No dirty dishes
kraft mac and cheese with one single raw asparagus
Various little kiddie-themed smoothie shots
Dry cereal
Cheddar cheese wrapped in a flour tortilla
Vegan dinosaur nuggets (microwaved, tho he tried to cook it in his hot coffee once, it didn’t work)
Frozen snap peas straight from the bag, unthawed
Tomato soup with cheez-its sprinkled on top
Tried to make a meal completely out of vitamin supplements once, based entirely on the exact amount of nutrients you need in a day
A family-sized bag of generic brand corn chips
Hard boiled eggs (they were supposed to be soft-boiled) and paprika
Blueberry bagel, toasted, no butter
Cold chicken noodle soup in one of those paper cartons from the corner store (it gave him food poisoning)
Microwave grilled cheese
Cucumber rolls (cucumber slices he rolled in microwave rice)
Leftover cake washed down with a protein shake
A hunk of mozzarella cheese, microwaved
Frozen Garlic bread (it’s actually good like that, he swears)
Four 5-hour energy shots to make a 20-hour energy (his heart rate didn’t go back to normal for two days)
Fruit snacks squished between two slices of wheat bread
Tried to dry scoop protein powder once, worked about as well as the cinnamon challenge
Pistachios with the shells (it was an accident. He did not notice)
Refried refried beans (for protein)
Handfuls of mushy, room temperature blueberries
Tofu block cut up with a spam slicer and dipped in mustard

Today's lunch: a cheesy pasta bake.
But not just any pasta bake: a very BG3 one.
Spoilers for the Shadowheart origin run's epilogue to follow.
If you save Shadowheart's parents during her origin run, you get a letter from each of them. Emmeline's letter contains a recipe for a pasta bake.
[ID: two screenshots from Baldur's Gate 3, showing a letter from Emmeline Hallowleaf. It reads:
"My dear Shadowheart,
Here's the recipe I mentioned the other day. I wanted to write it down for you just in case it slipped my mind again. I can show you myself once you're home. Enjoy your party, and pass on my best to all your friends.
Love,
Your Mother
X
Feast Day Cheese Bake
For the filling:
One small onion, sliced
Half pound of mushrooms, quartered
Red pepper, diced small
Half pound of greens - spinach, peas, courgette, or whatever is in season in the garden - steamed or boiled
Quarter pound of streaky bacon, chorizo or similar. Fried and diced
Half pound of pasta
For the sauce:
Two tablespoons of butter
Two tablespoons of plain flour
One teaspoon of mild mustard from Cormyr. More if you are daring or congested
Ten fluid ounces of milk
Half pound of mature cheddar cheese, grated
A goodly fistful of breadcrumbs
Method:
Soften the onion in some oil, then add the mushrooms and pepper, and saute over a high flame. Combine with the cooked greens and meat, and set aside. Add pasta to a pot of boiling water.
Melt the butter in a saucepan, then add the flour and whisk over a high flame for one minute. Add the milk, whisking until boiling, then add the grated cheese and remove from flame.
Drain the cooked pasta and add into the cheese sauce, along with the cooked vegetables and meat if used. Combine, and pour into an oven-worthy dish (the square stoneware one with the floral pattern should do nicely). Add the breadcrumbs on top, ad well as some extra cheese if you are feeling wicked (your father often is).
Bake unil the top layer is bubbling and golden, or your loved ones are hungrily loitering about in the kitchen.
PS - if you do not salt the pasta water, you can save it to feed to the plants in your garden."
End ID.]
Today I made it with the following modifications:
I don't want anyone's nonna to slap me so I salted my pasta water.
I also undercooked the noodles - after all, they'd finish cooking in the oven.
I used some vegan sausage I had lying around as the meat. I think the one I used was a bit too dry and bland - a more flavorful and fatty, chorizo-like sausage, would have been a better option.
