Mix 'n' Match Meal Prep
I've been trying a different "mix and match" method of prepping food for the week. You cook a few components like proteins, vegetables, and sauces, and then reheat and rearrange them to create different meals. Here's my method, inspired by the Downshiftology approach:
Pick 2-3 proteins, a few vegetables, and at least one sauce to prepare. I also like to bake a snack.
On Sunday, do your cooking.
During the week, eat one protein, some vegetables, and some sauce with a starch. Change up the starches and proteins to create variety.
Meal plans so far:
Week 1
Cooked: Greek sheet pan chicken with roasted potatoes and vegetables (sheet pans are the ultimate meal prep hack), salmon bites, crispy air fryer chickpeas, tzatziki sauce, chocolate chip cookies.
Dinners: chicken and potatoes, salmon and fries, chicken and pasta, salmon rice bowls, chicken and rice.
Lunch: chickpeas with salad and focaccia.
Week 2
Cooked: Instant pot ground turkey, sheet pan vegetables, cubed sweet potatoes, morning glory muffins.
Dinners: Ground turkey and pasta, ground turkey and mashed potatoes, ground turkey and nachos, tinned fish and pasta, burgers from the freezer.
Lunch: Black bean and sweet potato rice bowls and burritos.
This week I made balsamic chicken (pictured) and vegetables, plus marinated tofu to air fry another day, and blueberry muffins. I really appreciate how flexible this approach is. A protein / pantry staple like black beans doesn't need cooking -- just opening a can. I can also switch to a store-bought sauce when I have less time. There's less waste, and it's a relief not to worry about what's for dinner.

So I got tired of getting the same old answer for the age-old question: what do you eat when you have Diarrhea? BART Bananas, Applesauce, Rice, and Toast.
I decided, as I was looking for something else, there must be SOMETHING I could eat beside the BART stuff. Normally, I like those four foods but hate to eat anything when forced. I thought that I should change it up. So, I came up with a new acronym.
While writing, the poem just came out. I forgot that yesterday was National Poetry Day. This counts towards that, I guess. I generally don't do humor poems. Maybe I should try? Bonuses at Bottom!

Crackers-
In the "original" acronym they had T for Toast. What is a cracker but Toast? A cracker is a flat, dry baked biscuit typically made with flour. Hydrate/Liquids-
Try to avoid sodas and caffeine drinks like coffee and tea because they make it worse. Fruit juice, sports drinks, water. Flat clear soda is okay, ginger ale, or ronic water.
Aubergine-
Eggplant, aubergine, brinjal, or baigan is a plant species in the nightshade family Solanaceae. Solanum melongena is grown worldwide for its edible fruit. Most commonly purple, the spongy, absorbent fruit is used in several cuisines. Typically used as a vegetable in cooking, it is a berry by botanical definition.
Ube -
purple Yam (Some say it tastes like Irish Potatoes, soft and sweet)

Ulluco-
Like a sweet potato(From South America)Ulluco tubers can be used raw or cooked and have an earthy, subtly nutty, and musky flavor often likened to the taste of beetroot combined with potatoes. The leaves are also edible and have a mild, vegetal, and green flavoring.
Pumpkin-
large round vegetable with thick orange skin. The seeds can be dried and eaten and the soft part inside can be cooked as a vegetable or in sweet pies.
Arborio Rice-
Arborio rice is an Italian short-grain rice. It is named after the town of Arborio, in the Po Valley, which is situated in the region of Piedmont in Italy.When cooked, the rounded grains are firm, creamy and chewy compared to other varieties of rice, due to their higher amylopectin starch content. Other rice works too.
Soup-
liquid dish, typically made by boiling meat, fish, or vegetables, etc., in stock or water.
Stick to plainers soups, chicken or vegetable, maybe some rice.

