Got this Sunday #foodiove from @lutongsimpol by Chef #myketatungsarthou . Forgive for the not so good food shoot. But believe me when I say that it is easy to make and it taste good. This is my version of Escabeche, making it FISH X TOKWA ESCABECHE -Place cut 1kg Tilapia or Cream Dory fillet and add 4tbsp fish sauce, 1tsp black pepper, 1tsp italian seasoning, 1tsp chili flakes, 4 tbsp flour 2 tbsp cornstarch, 1/2 cup cold water and mix together like a batter -Cut 4-5 tokwa into cube and place in 1pc eggs and mix together like a batter -Fry the creamy dory batter until golden brown then fry the tokwa batter after -In a separate pan, sauté 1pc carrot strips and 1pc strips of green and red bell peppers, 1pc onion sliced and 6 cloves minced garlic in 50g #Lurpak butter -Add 1/2 cup vinegar, 1/2 cup soy sauce, 2 tsp brown sugar, 1 pack 90g #MamaSita oyster sauce, 1cup #MangTomas all-around-sarsa, 1 cup water -Adjust salt and pepper to taste the. How to get our Bagnet version ? Procedures : 1. Wash pork belly, cut into large chunks and place in a large pot.� Add enough water to cover the pork belly. ( yung sakto lang daw bes masama ang sobra 😂) 2. Add in salt, peppercorns, garlic, bay leaves. Cover and bring to a boil, simmer for 30-45 minutes or until tender. Remove all scum that rises. ( scum that rises lamobayon ? Kase akoo hindi 😂 tanggalin mo daw yung mga mantika galing sa pork) 3. Remove from the pot and place in a colander and let sit for a while so the liquid will drain. Prick the skin many times using the tines of a fork then Dry with paper towels if necessary. Keep refrigerated for several hours. ( yung samin hindi na naref kulang sa time pero much better daw kung ireref sya) 4. In a large kawali heat enough cooking oil and deep fry pork belly at low heat for 30-45 minutes. ( dont forget na takluban kung ayaw mong dumugin ng tumatalsik na mantika 😂) 5. Remove pork belly from the kawali and drain oil in a colander or paper towels, allow to cool completely. 6. Reheat the same oil over moderate heat deep fry the pork belly once more for 10-15 minutes or until golden brown, crisp and blisters appear on the skin. Drain on paper towels. ( ayern drain mo muna bes bago lafang para iwas mamantika sa bibig 😂 7. Chop bagnet to serving pieces and serve immediately with a selection of sukang Iloko or tomatoes and onions with bagoong isda dip ( so yang samin hindi na nachop mas malaki mas masarap 😂 at Mang Tomas Siga ang gamit namern para the bes @MangTomas libre mo koo isang box inindorse kita 😁😁 At ang ending ? Tadaaaaahh ! Bagnet Ala Group 2 Culinary Arts Students of BatState U ARASOF yan bessy ginagalingan at nagaaral mabuti mag luto 😉 P.S : Magastos sya but worth it SWEAR ✋