I used spinach as the greens, and instead of cooking them aside of the sauteed veggies, I wilted the spinach with them. If you do so, watch out! The veggies can become watery, as the spinach releases all its water. I was careful to not dump all that water in the stoneware dish when incorporating the ingredients and it all worked well on my end.
Of course I was feeling wicked and topped the dish with extra cheese :3c
Because most of the cooking has happened outside of the oven, I baked the pasta for 15 minutes at 175 degrees Celsius, plus an extra 5 minutes under the broiler. This is the part I'm less sure about - I'm not a great cook, I just follow recipes. I'd be grateful to hear your input here!
The result: a filling, cheesy, savory, veggie-loaded pasta bake. Next time I'll be more generous with the salt in the filling, though.
#i'm not kidding about the dish being filling btw#it's really fucking filling#baldur's gate 3#shadowheart#emmeline hallowleaf#hala.txt

ADHD PSA #2: The Dinner Formula
Feeding yourself is easily one of the hardest responsibility as an adult. It's even harder if you're neurodivergent - textures are ✨a lot✨, cooking takes so much energy, and actually planning meals can be almost impossible. A lot of us just end up not eating properly, because it just takes too much brain power some days.
So, let's make it simple.
dinner = a carb + a fat + a protein + a vegetable + incentive
"Okay..." You say, "but what does that mean??" Well, it can mean lots of things. I'd suggest making a personal, physical list of things you like/have. But for now, here's mine:
A carb: rice (instant packets are perfect), pasta, noodles (yep, 2 min noodles count), bread, potatoes
A fat: (that's right. A fat. That shit helps you digest all the vegetably goodness, okay? Don't go crazy, but some is necessary) butter, regular old vegetable oil, sesame oil, olive oil, cheese, cream, or whatever is already in the other ingredients (e.g. meat, nuts, avo)
A protein: chicken (pre-cooked works wonderfully), mince, tofu, egg, nuts, mushroom (gross but if you really must), salami, tuna - fuck it, even frozen chicken nuggets count
A vegetable: green is best but anything will do! Broccoli, kale (I love kale chips), spinach, red pepper, peas, beans, carrots, ANY AND ALL frozen veggies. Also - blending or finely shopping your veggies can be a lifesaver if you're not a fan of veggies
And finally, the most important bit - incentive. This is whatever will make your brain want to eat the meal. No judgement, I promise. The goal is to give your body the fuel it needs to keep chugging along - if the fuel has to be topped off with Bacon Bits and aioli, so be it. Mine are...
Incentive: seasoning like Nando's peri peri salt, chicken salt, garlic, onion, curry powder, lao gan ma. Toppings like fried onion, sesame seeds, pine nuts, cheese. Sauces like sweet chilli sauce, soy sauce, Japanese mayo, pesto, aioli. Or maybe, some random factor, like chop sticks, blue food dye (I'm a PJO fan...), a special bowl, preparing it as snack food, cutting things up into fun shapes, or buying alphabet pasta.
Finally, let's round out this post with some examples of dinners I've made recently using this formula:
Pasta + cream + chorizo + blanched and blended spinach + pesto = creamy pesto pasta
Flavoured rice pack + sesame oil + egg + broccoli + soy sauce and onion = simple fried rice
Couscous + salad sauce + Dino chicken nuggets + salad pack + the aforementioned Dino chicken nuggets = an insanely good salad (AND I took the leftovers to work)
I really hope this helped someone. I'm sending you all so much love and good vibes. This humaning shit is insanely hard and complicated, so if you're just getting through each day without adding to or subtracting from the population, you're already doing such a great job.
Be kind to yourself ❤️

on days where mental spoons are low and you don't feel like cooking...what are some simple snacks you like to reach for?
I love the analogy of mental spoons! I am having a few low mental spoon week, myself.
Meaning this question came at the prefect time!
Today, I've been snacking on a lot of grapes. Green ones are my favorite, and Pierre's had very fresh and crisp grapes; I bought three pounds of them!
I am a big fan of fruit in general. As I'm sure you know, I love pomegranates. I will also go for the occasional blood orange or a sugar bee apple.
