🌸- I am in 10th rn, and I'm gonna have science ka exam on 2nd march!? IDK if its just me of do the 4 days gap b/w exams is making me too distracted like- ITNI CHUTTI KYU!? I'm not even scared atp, its so boring! also yess; 1. Todays' TMI ? => I went on a cafe date with some classmates of mine, we had a lot of fun, shittalking about the boards and all, I tried mocha latte (honestly WORTH IT! like its soo good!!!) and had a strawberry croissant (not worth it :( tasted like cream roll but with strawberry filling) and strawberry tart (LOVED IT!! so refreshing, and light, somewhat like a cheesecake!). 2. Aaloo parantha or mooli parantha? => Aaloo parantha forever because I HATE mooli like I literally despise it! I feel like puking whenever I have it, so I just stopped eating it altogether. Also mooli makes your breath smell bad and farts smell leathal, I would willingly want THAT! 3. Chai or coffee (or any other drink of choice)? =>i I used to drink chai allot but then i got overwhelmed and now I don't like it unless I'm sick, because bimari me sirf aadrak wali chai hi baacha ti h! Steps to make aloo parathas:
For Dough:mix all the dry ingredients in a bowl.add water to form soft dough(so that it does not stick when formed into balls).
form medium sized balls out of the dough & set aside.
For the stuffing:mash the potatoes in a bowl..
add all other ingredients with the potatoes.form balls(slightly smaller than the dough balls) and set aside.
Making parathas:Roll the dough ball into a 2inch circle on a floured surface with a rolling pin..
now cover the potato ball with the dough circle completely covering it,effectively stuffing the dough with the potatoes.
flour the stuffed ball & roll it into a thin circle.it may tear a little,wen this happens apply a little flour & roll gently on the edges.
heat a skillet.cook the rolled paratha on the heated skillet on medium high heat.when it colors on the bottom flip it and apply a little oil on the upper surface,repeat this process on the other surface too,so that it is golden & cooked on both sides.
repeat the above steps for all the remaining balls..
serve the parathas with butter on it(as much as you like or as little as you like) and with ketchup or sour cream etcetera!!!!!!.

The open hand symbol more than denotes the character of this place. Created in 1966 as a Union territory, Usha and I had the chance to be guests here six years back. Ravinder Singh my old friend and colleague, picked us up from airport and I was answering his questions looking around. Is this place in India? Yes, we were in Chandigarh.
This city was designed by Swiss-French architect Le Corbusier modifying the plans of Polish and American architects. In India we have good architects and planners. Each sector of Chandigarh is spread over in geometrical squares and rectangular forms. It was a pleasure to drive, walk and shop.
After a sumptuous break fast of "mooli paranthas, aam ka achar, ghai ki assal ghee and masala chai" Ravinder and Bubbli took us to Nek Chand's Rock Garden covering 40 acres. We were among more than 5000 people visiting that day. Nek Chand Saini collected articles from waste as the city was being built to build his dream. He started his work in 1957. Nek's work, illegal though, was in a forest land, done during his spare time. He hid his work for 18 years but was found by authorities in 1975. From his collection of scrap ceramic and other materials the garden he built was to be demolished. Today it still remains as his dream and vision of creating the history of Sukrani kingdom.
It was the dream realisation of one single government employee to build from discarded materials retrieved and recreated all alone. The researched book by Soumyen Bandhopadhyay "The collection, the ruin and the theatre" tells the story how Nek created a theatre from ruins.
The human habit to curse waste is finding new forms. Nek showcased one CAN, and it's possible. Rock Garden's daily income from tourists may amount to over ₹ 3 Lakhs.
While in conversation with Ravinder's mother, she had told me to look at the garden where they were growing flowers and vegetables at the rear side. That's the spirit of creation. At times we pause to think "is it possible?" when it comes to our own plans. His mother passed away May, this year at the age of 92.

Makkai Methi Mooli Parantha recipe | Winter special Cornmeal flatbread recipe, with Diakon Radish and fresh Fenugreek Leaves
One of my favourite, nutritious flatbread that we love to have it with plain yogurt and pickle/chutney.
Makkai Methi Mooli Ka Parantha is a variation of Makkai Ki Roti with added goodness of Daikon Radish and fresh Fenugreek Leaves. It is specially consumed for breakfast along with plain yogurt or Lassi and pickles like mixed vegetable pickle, mango pickle. This protein rich flatbread is a wholesome meal in itself. You can always serve it with  any Saag, Aloo Matar or even with Dal Makhani along with it.
Winter Special Makkai Ka Atta, Mooli and Methi 
In India especially in Northern parts especially Punjab/Haryana/U.P/Delhi, Makkai(read Makkai Ka Atta) or Cornmeal is used to make the famous flatbread Makkai Ki Roti. It is relished with special winter green curry or Saag(Sarson ka Saag).
Radish or Diakon Radish is a very popular winter vegetable used in South Asian countries like India, Korea and Japan. Mooli Ke Paranthe is a famous flatbread made with grated Radish, stuffed in flatbread, just like the famous Aloo Parantha or Paneer Ke Paranthe(Palak Paneer Paneer Paranatha). It is also consumed as salad with squeezed lemon juice and baclk salt or as stir-fry along with radish leaves(Mooli Ke Patton ki Subzi/Bhaji).
Fenugreek Leaves are Fresh Methi leaves and available during winters. Rich in iron and other minerals these are used in making paratha(methi parantha),poori(Bajra Methi Poori) side dishes like Gajar Mooli Methi ki Subzi(Carrot, Potato and Fenugreek stir-fry) or Aloo Methi. Snacks like Mathri(Indian Crackers), Makki Methi ka Dabera, Methi ke Pakore, and many more.
Points to keep in mind to roll prefect paranthas
Makkai or Cornmeal is a gluten-free flour. So, it is little difficult to knead  and then roll the dough like whole wheat  or all purpose flour. If you are not perfect in kneading Makkai ka atta/cornmeal, then you can add 1/2 cup of atta/whole wheat flour to it. It makes the dough manageable. You can try rolling the dough between parchment paper or a zip-lock bag.
Grated radish and finely chopped fenugreek, leave water when mixed with salt and spices.  So, another thing  to keep in mind is to squeeze the water properly from grated radish.
And,make dough when you are ready to roll and cook parantha.
If you are staying out of India, use the cornmeal available at Indian stores, Diakon radish is availabe at Indian grocerry stores and Whole Foods.

Method
Mix both the flours with all the ingredients and make dough. As radish and fenugreek leave water, do not add water initially. First mix everything and then add water if required.
Divide dough into equal portions and roll out carefully into circular disc. Refer pics below.
Heat a griddle and shallow fry parantha from both sides in ghee or oil. Use any flavorless plant based oil like Olive oil, rice bran oil.
