Recipe Alert - MAGIC CAKE : DAIRY & EGG-FREE Made with just 5 simple pantry ingredients, (add cacao powder for a chocolate cake as I did 😋) INGREDIENTS: * 1.5 cups Cold Water * 1/3 cup Coconut Oil, melted (Rice Bran Oil also works) * 1 teaspoon Vanilla Essence * 2 ¾ cups Self Raising Flour, unbleached * 1 cup Sweetener (Erythritol or Raw or Coconut Sugar work equally well) * 4 tablespoons Cacao Powder - for chocolate cake (Omit if making plain vanilla and increase flour by 2 tablespoons) INSTRUCTIONS: * Preheat the oven to 180° Celsius. * Prepare a 7 inch cake pan by spraying with nonstick spray and/ or covering with baking paper. * In a large bowl whisk the flour and sweetener together. * Mix in the cacao powder if using and mix well. * Make a well in the middle of the flour mix * Add in the water, vanilla essence and coconut oil into the well. * Whisk rapidly until well mixed and no lumps remain.
 * Bake at 170° Celsius for 35 - 40 minutes, or until a thin skewer inserted into the middle of the cake comes out clean. * Cool the cake in the pan for 5 - 10 minutes and invert on a cooling rack. * Once cool can be covered with icing, chocolate ganache or decorated with nuts. Keeps well for 3 - 4 days at room temperature, best stored in the fridge if keeping for longer.