Batch Cook – Storage Information – Teriyaki Sauce
Fridge: The teriyaki sauce can be made in advance and stored in the fridge for up to 5 days. Cool before storing.
Reheat: Reheat in the microwave or on the hob.
Freezer: Cool the teriyaki sauce and then pour into ice cube tray. Once frozen pop each cube out and place them into a freezer bag. You have easy pre prepped sauce at any time!! 
Can you store cooked Salmon? 
The answer, is yes, you can absolutely freeze cooked salmon. However, the texture and flavour of the fish will suffer from its time in the freezer. 2 Boneless Salmon Fillets (Approx. 130g each)
Sauce Ingredients
1 tbsp Dark Soy Sauce
1 tbsp Light Soy Sauce
1 tbsp Lemon Juice
2 Garlic Cloves (Crushed)
¼ tsp Ginger
1 tsp Chilli Powder (Reduce for less spicy)
½ tsp Marmite
Pinch Black Pepper
Pinch Salt
1 tbsp Granulated Sweetener
60ml Water
Low calorie cooking spray
Prep and Sauce
Spritz a pan over a medium heat and cook the salmon for 2 minutes on each side. Set aside the salmon until later.
Add the 60ml of water into a pan. Add all of the sauce ingredients to the pan. Bring to a boil until it starts to reduce down and thicken.
Set Aside and allow to cool slightly.
Cooking the salmon – 2 Options
Option 1 (Oven Baked) Preheat your oven to 200°C/fan 180°C/gas 6. Place the salmon onto a baking tray and cover with half of the glaze/sauce. Place info the oven for 10 – 15 minutes or until cooked.
Option 2 (Air Fryer)Place the salmon into the air fryer and cover with half of the glaze/sauce.Cook on air fry mode 170°C for 8 – 10 minutes or until cooked.

Easy Meals I Make at Home in Under 30 Minutes
Last week a reader asked if I would put together another post about meals I make at home in under 30 minutes. So I looked back at when I wrote my last one and it was all the way back in July. Crazy how fast time goes by. So today I’m bringing it back with 12 meals I recently made at home that will hopefully give you some inspiration for easy meals for yourself and your family. Remember, this meals aren’t pretty, whatsoever. And some aren’t strict paleo. If you’re new here, I don’t eat strict paleo. I eat white rice and some gluten free items. If you don’t want that in your own diet, don’t eat it. Simple as that. And if you need even more inspiration, you can look back at my previous easy meals posts here, here and here!
Just a recap (I shared this in my previous posts) – with a little planning, multitasking and with the help of some special ingredients, there’s really NO EXCUSE to not eat a healthy meal on the table in no time flat. It’s really freaking easy, I promise you that. Stop making excuses for why you can’t get a healthy meal on the table certain nights. It just means you need to plan ahead. Maybe you even need to write out your meals to make sure nothing goes to waste and you’re sticking with your goals.
You’ll see many repeats in my own diet because I stick with foods that make me feel my best and that cook up quickly. Plus, I use whatever ingredients I have on hand in my freezer. So let’s get to it. Here’s a little breakdown of what I always have at home and/or purchase week to week:
ButcherBox – Every month I get my monthly supply of grass-fed, grass-finished, antibiotic and hormone-free, pasture-raised beef, chicken and pork. This way I always have meat on hand that I can pull out of the freezer the day beforehand to make for meals the next day. And since it’s delivered to my doorstep, I don’t have to think about it, which is the best part. In every box, I always get burgers and breakfast sausage, then whatever other meat is available that month!
Thrive Market – I try to get a Thrive Market box delivered to my doorstep every month or so. I love stocking up on coconut wraps, coconut aminos, Siete Foods sea salt grain free tortilla chips, and organic extra virgin olive oil. Be sure to follow me on instagram and my instagram stories/highlights because every time I get an order, I share those finds and goodies on my social media! Thrive also offer seafood now and it’s delicious so I will sometimes grab that from them.
Whole Foods or Natural Grocers or Trader Joe’s –
Freezer section – I always like to purchase cauliflower rice, sliced bell peppers, asparagus, cauliflower and kale so if I’m in a pinch and have no fresh produce around, I can quickly defrost any of these vegetable and whip up a meal quickly. I also recently picked up Trader Joe’s cauliflower gnocchi and love having that on hand.
Produce section – I almost always purchase arugula, kale, carrots, cherry tomatoes, ripe plantains, yukon gold potatoes, sweet baby peppers, butter lettuce, honey crisp apples, cilantro, green onions and whatever other vegetable looks good.
Pre-cut veggies – At Whole Foods (and many other grocery stores nowadays), they have pre-cut vegetables that have made a huge difference when it comes to how long it takes to make a meal. It costs a little more, but to me it’s worth it because it keeps me eating healthy. I’ll always buy pre-cut butternut squash fries, brussels sprouts, kale, beets (I buy the Love Beets brand), zucchini noodles, beet noodles, and carrot fries.
Butcher section – Since I get all my meat from ButcherBox, I usually only purchase wild-caught fish and seafood at Whole Foods. We try to eat salmon, scallops, sea bass and whatever other fish looks good. And we’ve been eating more fish and seafood recently because my husband is on a strict diet where he can’t have chicken or pork, which is why most of my dinners are beef or fish/seafood. I love getting fish/seafood for the nights that we have limited time since it cooks up so quickly.
Pantry Products – I keep these items on hand because they make prep incredibly easy and quick whenever I’m in a pinch!