Then, what I usually like with my fruit, are just a few cubes of cheese. A simple colby, cheddar, or mozzarella pairs nicely.
However, if you're looking for more full sized meals...
I feel that my simple guilty pleasure meals are a tad bit embarrassing and not something I would ever cook for another person; but I digress, these are very filling and simple.
First up, raviolis cooked in a flavored broth (usually chicken flavored.) If I'm feeling extra fancy, I'll add some Italian seasonings and garlic powder. I snuggle up with a blanket, with the bowl of 'soup' in my lap, and slurp it up while I read.
Also, and this one is more rare for me but also just as lazy. Buttered noodles. Noodles + butter = dinner. Similar to the very detailed recipe above: add seasonings if you want to be fancy. Bonus points if you have heavy cream and parmesan; then you can just make a tasty little sauce instead. I'll also throw in some frozen peas, broccoli, corn; really whatever vegetables I have on hand to make it "healthy."
Dinosaur chicken nuggets. Yes, specifically the dinosaur ones. I throw them in my mini oven for about 25-30 minutes until they're very crispy (nearly burnt) and enjoy with a random dipping sauce. Usually something sweet.
I also enjoy bread with spreads. Butter & jam, peanut butter & tomato, sweet potato, kaya, honey; almost anything.
Of course I will also have the occasional frozen meal, though I try to avoid them the best that I can.
What do you think? Anything you think you'd try?

I cannot for the life of me get this idea out of my head…so…
Like we all know Steve, the beautiful single mother of 7, can cook. Has learned to cook a variety of meals and treats. Knows everyone’s favorites.
Max loves roast with mashed potatoes and glazed carrots. Erica loves quiche. El loves French toast with fresh strawberries and lots of syrup. Mike loves tomato soup and grilled cheese made with soft buttered rolls. Dustin loves chicken nuggets with homemade honey mustard sauce, and Steve knows he prefers steamed broccoli even though he won’t admit it. Lucas loves eggplant Parmesan with diced olives in the marinara. And Will loves homemade chicken noodle soup, for which Steve makes fat egg noodles and his own broth.
Steve even knows the older members of The Party’s favorites. Nancy loves vegetarian curry, the spicer the better. Argyle loves chicken pot pie. Jonathan loves meatloaf with buttery peas and roasted sweet potatoes. And Robin, love of his life, loves soft scrambled egg over rice.
He knows all their favorite snacks too. Learns to make potato chips, mini pizzas, pigs-in-a-blanket, popcorn. Always has fresh fruit and veggies with a variety of homemade dips. And when Hellfires starts playing at his house, he learns all of the members favorite snacks too.
He even makes an actual 7 course meal for the end of a Hellfire campaign for Will’s birthday. It impresses everyone.
And none of them complain about the desserts. He learns to bake cookies, brownies, cinnamon rolls, cakes. Anything they ask for, he delivers.
And Eddie, he loves all of it. Will eat anything without fail. Tells Steve after every meal it was his favorite. And when pushed about what is *actually* his favorite food Eddie will say something like, “Babe you could serve me a phone book covered in gravy and I think it would be delicious if you made it.”
So Steve figures Eddie just loves food or there’s something only Wayne knows how to cook a certain way and that’s Eddie’s favorite.
But one night Steve is exhausted. It’s just Eddie and Steve alone for dinner. And Steve just doesn’t have it in him to actually cook. So he makes a box of Kraft mac and cheese. Does the bare minimum. Boils the noodles adds salt. Mixes in the butter, milk, cheese powder. Sprinkles in a tiny bit of nutmeg. Adds cracked pepper. Globs some hot sauce in it. Then serves it.
And Eddie loses his goddamn shit over it.
And Steve can’t comprehend it at first. All of the extravagant meals and this…THIS is what Eddie flips out about.
Steve ends up making a lot of Kraft mac and cheese.

