Food Diary: week 1 day 4
Breakfast: a small oat milk cappuccino w/ a slice of choc plumcake
Lunch: 70gr of pesto linguini and a lot of veggies (cauliflower and broccoli)
Dinner: fried squids and a lot of salad (greens, apple and pistachios, it was *chef kiss*😍👌🏻)
Assuming I stayed in the 1500 cal limit, even if I had dinner at my boyfriend's house and eat so much, I'm quite happy.

Make the most of autumn’s bounty and tuck into this plum upside-down cake as soon as you can. It makes an impressive dessert with its beautiful purple colour. The cake is at its best served warm, but is almost as delicious eaten cold for elevenses or afternoon tea. Cream or custard are optional.
CT has brought home two large bags of plums recently. The first thing I did was to make some gorgeous plum and lime jam with some of them. I really ought to post the recipe. It’s a corker and ever so easy too. We’ve been devouring quite a few of the plums raw and with the remainder, I’ve baked three of these plum upside-down cakes.
Plum Upside-Down Cake
This plum upside-down cake is good on so many levels. Apart from stoning the plums, it’s easy to make, its deep colour gives it a sumptuous air and it’s downright delicious. I’ve made it five times already this season. The first two cakes I made with large plums which I bought and the last three with CT’s windfall.
We’ve had various friends and family staying over the last few weeks. This cake is such a lovely bake to welcome them. I’ve tried to time it so that they arrive soon after it comes out of the oven. The house smells delightfully fragrant, the cake looks enticing and they get to try a slice whilst it’s still warm. I also made one for cake club last week. I don’t manage to get to this event very often, but it’s always fun when I do.

So, this plum cake is made in two stages. The first is the upside-down bit, where you place the plums at the bottom of the pan. Along with these go some melted butter, sugar and rose syrup. Then you get on with the normal cake method of creaming the butter and sugar together and so on. The cake rises really well, so do ensure you use a deep sided tin for baking it in. It also sinks quite a bit when you take it out of the oven. Don’t worry, this is absolutely fine. The sugar from the upside-down bit bubbles a lot in the cooking, but calms down as it cools.
So far, my plum upside-down cake has been really popular with everyone that’s tried it. Hoorah! The upside-down bit gives the cake a wonderful sticky quality. I’ve made a slightly smaller size than the one given in the recipe. I also made one without the almonds. All of them were irresistible, especially when eaten warm from the oven. But I think the ground almonds give it a slightly intriguing full-bodied, nutty texture.
Hints, Tips & Alternatives
If you don’t fancy rose as a flavouring, orange works very well. Just add the finely grated zest to the cake batter and the juice to the upside-down bit. Rose syrup is very easy to make and it really does enhance the flavour of the plums.
Worried about nut allergies? Just leave the almonds out. It will give a slightly different texture, but will still be delicious. There’s no need to replace them with flour. I’ve made it both ways.
Looking for a smaller cake? I’ve made the cake in two sizes. Both work equally well. For the smaller version, use 75g butter and sugar for the cake mix with 2 medium sized eggs, 150g flour, 100 ml kefir or buttermilk and the same amount of ground almonds. You could use less of the upside-down ingredients and bake it in a 20 cm (8″) cake tin, but I used the same amount as in the recipe below for this bit. Although I did use the smaller cake tin.

Plum Upside-Down Cake – The Recipe
Plum Upside-Down Cake
Apart from stoning the plums, it’s easy to make, its deep colour gives it a sumptuous air and it’s downright delicious. Perfect for wowing your dinner-party guests or for a family afternoon tea.
Upside-Down bit
40 g unsalted butter
75 g golden granulated sugar
2 tbsp rose syrup
400 g dark red plums – halved and stones removed ((21 small plums or 8 large ones))
Cake Batter
100 g unsalted butter – softened
100 g golden caster sugar
2 large eggs
25 g ground almonds ((I ground my own whole almonds))
200 g wholemeal spelt flour
1 tsp baking powder
pinch of bicarbonate of soda
125 ml kefir, buttermilk or sour milk
Melt the butter in a small pan over low heat.
Pour into a 23cm (9") round silicone mould or non-stick cake tin – make sure it’s not one with a loose bottom.
Scatter in the sugar over then drizzle the rose syrup over the top so that it’s evenly distributed.
Lay the plums on top skin-side-down to cover the bottom of the tin.
Cream the butter and sugar together until light and fluffy.
Beat in the eggs, one by one, followed by the ground almonds.
Sieve in the flour, baking powder and bicarb, then stir until just combined.
Finally stir in the kefir, buttermilk or sour milk.
Spoon the batter over the top of the plums. Level the top with the back of a spoon and bake in the middle of the oven for about 40 minutes. The top should be well risen, firm and golden, but try not to over bake.
Allow to cool in the tin for a few minutes, then carefully turn out onto a plate.
Delicious eaten warm with custard, but almost as good cold. Will keep for a couple of days in sealed container.