Now on to the meals we go!
For this breakfast, I preheated to oven to 400 degrees to cook up a Birch Benders Paleo Waffle for 10 minutes. While the oven heated up, I cooked ButcherBox breakfast sausage with diced red bell peppers and oinons, then I added in leftover air fryer potatoes. Then I topped the waffle with peanut butter and maple syrup. This meal took about 20 minutes.
This dinner took about 30 minutes. First I preheated the oven to 400 degrees, tossed zig-zag butternut squash in avocado oil, topped with salt and garlic powder, then roasted them for 25-30 minutes. Then I cooked up ButcherBox burgers in a cast iron skillet topped with Primal Palate Steak Seasonings and topped it off with Primal Kitchen Ketchup and Mustard. And to finish the meal, I made an easy salad of arugula, apples, orange bell pepper, Primal Kitchen Ranch, plus salt and pepper.
This hearty soup dinner took about 30 minutes. First I preheated the oven to 400 degrees, sliced carrots and tossed them in avocado oil and salt, then roasted them for 25-30 minutes. While the carrots cooked, I cooked chopped bacon in a large pot, set it aside, then sauteed red bell peppers and onions in the rendered fat. Then I added ButcherBox ground beef and once it was broken down and cooked through, I added the Bonafide Broccoli Cheddar Bone Broth Soup along with salt, garlic powder and pepper. When the oven has 10 minutes left, I added Brazi Bites to the baking sheet with carrots. To finish the soup, I added the carrots and Brazi Bites!
When I didn’t know what to make one night, I started with air fryer potatoes which take about 25 minutes. While the potatoes cooked, I topped ButcherBox steak with Primal Palate Steak Seasonings and cooked it in a cast iron skillet until medium rare then let it rest for 5 or more minutes. When the potatoes had about 5 minutes left, I made a quick salad of arugula and apple topped with Primal Kitchen Ranch, plus salt and pepper.
This lunch took about 25 minutes. I first boiled rice until light and fluffy, about 20 minutes. While the rice was cooking, I cooked up ButcherBox ground beef with red and yellow bell peppers. Once the ground beef was browned, then I added a packet of Mike’s Organic Yellow Curry Paste with a can of coconut milk then added a bit of salt and lime juice.
For this 30 minute dinner, I preheated an oven to 400 degrees. Then I tossed diced eggplant and carrots in avocado oil and salt and cooked the veggies for 25-30 minutes. While the veggies roasted, I cooked chopped bacon in a large pot, set it aside, then sauteed onions in the rendered fat. Then I added ButcherBox ground beef and once it was broken down and cooked through, I added Bonafide Creamy Mushroom Bone Broth Soup with salt and pepper. Once the veggies were done roasting, I added the veggies. Then I ate it with leftover carrot fritters (recipe coming soon!).
For this 30 minute dinner, I preheated an oven to 400 degrees, tossed halved brussels spouts in avocado oil and salt then cooked the brussels for 30 minutes. While the brussels roasted, I cooked up Trader Joe’s Cauliflower Gnocchi using my air fryer gnocchi recipe. Then I cooked up ButcherBox ground beef with sliced kale then added tomato sauce and salt. Then I ate it all with a little artichoke pesto.
This dinner only took about 25 minutes. I cooked ButcherBox ground beef with bell peppers then added Primal Palate Taco Seasonings, hot sauce, lime juice and salt. Then I cooked up cauliflower rice in a pan with some avocado oil, added salt, garlic powder and chopped cilantro. Then when the cauliflower rice was almost done, I pushed it to the side of the pan, added more fat and added sliced plantains to the pan to cook on both sides for 4-5 minutes.
For yet another soup night dinner, I cooked up bacon in a large pot, set it aside once crispy, then I added a whole sliced onion and cooked down for about 10-15 minutes. Then I added ButcherBox ground beef and cooked until brown. Lastly I added Bonafide French Onion Bone Broth Soup and sliced mushrooms and cooked for about 5 minutes. Lastly, I added the bacon back in with salt and pepper.
This dinner took me 30 minutes. I first made a Moroccan carrot salad (no measurements but the ingredient include grated carrots, red onion, raisins, lemon juice, oil, coriander, cumin, honey, salt and pepper) then set aside for later. Then I cooked up Trader Joe’s Cauliflower Gnocchi using my air fryer gnocchi recipe. And while the gnocchi cooked, I cooked a ButcherBox ribeye in a cast iron skillet with Primal Palate Steak Seasonings until medium rare. And I served it all with artichoke pesto that I found at Natural Grocers.
This 30 minute dinner included leftover carrot fritters that were made the night before. For the rest of the dinner, I steamed frozen cauliflower then I pureed it until smooth in a high speed blender with salt and garlic powder. While the cauliflower was cooking, I cooked ButcherBox ground beef in a pan with garlic, onion and bell peppers with salt and pepper then added Primal Palate Meat & Potatoes Seasonings. Then I made a quick tomato salad with cherry tomatoes, onion, cilantro, lime juice, olive oil, salt and pepper.
Last but not least, one last curry! I first made chicken thighs using my air fryer chicken thighs recipe. While the chicken cooked, I I first boiled rice until light and fluffy, about 20 minutes. While the rice cooked. I added oil and peppers to a pan. Once the peppers were soft, I added Mike’s Organic Green Curry Paste and a can of coconut milk, lime juice and salt, and reduced down for about 10 minutes. Then I just added it all together with some cilantro!
12 meals in under 30 minutes! Try these easy meals out and let me know what you think! Healthy doesn’t mean hard. All you need is something simple items around the house and you can have a healthy meal every single day!

