Top 5 Diabetes-Friendly Lunch Ideas for diabetes

For 1 thin roti (khapligehoo/jowar/bajra )of 6” diameter OR ½ cup cooked brown rice, there should be 1 big cup of salad ( raw vegetables), 1 big cup of cooked vegetables, and 1 big cup of dal – this becomes one serving.
For the second serving, have 1 big cup of salad first and then all other things in the same proportion. Another important piece of advice is always to start your meal with the salad.

Millet Paratha
This paratha ingredients include 1 cup little millet flour, ½ cup Bengal gram flour/ chickpea flour/ Besan, 1 tbsp chilli garlic paste, 2 tsp sesame seeds, 3 tbsp finely chopped coriander, 1tsp oil, Salt
How to make paratha
Mix all the ingredients and bind the dough using hot water. Make 7 balls from the doughand make roll each ball to make round paratha.Roast both sides on a hot griddle brushing oil on both sides.
Missi Roti Ingredients Include 1 cup emmer wheat flour ½ cup besan and tsp Ajwain, 2 tsp finely chopped green chilli, ¼ cup finely chopped onion & tsp sasfoetida/hing, 2 tsp oil, Salt, Water etc.
How to make Missi Roti?
Mix all ingredients well and make a soft dough.
Knead well and keep covered for 10-15 minutes.
Divide into 8 portions.
Roll out each portion to make medium thick roti.
Heat the Tawa or the griddle.
Place the roti and when the first side is lightly roasted, flip over.
Let the second side roast well and then roast the first side by pressing with the spatula. Now its ready to Serve.
3. Barley Khichdi for diabetes
Ingredients: 1 cup of barley grain, cumin seeds, chili powder, 3-4 tsp of coarsely ground groundnut powder, ½ tsp cooking oil, Black salt, Finely chopped coriander leaves etc.
How to make Barley Khichdi?
Soak a cup full of barley grain overnight and next morning and wash the grain thoroughly.
Put the grain in a container of a pressure cooker and add a little water (The water should be just on par with the grain or 1/4th 3. Anything extra could leave the khichadi soggy. Let ONLY 3 whistles blow.
Once the lid opens and the cooked barley cools down a bit, transfer it to a wider vessel. Add groundnut powder, chili powder, and salt, and mix thoroughly.
Add oil in Kadhai and allow it to heat up, then add cumin seeds, and let them splutter.
Now, add the barley, and mix it all for about 3 minutes. Sprinkle a few drops of water, and mix again.
Cover the wok with a lid to cook the grain on steam, and intermittently open the lid to mix the grain. Repeat this process thrice.
Once done, add the chopped coriander leaves and mix gently. 9.Once again cover the wok with the lid and after approximately 2 minutes, take it off the gas stove. (If you continue keeping the wok on the gas stove, the grains become hard and defeat the purpose of having soft khichadi.)
Now its ready to serve!

