Recipe for Bexx Bars Bexx Bars are a variation on the traditional Nanaimo bar, a three-layer bar with a crunchy no-bake crust, creamy vanilla filling, and chocolate top. 2 cups confectioners' sugar, 5 tablespoons powdered chocolate drink mix, 1.5 teaspoons vanilla extract divided, 1/2 box whole-wheat crackers crushed, 2 cups semisweet chocolate chips, 1/2 teaspoon margarine, 3 tablespoons milk, 3 tablespoons butter softened, 1/2 cup butter, 3/4 cup unsweetened flaked coconut, 1/4 cup white sugar, 1 egg beaten

so my nana is in her late 80's (88? i think?) and i'm up taking care of her right now, and because she's old as the hills she basically eats nothing, so any time she has a craving or a request, we do it for her just to get some food in her.

today for dinner she wanted... plain tuna and cottage cheese, but can't handle a lot of food, so i gave her about 1/4 of a can of tuna and 2 tablespoons of cottage cheese and she was SO happy with it, but when i was making it i felt so complicit in elder abuse 😭 like if someone handed this to ur gramma in a home, it'd be on cbc as barbaric and i'd be arrested 😭😭😭

like this is cat food for a 21 year old dying animal. i felt so ashamed handing her this plate of slop 😭 but she said it was perfect and hit the spot

Today I'm having nanaimo bars. I went with Nestle Aero truffle nanaimo bar for these cookies. Unfortunately, during shipping it melted, so visually it's a complete mess, but I figure since the taste will be the same I can just cut out a segment.

These are somewhat soft with a smooth consistency. The flavor is, as one would expect, chocolate and coconut. Not as bad for me as just coconut flavor, but I can't say I enjoy these.

TIL that my housemate Ash had never eaten a Nanaimo bar, and in fact, had never even seen a Nanaimo bar and didn't know what one was.

me, brought up on the Canadian border: O_O me: Uh, here, let me give you some of mine, so you can at least try some. Ash: Wow, this is really good. Is that coconut?

Additionally, she is also a big fan of video games and has played the Mass Effect trilogy many more times than me and loves romancing her one true love, Kaidan Alenko ... a local boy for my bff and me, so whenever Kaidan rambles on about the view over English Bay or whatever, we're all nostalgic. But she's never seen the Pacific at all in person, much less Vancouver BC or the island or Victoria or anything, so we were talking about visiting Nanaimo as kids and she was like "oh, it's a real place?"

So we're planning to get passports so she can one day see her pixel boyfriend's stomping grounds, lol.

DOES HE HAVE THEIR PARENTS' NUMBERS MEMORIZED JUST IN CASE SOMETHING HAPPENS. DOES HE HAVE THEIR PHONE NUMBERS MEMORIZED. DOES HE TAP THEIR NUMBERS AGAINST THE BUTTONS OF THE LANDLINE TO MAKE SURE HE STILL REMEMBERS. DO THEY LOVE EACH OTHER. DOES HE MISS THEM. DO THEY MISS HIM.