Some of the most popular foods that can be cooked in an air fryer are French fries, fried chicken, pizza, fish sticks, bacon-wrapped asparagus spears (bacon-wrapped), shrimp tempura (tempura), grilled cheese sandwiches (grilled cheese), grilled sandwiches (grilled sandwich), sweet potatoes with marshmallow topping (sweet potatoes). Air fryers are not only limited to french fries and fried chicken, they can also be used to make other foods like pizzas, fish, desserts, and more. It uses less oil than an oven or stovetop, and it cooks food by circulating hot air around the food. The air fryer is a new household appliance that has recently become popular. What are some other foods that can be made in an air fryer? The main reason that air frying is healthier than frying is that it does not add any extra fats or calories to your diet. Florida Sun anyone?
I spent a week in Florida with family
Of course, my nephew wanted to hit the beach, swimming pool, and play some baseball and video games so my week was full. What are young 7-year olds interested in eating? More importantly, are they willing to help? My students often return from holiday breaks and weekend gatherings and share stories of what they ate. One key detail I never hear is how they contributed to the meal.

 I know that isn’t the case for my nephew since my sister cooks and he loves experimenting with slime, erupting volcanoes, and anything messy he can get his hands on. I figured we could make ice cream to eat after being out in the heat all day. This is smart for a few reasons- 1. We can control what we are eating by preparing what we want fresh. 2. We can control the costs while enjoying the treats we like. 3. Servings can be portioned ahead of time, so we aren’t tempted by our sweet tooth and reduce what is wasted.