hello dear Jes, I am all out of good meal ideas!! I’m always in awe of your drive to cook and the great-looking meals you create. Any good recs for yummy and relatively easy / quick recipes? thank u 🙏
hello!! yes here are some very easy, low effort low prep recipes i love. the bolded ones are the ones i find myself making most often when i am like wow i do NOT want to cook but if i must do so, i wish to make the easiest thing ever.
shakshuka (all recipes are basically the same! i make it with canned tomatoes to cut down on prep, add a sliced jalapeno to make it spicier, and top it with feta and cilantro. if you are not crazy about eggs my sister often makes it with chickpeas and no eggs!)
thai peanut noodles (you can make as-is but i often add roasted broccoli and air fryer tofu if i have time!)
ricotta pasta with roasted broccoli and chickpeas (i roast the broccoli rather than broiling it as i am afraid of broiling lol but it's very easy and delish)
creamy corn pasta (my beloved)
spaghetti with onion-"bacon", corn, and basil
roasted sweet potato tacos (roast sweet potatoes, warm black beans on the stove with spices, and make easy quick-pickled onions if i have time - then you can add avocado, sour cream, cilantro, and any other toppings you like!)
potato egg and cheese breakfast tacos (i roast or air-fry small-cubed potatoes, scramble eggs, melt cheese into the eggs, and top with the salsa of your choice!)
migas breakfast tacos
tortellini with pesto and roasted veggies
caprese toasts (toast bread of your choice, then add pesto, sliced mozzarella, sliced cherry tomatoes, basil if you have it, and balsamic glaze... my all-time fave easy/no-cook meal)
pesto pasta with frozen peas (another super easy one i make when i want to barely cook at all - you boil the frozen peas in the pasta pot for the last three minutes of the pasta's cook time. then add pesto, grated parmesan, a squeeze of lemon, and halved cherry tomatoes if you have them)
easy asparagus soup (thinly slice a leek and cut 1-2 bunches of asparagus into half inch pieces. melt 3 TBS of butter in your pot, then saute the leek plus 5-6 cloves of garlic for 8 min. add asparagus pieces and 4-6 cups of veggie stock, bring to a boil, salt and pepper, and simmer for 30 min. transfer it all to a blender and blend, then add 1/4th cup grated parmesan and the juice of half a lemon. serve with crusty croutons and sliced chives)
roasted sweet potato & figs dish (you can also make with dried dates if you can't find figs!)
easy chana masala
nectarine, arugula, and feta salad (best in the summer when it's nectarine season but delish all year round... you can also use peaches. i usually serve it on a bed of quinoa so it's more filling/more of a main dish. the basil dressing is to die for i could eat it with a spoon)
avocado & egg sandwich (you can make this on a bagel, english muffin, or bread... just toast your bread, mash avocado onto the bread & sprinkle with red pepper flakes, and then scramble or fry eggs to your liking and put on top)

You can tell people that grew up, or are still middle income, or being taken care of by middle income, parents, or grew up in a house where there’s money. But they didn’t consider themselves rich or are rich. Just saw someone post something supposedly helpful. A list of 13 things people “usually have in their kitchen“ but can’t think of what to make for a meal. Meanwhile, no, not everyone has avocados and green bread or eggs let alone, fruits and vegetables in their fridge. Do you want to talk about making a meal? How about you? Talk about the bread, the ketchup, the mustard, no eggs, pasta, and maybe a can of pasta sauce, and a leftover container of butter in the fridge. Make some pasta, put a little bit of margarine on that to loosen up the noodles, a splash of sauce, couple of cheese slices to melt within the pasta stirred up at salt and pepper a bit of garlic powder some Parsley, because those are all found at the dollar store. And you have yourself a meal. If you do have eggs, you could put those on toast and make a toasted egg sandwich. If you’re lucky enough to have peanut butter in the house call me you can make a toasted peanut butter sandwich. A lot of it depends on bread. If you have no bread, depends on pasta. Pasta is really cheap but the dollar store. There’s not much room in a freezer when you’re low income because you deal with the freezer