Oh yeah baby it’s all coming together….

Creamy spicy vegan ramen:

Partially a jinya copycat with this recipe as a base: https://homecookedroots.com/spicy-creamy-instant-pot-ramen/

But MY version goes a lil something like:

Broth:

1 whole onion

3 or more garlic cloves

Chop fine and add to a pot with oil, stir until translucent over like medium heat

Deglaze with a cup of veggie broth homemade or store bought is fine

Add 2 tablespoons spoons of miso

1/4 of tahini

2 teaspoons maple syrup or to taste

Add 3 soaked and chopped dried shiitake mushrooms with their liquid

3 kombu knots (dried kelp)

Add two to four more cups of veggie broth

Let that simmer for like an hour and then hit it with a splash of lime juice and soy sauce plus a little extra maple syrup if it needs it

Get a pack or two of ramen noods, I like to get the 10 pack of plain noodles from my local Asian mart, boil in plain water first and rinse with cold water when done

Strain broth and add 2 cups unsweetened soy milk or a full can of coconut milk

Ladle broth in over the noodles and add the following toppings:

Chili oil, silken tofu, blanched spinach or bokchoy, garlic oil, sweet soy sauce, fried onions, green onion

I have a friendsgiving Thursday and dinner w my partner's mom Tuesday, so I'm preparing our own little autumn meal for the rest of the week entirely from food bank & garden staples and working on slowly but steadily coming back to life

-10lb pork shoulder half rubbed w homemade BBQ sauce (tomatoes and herbs from the garden w quince jam I made as a base)

-10lb pork shoulder half rubbed w an oil & apple cider base mixture and homemade jerk seasoning

-Chicken quarters marinated in a soy sauce/teriyaki/hot pepper mixture

All ready for my first attempt at using a free smoker I've had for years now~ plus:

-Mashed potatoes made from 1993 shelf stable potato pearls (lmao) mixed w cream cheese butter and whole cream, plus the drippings from air frying the other 2 chicken quarters

-Pumpkin soup made by air fry baking a pumpkin peppers dill and garlic from the garden, blending, and adding whole cream

I can apparently proof and bake bread w my new kitchen appliance too so I'm considering trying my hand at biscuits or something for the first time too

i just burnt the HECK out of my soup. And not, oh this is gonna taste a little burnt, but it's still edible, but- this is going out to the stray cats as soon as it's cool enough bc all it tastes like is BURNT.

It was a 'going to the store tomorrow, i better use up the rest of these potatoes and this handful of slightly pruny veggies and this substandard hamburger i am never buying again' kind of soup.