What’s on the menu?
In a week, my nephew eats different combinations of these items
Breakfast 
Turkey sausages, yogurt, waffles, fresh fruit. I wanted to make cute, bite-sized waffles to freeze for the future, and there wasn’t much else we could modify in his routine that he could help with. 
Lunch
Peanut butter and jelly, grilled cheese, pretzels, goldfish crackers, raisins, yogurt, homemade chicken tenders. To experiment, I wanted to make a dip for the pretzels, prep some apple slices for peanut butter and raisins, and play around with a grilled PB&J sandwich.
Dinner
Fish sticks (Trident only), chicken, homemade chicken strips, peas, broccoli, green beans, salmon, corn, rice, and croissant. To be helpful, I wanted to pre-marinate some meats and fill up my sister’s freezer with prepped food. I’m on my summer break and have fulfilled all of my professional obligations in addition to my personal extended learning goals so with this trip I wanted to have fun, but also be useful. 
Dessert
My nephew can have the occasional cookie, ice cream, or piece of candy. The good thing is we can make all of those. I wanted to stick to simple recipes with minimal ingredients. I had the following ideas for dessert: 
 1. Peanut butter cookies, 
 2. Homemade ice cream since we’d planned on being outside A LOT, 
 3. Oatmeal raisin cookies (something healthier)
What we actually did

Breakfast- we didn’t modify anything lol. He still ate his rotation of muffins/yogurt or waffles/sausage with bananas on the side. 
Lunch- we had toasted peanut butter and jelly which he enjoyed. We also added in Tuna wraps with mozzarella sticks.
Dinner- we had marinated thighs with roasted sweet potatoes and Brussel sprouts. He had a side of pineapple and ate quite a bit. On a different night we had chicken tenders coated with poultry seasoning and panko with potato wedges on the side all prepared in the air fryer.  
Dessert- we made strawberry ice cream, peanut butter cookies, and chocolate chip cookies because I forgot we were supposed to make oatmeal raisin cookies. The chocolate chip cookies had a combination of semi-sweet and chocolate chips, so they were not super sweet. We wanted to make rice Krispie treats for his school orientation as a gift for his teacher, but we decided on the chocolate chip cookies since they turned out perfect! Unfortunately, we left the bagged cookies on a table when we left for school. The peanut butter cookies were a lot of fun because my nephew had never heard of or tasted peanut butter cookies so that was exciting.