INGREDIENTI:
230g farina 00′
40g fecola di patate
20g cacao amaro
2 arance
3 uova
120g burro
150g zucchero
100ml latte
50g gocce di cioccolato fondente
1 bustina lievito (16g)
estratto di vaniglia
un pizzico sale
INGREDIENTS:
230g white flour
40g potato starch
20g cocoa powder
2 oranges
2 eggs
120g butter
150g sugar
100ml milk
50g chocolate chips
16g baking powder
vanilla extract
a pinch of salt
PROCEDIMENTO – INSTRUCTIONS:
Uniamo in una ciotola il burro ammorbidito e tagliato a tocchetti, lo zucchero, il sale, qualche goccia di estratto di vaniglia e mescoliamo il tutto con le fruste elettriche. – Let’s start pouring sugar, salt, some drops of vanilla extract and soften butter in a bowl and mix all with an electric beater.
Una volta ottenuto un composto uniforme, uniamo anche le uova, una alla volta. Attendiamo che la precedente sia completamente inglobata nel composto, prima di aggiungere la successiva. – Once you get a uniform mixture add the eggs, one at a time. Wait for the fist to be incorporated in the mixture, before to add the second one.
Grattugiamo ora la scorza delle arance e uniamo anch’esse al composto. Uniamo anche il latte e mescoliamo il tutto. – Grate the skin of the oranges and add it to the mixture, together with the milk; then stir all.
Setacciamo ora la farina, il lievito e metà dose di fecola e uniamo il tutto al composto. Mescoliamo piano con una spatola fino a far amalgamare bene il tutto. – Now sift flour, baking powder and half dose of starch and add to the mixture; then gently stir all with a spatula.
Dividiamo ora il composto in due parti uguali e aggiungiamo rispettivamente il cacao setacciato in una ciotola e l’altra metà dose di fecola setacciata nell’altra. Mescoliamo delicatamente con la spatola fino a far amalgamare il tutto. Possiamo infine unire anche le gocce di cioccolato ad entrambi gli impasti, metà dose ciascuno. – Divide the mixture in two parts and add respectively sifted cocoa powder in a bowl and the other half of sifted starch in the other one; gently stir all with a spatula. Then add chocolate chips in both bowl, half dose per each and mix all.
Prepariamo ora una teglia da plumcake rivestita con carta forno e versiamo i due impasti all’interno. Per ottenere un effetto marmorizzato versiamo circa 1 cucchiaio di un impasto al centro, poi al centro di questo 1 cucchiaio dell’altro impasto e proseguiamo così fino ad esaurire entrambi. Dato che i due composti sono abbastanza compatti e la teglia è lunga e rettangolare potete creare 2/3 “cerchi di impasto” all’interno della stessa. – Cover a plumcake tray with parchment paper and pour the two mixtures in it. To get a marble effect pour 1 tbsp of a mixture in the middle of the tray, then pour 1 tbsp of the second mixture in the middle of the first one, continue in this way till the end. As the mixtures are quite thick and the tray is long and rectangular you can create 2/3 “circles of mixture” inside the tray itself, in order to get a better marble effect.
Completiamo con qualche goccia di cioccolato sulla superficie e cuociamo in forno già caldo a 180° per circa 35/40 min. – Complete with some chocolate chips on the surface of the plumcake and bake in the oven at 180° for about 35/4o min.

Banana bread con noci
Seconda proposta di dolce light, avevo delle banane supermature e mi sono cimentata per la prima volta a fare questa ricetta americana italianizzata
220g di farina integrale
2 banane mature
60 g di zucchero di canna
2 uova
6 cucchiai di olio di semi di arachidi
1 vasetto di yogurt magro da 150g
1 bustina di lievito in polvere
8 gherigli di noci
Polvere di cannella (opzionale)
Ho sbucciato le banane e le ho schiacciate con la forchetta riducendole a purea. Nella planetaria ho fatto montare le uova con lo zucchero, poi ho aggiunto l’olio e le banane. A questo punto ho aggiunto la farina setacciata e il lievito sciolto con poco latte o acqua. Infine le noci spezzettate e una spolverata di cannella.
Ho messo l’impasto in uno stampo da plumcake precedentemente imburrato e infarinato e poi in forno a 180 gradi per 45 minuti.

Second proposal of a light cake, I had some super ripe bananas and for the first time I tried to make this Italianized American recipe
220g of whole wheat flour
2 ripe bananas
60 g of cane sugar
2 eggs
6 tablespoons of peanut oil
1 jar of low-fat 150g yogurt
1 sachet of baking powder
8 walnut kernels
Cinnamon powder (optional)
I peeled the bananas and crushed them with a fork reducing them to purée. In the planetary mixer I had the eggs beat with sugar, then I added oil and bananas. At this point I added the sifted flour and the dissolved yeast with a little milk or water. Finally, the chopped walnuts and a sprinkling of cinnamon.
I put the dough in a plumcake mold previously buttered and floured and then in the oven at 180 degrees for 45 minutes.

Pour the mixture into a plum cake mold and bake at 180 degrees for about 40 minutes. 4. Let the plumcake cool completely and then cut it vertically. 5. Get 4 slices and fill them with the hazelnut cream. 6. Decorate with icing sugar and serve.