that you have in the apartment that you’re renting. So bread has to be a weekly thing, make sure you have $10 on top of the fridge or in the cupboard put away specifically to go buy bread every week. Because a lot of times if you don’t have bread, you can’t eat. Bags from the dollar store are a good thing, makes you feel like you actually have something to drink besides water from the tap. Get a bag of sugar and use it sparingly don’t have super sweet tea. Otherwise she’ll run out fast. Milk always runs out. That’s why I always kept a can of carnation milk in the cupboard just in case. You can always water it down for cereal if you’re desperate. If it’s cold, you can’t really tell. Canned vegetables, canned fruit. They can last along time you don’t have to worry about them. Going to waste in the fridge. Ramen noodles, there’s 1 million recipes for those out now. Get all your spices at the dollar store. Eggs and tuna are always great protein but don’t spoil fast. Learn how to love drinking water from the tap. Buy a case and refill the water bottles but don’t forget to clean the lids and the rims at least once a week and if the bottles get cloudy? Throw them out and save for another case. Yes, I said save because some people don’t have a three dollars to spend on a case of water or don’t want to spend the money on non-reusable plastic. You can always pick up some water bottles from the dollar store that are reusable and fill those up in your fridge. Just don’t forget to wash them with the dishes at least once a week. Can’t exactly offer those people when your mouth has been all over them. Lol so always make sure you at least have a couple bottles put away for guests. Get to love no name brand soda. When you have money to treat yourself get namebrand. But not like a case of it or something. And a case is always cheaper in the long run than just one 2 L bottle, so you can afford it ration it out. It’s not actually that bad. Cinnamon sugar on toast, a can of tuna mixed with a Lipton sidekick creamy Parmesan with half a can of peas, mix that up well with a little salt and pepper and you’ve got tuna casserole for two people. Three people if you have a little salad on the side. or you can make garlic bread. Even if you’re using slices of bread. Toast them, then butter them, add a little bit of garlic and herb seasoning to each one with a little handful of cheese, or even just some Parmesan cheese shaken on top. Let that toast, got some real cheap and garlic bread. Pretty tasty if you’re in a pinch. And you’re not bougie like people are now. I’ve had to put ketchup in hot water with half a can of mixed vegetables to make myself some soup before. Cheap eating is a skill.

Lets Talk Budget Recipes
So, I'm a college student: that much has been pretty clear since I began this blog: I was in a culinary program before my body decided to pop a cap in me. Ever since that's happened, I've been pretty unemployed and have had to switch back to General Studies because it looks like I can't be a nurse either. So, not only am I in college, but broke and trying to get by as well as I can.
Here are two recipes that are easy to make and easy on the wallet, which I myself have approved (being the broke food connoisseur that I am).
Meal #1: Kare Risu
What you will need:
1 onion
1 potato
1 apple
1 carrot
1 cup of rice
1 tablespoon honey
1/4 cup frozen peas
2 tablespoons minced garlic
1/2 teaspoon ground ginger
1 box of Japanese Curry Roux
salt and pepper
Oil
water
Take all of the vegetables and peel and dice them. Put them in a pot with some oil and the ginger + garlic and fry until they're a bit golden brown. Cover with water and boil until the vegetables are fork tender. Take curry roux and break the cubes up, incorporating them fully into the water.
For the rice, start 2 cups of water in a pan when the veggies are browning and boil. Add 1 cup of rice, cover, and let boil for 20 minutes. Once 20 minutes is up, turn off heat and let sit for an extra 6 minutes. If you're feeling really frisky, wash your rice before adding it in.
Serve with toasted sesame seeds or a fried egg on top...or both if you want.
Meal #2: Ramen
Okay, so fair warning: this meal doesn't do well in the fridge.
If you want something fast that you don't want to eat leftovers because of, Ramen is a good idea. We're going by Famous Chef Roy Choi's doctored ramen recipe, since he's the man!