June 8, 2020
I heard Dad wake up around 7:30 that morning. He left Haley’s apartment to walk around and be awake while all three girls were sleeping. Haley couldn’t really fall back asleep after that, so we woke up around 8. Haley went to get coffee with Dad, while I lazed around with Mom for a bit.
We were going to Laguna Beach! We didn’t really have a plan for time, so we took our time. We all lazed around for a while, and then Haley made us breakfast. She showed Mom how to use her air fryer and made us a regular potato and a sweet potato, into fries. We also had some avocado toast (how California of us!) and some coffee from home. Haley took a shower and got ready. I got ready and we all packed up for our trip down the coast.
Haley wanted to show us around her place, so we walked around the huge complex. It was hot out already! While we were walking around and seeing the pool and area, Mom and I realized that our flight home was gonna be an early morning. Our flight was at 10am from LAX. We were going to be coming from Laguna Beach, meaning we would have to get up at 6. Yuck! So, Mom called Alaska Airlines and hooked us up! A really nice woman helped us change our flight to 3:10pm from SNA, John Wayne airport, which was only twenty minutes from Laguna Beach. There was a fare difference of $300 a person (!!!!), but she waived that, and the change fee, because of Covid-19 and how nice Mom was. Good work, Mom! Now we wouldn’t be rushed like crazy that morning.
After our walk around, Mom moved Haley’s car closer to her apartment building, since we were gonna have all our luggage. She noticed Haley had a flat tired! Uh oh. Dad and her decided to go get that fixed before we all got in it with our luggage, so they ended up going to a gas station to fill it up with air, then headed to a mom and pop mechanic who took out a nail and patched her tire. Good thing Mom noticed the flat tire! While they were gone, Mom and I hung out at Haley’s apartment.
Dad and Haley got back around one. We packed up the car and hit the road! I wanted to stop by a cafe that I like, Little Fluffy Head, in downtown LA. No one else wanted to go, but it was kind of on the way, so Mom made sure we were going because I wanted to. It was a hot day! Haley doesn’t really know how to work her air conditioning in her car, so Mom and Dad were roasting in the back seat. Downtown LA is pretty intense. Riots and protesting had been going on for the last week, but it felt safe in the daylight. Haley let Mom and I out of the car, only for us to find out that my cafe wasn’t open. Awe shucks! Their hours online said they were open, but alas, it wasn’t meant to be.
After the tea shop fiasco, we continued out of town. We drove about a half hour and stopped at In-N-Out for lunch. We all got burgers but no fries or shakes. Haley got us back on the road and we made it to Laguna Beach in another half hour. None of us had ever been to Laguna Beach before, so we were pretty stoked!
Our hotel was called The Inn at Laguna Beach. It was right on the cliff above the ocean and so beautiful! Haley had chosen a different hotel, but we were upgraded to their sister hotel. Our room was on the fourth floor and had an ocean view and balcony! How cool is that? We parked the car in the underground garage and unpacked. We were above the pool, too. It was seriously soooo nice! Good work, Haley.
After we checked out the room, we decided to check out the beach! We sunscreened up (I’m always in charge of that, because I never want to get burnt, or even some “color”, as Mom says), and walked directly to the beach from our hotel. It was gorgeous! Lots of people were out and about, which is kind of a shock to the system after being in quarantine for a few months. Some people walking around had masks, but not many. People seemed pretty spaced out, though, which was nice. We dipped our toes in the ocean which felt so nice in the heat of the day! We walked down the length of the beach near us, then took some stairs up to one of the main streets of Laguna Beach.
We walked down the main street and explored a few of the shops. A lot of stores were closed, but some were open. Some were also closed for the day, but opening in the morning. We walked back to our hotel and got ready for dinner. The check in desk had mentioned a “wine hour” from five to six, so Haley and I wanted to check out that. Everyone gets a free glass of wine! Mom and Dad got one, too, so Haley and I each got two glasses. All four of us went up to the viewing deck and enjoyed the sun. It was pretty cool that the hotel gave you free wine!
We walked down the hill after “wine hour” and looked around for dinner. Some restaurants weren’t open yet, but we had enough options. We ended up eating at The Cliff. Mom had nachos, I had fish and chips, Dad had fish and shrimp, and Haley had macadamia chicken. The food was super tasty! After dinner, we decided it was perfect time for gelato. I had creme brûlée and salted chocolate caramel and it was so yummy! Mom loves gelato. We were all really happy with our flavors.
After dinner and dessert, we walked back to our hotel. I took a shower and we watched an episode of Hoarders (we started it back at Haley’s). Dad fell asleep first of course. I fell asleep around 11. It was a really nice day in Laguna Beach with the family! I was definitely looking forward to the next day. :]

In the evening did 35 min and 1,500 counts of of Ping Shuai Gong (PSG) hand swinging and knee bending exercise. Burned 430 kCal of energy. Average heart rate: 125 bpm. Max heart rate: 152 bpm. Immediately following the PSG exercise I continued with 1 hour of jogging, clocking 4.23 km and 6,152 steps. Average heart rate is 115 bpm and max heart rate is 127 bpm and burned only 112 kCal of energy. Comparing the two, my heart worked harder and I burned more calories in the shorter time of 35 min just standing in one spot on the floor doing PSG than jogging 4.23 km round the car porch for 1 hour. In the past when I didn't do any heart beat and calorie measurements for PSG I always assumed that as jogging is more dynamic than static exercise, running will work my heart harder than just doing static physical exercise, which I now conclude is not the case.

Did Ping Shuai Gong 平甩功 (PSG ) exercise. Did 40 min of the stand-up exercise consisting of 1500 arm swings in combination with 300 knee bending. Despite its simplicity this is a powerful static exercise that works the heart more vigorously than jogging. For eg yesterday jogging round the car porch for about 6.6 km in 90 min my max heart rate was 122 bpm and I burned 173 kcal of energy. In comparison today just standing and doing PSG for 40 min on the spot, I clocked the the max heart rate of 143 bpm and burned 445 kCal of energy.

