Fillet steak, butternut purée, crispy purple potato, baby onions, purple sprouting broccoli and bourbon (non-alcoholic) jous. I’m a butcher’s daughter and super fussy about meat. Being new to the UK, I’m still trying out different retailers - local and UK wide. This was good beef. Really good. I also ran out of my own beef stock and not wanting to make more just yet, I ordered @truefoodsltd beef stock. This stock is a great substitute for homemade. Everything on that plate is from @mydelifresh with the exception of the non-alcoholic bourbon, which is one of my fave drinks - @lyresspiritco American Malt. In my brekkie bowl to start the week off right (before all the baking) 😜 - kiwi and matcha smoothie bowl. Collab - Cheese knives up. Usually, I love a charcuterie that’s groaning with dips, cheese l, fruit and deli products. I find the abundance decadent and alluring. But in this case, the cheeses were so beautiful that they needed to have the literal space to stand out. And wow, do they! It felt like Christmas a few weeks ago when @mydelifresh sent me a box of gourmet goodies to try out. Amongst them were these - black cheddar, truffle cheese, a new take on blue cheese, the gorgeous bresaola, caramelised cashews for a bit of sweet and sourdough crackers to scoop up the pickle. I did it! I’m totally thrilled. Three prototypes and batches of cookies later, I present my OG cookie called The Friday Chippy. A butter, sugar cookie with a hint of malt, salt and vinegar crisps, dark chocolate chips, caramel chocolate chips and a Mars bar in the middle. Growing up in a town in South Africa where the British landed, there’s a massive amount of Brits and British food. A lot of the UK culture is so integrated that I didn’t think that things like Fish and Chips on a weekend or Sunday roast were British things because it’s just what we did too. Although, my mom always served a pot of curry alongside the roast and our fish and chips came without mushy peas or curry sauce. After living in Kuwait for 7 years, I craved home food. Don’t get me wrong, Middle Eastern food is incredible but sometimes I just wanted fish and chips on a Friday night. When we moved to the UK last year, guess what our first post-quarantine meal was? Yep, fish and chips. I like mine crispy with lots of vinegar and a bit of salt. Now Friday fish and chips is a tradition again. My youngest kid is obsessed with deep fried mars bars - a very Scottish takeaway. So, when my @christinatosi @milkbarstore class said to choose time as a creative starting point, come up with flavour story and develop an original cookie, I knew it had to be a Friday Chippy cookie. After prototyping, refining the recipe, all under the online guidance of the cookie maestro herself, I believe that I finally have it. The Friday Chippy - a light cookie with a hint of malt (for the beer batter), salt and vinegar crisps / chips (for the fish and chips), @callebautchocolate gold caramel chips and dark chocolate chips for the Mars bar), and a chunk of Mars bar in the middle (because we can’t have enough Mars bar) and a teeny sprinkle of @cornishsea_salt sea salt on top for extra zing (and because a pinch of great salt makes everything even better). Herby, butter-basted roast chicken with apple, shallots and sourdough stuffing, chicken pan gravy, carrot purée, roast potatoes and honey roasted parsnips. I love a roast chicken. It’s simple and quick to make for a weekend and midday meal and you can dress it up or down with sides depending on how much time you have or what you’re in the mood for. Plus leftovers can go into soups, pies, salads or sandwiches. In my humble opinion, the best way to roast a chicken, is a quick and simple. I prepared this one by rubbing a mixture of herby butter all over it and under the skin. I also added a dash of the basil oil as an experiment (and it worked). I combined the same herby butter with chunks of apple and sourdough and sweated down shallots then stuffed it into the cavity of the chicken. I sat the chicken on top of shallots and apples and placed it in a pre-heated, moderate oven. I basted it thrice whilst in the oven. Between the basting and butter, the skin was crispy and a beautiful, deep golden colour. I served it with the stuffing, carrot purée, traditional goose fat roasted potatoes and baby parsnips roasted and tossed in honey butter and lots and lots of gravy. Swipe for gravy pics. Crispy on the outside, soft and eggy on the inside - savoury French toast with creamy, rich black cheddar, burst tomatoes and packed full of flavour, spicy chilli jam. My hubby works across time zones and it’s his first full weekend off in months so brunch was a forgone conclusion. But I was feeling too lazy and half asleep this morning to go big on brekkie. I had a massive sourdough bread loaf, gorgeous eggs and his fave meal is savoury French toast (aka egg fried bread) but it looked boring. So, I looked through the hamper of gorgeous goodies @mydelifresh sent me to poshed up my plate. I am over the moon in love with this dreamy, creamy black cheddar from J.J. Sandham, a small family cheese making business. It curled like a dream and had these speckles running through it that reminded me of salami. The “Reaper’s Revenge” chilli jam from @thechillijamman gave the perfect amount of acid to cut through the rich toast and cheese and... it gave the right kick to wake me up! The legendary New York City Momufuku Milk Bar’s cornflake, choc chip, marshmallow cookie has landed on my kitchen counter - right here in Edinburgh, Scotland. I am dancing in my kitchen with uninhibited joy and totally annoying my kids! 😁 💃 I’ve begun a baking learning journey with the incredible cookie queen @christinatosi and @learnmonthly 🍪 For one month, I’ve committed to totally immersing myself in the creative and scientific world of cookies, cakes and American style pies. (Tough, right? 😜) It began yesterday with watching @christinatosi cast her kitchen magic and create this gorgeous, perfect cookie. I got to recreate it today and it’s absolute bliss. I will never look at cornflakes or cookies in the same way ever again. Next up... my own flavour story and creating my very own cookie. Rhubarb and Blood Orange 🍊 and Cardamom Frangipane Tart. 🥮 I’ve been wanting to try my hand at this rhubarb pattern ever since I saw it on the incredibly talented @thida.bevington ‘s page. Then I saw the amazing @darciebakes ‘s rhubarb tarts and it pushed me to order some more Yorkshire forced rhubarb from @mydelifresh I was really unhappy with my first attempt at a rhubarb and custard tart - it tasted great but the rhubarb didn’t hold its shape. So, the lovely @darciebakes gave me some great advice on how to handle this ‘new to me’ ingredient. I am really happy with this result. Oh my word! That colour!!! I’m so in love.