What you'll need
1 package of Maruchan Ramen Noodles, or anything similar in quality
3 tablespoons of butter
2 pieces of sliced American cheese, white
1/2 a cup of broth in matching flavour to said ramen
1 egg
(Optional) La Choi's Stir Fry mix
(Also Optional) kimchi
Follow the instructions for the ramen, but after adding the seasoning mix, add the broth and let it get hot. Melt in the butter and then the cheese, until fully incorporated. Fry the egg separately, preferably with salt and white pepper, and add the veggies or meat to the broth. Top with the egg and toasted sesame seeds if you want them.

okay we’re continuing to go groceryless for the rest or the week.. the snow will Not Have Me.
i’m nearly out of butter (rock bottom situation #1 for me personally) but i’m hoping to get brought some; i’m eating my last yogurt tomorrow for breakfast; i have cream and half and half; i’m out of sour cream but probably will get some brought from the chipotle workers… i’m dead out of produce/plants except for: a couple of onions, garlic, ginger, possibly some stray carrots or celery if i dig, frozen peas, frozen spinach, dried mushrooms, two russets (i just put them in the oven), and a handful of little yellow potatoes. i have tons of cheeses. the other real rock bottom for me is i’m clean out of tomato paste in the tube.. everything else is shelf stable and freezer diving
i finished my amazing butter beans with some of my scavenged greens chimichurri and i’ll have jacket potatoes in a bit. tomorrow for work lunch i’ll make a nice sesame oil tuna to eat with the ezekiel sesame toast i keep at work and the chimichurri.. i’m convinced this will be good (but what an avocado and cucumber would do…). dinner tomorrow is something with these potatoes or if i’m starving i bet i can scam together a makeshift pad thai with freezer shrimp and tofu. or cheesy shin black. or egg noodles and cheese (maybe that’s what i’ll make for thursday lunch). thursday dinner i’m having people over and i hope they’ll feed me. friday it’s more scrounging but i’ll buy myself my fave vending machine breakfast sandwiches as a survived the week treat. i found some holiday summer sausage and gouda for work snacks! and i have coffee at home and at work.

Fuck it. Some great ways to add veggies to your diet:
- roast those fuckers. This works for most veggies except corn kernels (you can do the whole cob though!). All you need is some oil, seasonings (do not forget salt and pepper), and whatever herbs you got. You can use frozen veggies for this with no problem. I also throw some chicken breasts and season them up the same way and let them roast on the same sheet pan. This lessens the clean up and all the juices mix and it gets tasty. Squirt some lemon juice over it when you're done and ta-da
- dice or grate them into sauces for pastas or into meatloaf! Carrots are great for this because they have a ton of moisture and can make a meatloaf super moist! You can also just toss a fuckton of spinach into spaghetti sauce and pour it over some noodles. Fast and easy.
- cheese them up. Cheese in excess ain't the best for your cholesterol, but a little will help with the veggies and can help get some dairy into your world (which you need)
- another not so healthy tip, but sautee them in some bacon fat (or duck fat if you're fancy). It's a great way to make them tasty
- go hard on the seasonings and herbs. When in doubt, use some Lowry's. A lot of people think veggies can only be steamed unseasoned messes. Just season them up nicely.
- butter. Butter makes things better. Use it.
- soup or chili! You can totally throw a bag of frozen corn kernels into a pot of chili. (I do this instead of beans because I don't fuck with the texture of beans) Or just throw random veggies in some stock with maybe shredded chicken or whatever and you have a soup.
Break out of this thought process that you need to suffer for veggies. Once you start to expand how you prepare them and how you spice them up, it gets easier to eat them. You don't need to eat a variety if you can't stomach others, just find which ones you like. My autistic ass loves brussel sprouts and broccoli, so I have those more often than others. I don't fuck with the texture of peas so I just don't eat them.
Find what works best for you and go with it. More veggies mean more vitamins and stuff in your body, and you need those.