Malaysia today Fri recorded 69 new Covid-19 cases taking the total number of confirmed infections in the country to 5,251. This is the second time this week that the country has recorded only double-digit figures of new cases in a 24-hour span. I hope that this downward trend will continue as an indication that the stay-at-home MCO is working to bring down the Covid-19 infection rate I went out to the local grocery stores in PUJ 3 town centre this morning to buy one week's supply of meat, fish, vegetables, eggs, bread, and other groceries. Other than at the grocery stores where you could see some people there, the normally busy streets at this early morning hour are practically empty of people and traffic.

Today is the 29th day of the partial lockdown and the first day of MCO #3. So beside eating how do you spend your time at home in the morning on the first day of MCO #3? As for me, my wife had practically decided for me what to do. She grouching that the floor is "sticky" I pulled up the mop and started to rub the floor with water and detergent which obviously made her very happy afterward with the cleaning and disinfecting chore.

Being empty nesters, the days for big family meals are a thing of the past, forgiving holidays of course. Our stove top and microwave are still put to good use of course. Ive dried out some thinner pork chops while experimenting, but with the following Weve experienced great success! Frozen shrimp, fish fillets, fish sticks, tater tots, french fries, pizza rolls and boneless chicken wings with more things waiting to try. Fresh top sirloin fillets and strip steaks, breaded chicken tenderloins and center cut pork chops, marinated boneless skinless chicken thighs and city chicken. Baked large russet and sweet potatoes are the best Ive ever had at home, just brushing a little oil on the skins and salting. I even tried bacon egg and cheese egg bites and french toast sticks! All of these things very successful on the 1st try. Im totally impressed with the speed and ease of cleanup, and would recommend one for anybody! My youngest is in the Army, and Im sending him one to make his life on base a little better, as he only has a tiny cook top to prepare meals. Just got into air frying by accident and purchased the Cosori Air Fryer and Accessories. I was more interested in the racks to increase cooking capacity. Was able to increase from 10 to 15 full chicken wings and from 2 to 4 thick homemade burgers and also used the rack with skewers to cook Italian Sausage (PERFECT). Cleaning the racks a breeze. I clean mine a few minutes after using while warn so just a quick wipe off.. Have dishwasher but have not used over a year. The sink is just as quick for me (Single Senior). The insulated mat is perfect for my granite counter tops when removing and checking on food. Have not used the other 3 items yet but enjoying my new cooking method. If you have a Air Fryer GET-EM!! wont be disappointed!! Rib-Eye Tonight!!! ! I made Kabobs from the Cosori accessory pack. They turned out excellent. If you’re new to my meal plans, I’ve been sharing these free, 7-day flexible healthy meal plans (you can see my previous meal plans here) that are meant as a guide, with plenty of wiggle room for you to add more food, coffee, beverages, fruits, snacks, dessert, wine, etc or swap recipes out for meals you prefer, you can search for recipes by course in the index. You should aim for around 1500 calories* per day.
There’s also a precise, organized grocery list that will make grocery shopping so much easier and much less stressful. Save you money and time. You’ll dine out less often, waste less food and you’ll have everything you need on hand to help keep you on track.

THE DETAILS:
Breakfast and lunch Monday-Friday, are designed to serve 1 while dinners and all meals on Saturday and Sunday are designed to serve a family of 4. Some recipes make enough leftovers for two nights or lunch the next day. While we truly believe there is no one size fits all meal plan, we did our best to come up with something that appeals to a wide range of individuals. Everything is Weight Watchers friendly, I included the updated Weight Watcher Freestyle Points for your convenience, feel free to swap out any recipes you wish or just use this for inspiration!
The grocery list is comprehensive and includes everything you need to make all meals on the plan. I’ve even included brand recommendations of products I love and use often. Cross check your cabinets because many condiments you’ll notice I use often, so you may already have a lot of them.
And last, but certainly not least, this meal plan is flexible and realistic. There’s plenty of wiggle room for cocktails, healthy snacks, dessert and dinner out. And if necessary, you can move some things around to make it work with your schedule. Please let me know if you’re using these plans, this will help me decide if I should continue sharing them!