You can't believe you're considering it, but you definitely gave him hope. He grinned from ear to ear when you said that you're going to see what you could do. As someone living in a big city, commitment is like the boogeyman to you. Or maybe it's something you also yearn for, but the hookup culture around you makes it near impossible.
Montgomery seems... okay. You don't know how you're going to fare from being a workaholic single and freely fucking strangers from dating apps, to becoming a committed partner to a country bumpkin.
You thought about it and you definitely felt bad. You used him for his money even though he didn't have a lot in the first place, you used him for his body and his time. Yet he's not your boyfriend, he was still under the "friend with benefits" umbrella. Maybe he deserved the promotion, he was nothing but loving and kind to you.
He thanked you profusely and promised ad nauseum that you're going to be loved and have a good time.
You didn't want to eat any more of the soup. It's cold and congealed, you stood up and walked away. He frantically asked where you were going.
You said that you're tired and you didn't want any more of the soup. He offered to reheat it for you, but you didn't respond and retired to your bedroom.
It felt surreal to him and you. Over the following days, Montgomery stayed over at your place. He felt like he was in bliss because after years of hurting his back by sleeping in his cramped car, he gets to sleep in a comfortable bed for a longer period of time. He could stretch and not hit his hand against the roof.
You couldn't believe that you're practically letting him move in. You could be minding your own business and doing chores, and he would come from behind to hug and kiss you. He probably knew that you secretly liked it because your shoves and shouts no longer deter him. He would pick you up and twirl you around at the most random times.
It makes sense his cooking skills are close to none, he's been living in his car for a while now and his mother does the cooking at home. So his tastebuds are accustomed to the chock-full takeout of sodium, oil, and sugar. You tried being nice and cooked him a meal, which he appreciated a lot and finished. But when you're not looking, he would use up to a bottle of hot sauce a meal. You also wondered why your salt and sugar stores were depleting rapidly.
The one thing that confused you is that his presence is rarely felt in the bathroom. At least in the living room, kitchen, and bedroom, he has his own personal belongings strewn around. But not the bathroom aside from his toothbrush and toothpaste. You thought he used your soaps, but it wasn't running out as fast as you expected.
Until one day, you caught him entering the shower with a bottle of dishwashing detergent in his hand. You said nothing and waited to see what he would do.
Once he was done, he returned the liquid soap to the kitchen. Is that why his hair felt like broom bristles? It... does make sense, though. Dish soap can remove the toughest stains and it's cost efficient too especially with his occupation as a construction worker. But it's still bizarre to witness.
Though he can't cook to save his life, he makes the best sweet tea you ever tasted, even though you felt like it would give you diabetes induced gangrene for every sip you take. There is always a pitcher full of it in your fridge.
He drives you to work every single day, pecking you on the forehead goodbye and telling you that he's going to come by for lunch. You're not necessarily spending all your breaks with him though, but now you're considerate enough to tell him if you're going to be with your coworkers.
He would be sulkier and clingier than usual if you went out without him.
You wondered what he did for fun. Observing him wasn't giving you the information you wanted, because as soon as he comes back from a long day of work, he would collapse onto the sofa and doze off- that is if you're both not fucking each other.
He rarely takes days off because he needed the money to keep sustaining his takeout-fuelled lifestyle. Montgomery needs cash more than ever now because he has another mouth to feed, even though you rather cook your groceries instead.
Perhaps he doesn't understand. He said that you must be exhausted from working, cooking will only make your fatigue worse. You think he's forgetting you're working a desk job, not something that requires the calories in a bucket of double deep fried chicken.
"You work so hard everyday." He had a concerned look on his face when you shook your head at the pizza box. "You should rest instead of cooking. I have dinner covered."
He also covers lunch. And breakfast.
Breakfast is usually hotdogs or whatever food stalls are open nearby. Since he has access to your fridge and freezer, you note that he would eat the leftovers or stuff that you rejected. It seems like he reheated it before bringing it to work.
You're slowly accepting him into your life. Sometimes you would pack lunch for him and it never fails to make him kneel in front of you and kiss your knuckles. At least you know that he's grateful no matter how over the top his displays of appreciation were.
He may be messy at times, but he's a good man. He takes out the trash, he wash the dishes and he sweeps the floor. So you could forgive the occasional pair of paint-soiled pants lying on the floor. Unfortunately, your water and electric bills went up because he had to use your washing machine quite frequently. You complained to him about it, and he apologized and insisted on paying your utility bills from now on.
It was weird... to say the least when he spent a week beating himself up for being 'ungentlemanly'. When pressed what he meant by that, he said he felt embarrassed that you're providing for him, while it should be the other way round. So to give his manly pride back, he's also paying for your, student loans, mortgage, and groceries. And other miscellaneous subscriptions that weren't there before meeting him.
The weight of the expenses is visibly wearing him thin. But he keeps going, earning as much as he can to spoil you. More times than you can count, you had to console him because he was comparing himself to rich men in sports cars who could afford to pamper their partners with luxury. He kept thinking that he was this lowly cretin that couldn't even muster the funds to buy you a chic car. Completely dismissing the fact that his paycheck each week solely goes to your personal expenses and none to his savings. Sometimes borrowing fifty bucks from his coworkers just to get you a bouquet of roses that you may or may not have thrown into your compost bin.
You never asked for these costly, but romantic gestures. But he insisted, claiming it was a boyfriend's duty; even seemingly suffering from mental breakdowns if he didn't do them.
It confused you, did this all start because you told him off for using the washer too much? It's not like you blew up at him, you just told him to be mindful of his habits.
Then one day, when both of you had days off, he brought you to the mall to shop. He told you to get whatever you wanted, no price was too high for him. Except, you know at least two-thirds of the goods you eyed at was going to bring him to bankruptcy.
While looking at something from a window, you saw in your reflection, Montgomery watching something.
Shifting your eyes, you spotted him staring at a man carrying shopping bags upon shopping bags for his girlfriend. Then he brought his attention to a couple buying an expensive jewel-crusted necklace in a nearby store. There was a man who gave his husband a credit card, which he then happily pranced into the nearest smartphone store. A woman came out of a salon with fresh acrylic nails, they had intricate designs on it. Must have been pricy, but a man was the one who paid for her appointment, the woman then hooked her arm around an older gentleman's; pecking him on the cheek as they walked away.
He locked his eyes on a man with the most beautiful, long jet-black hair. Dressed head to toe in classy clothes, clacks from his heels reached Montgomery's ears as he walked past him. Not once sparing a glance at your boyfriend, deeming him too insignificant. The stranger adjusted the straps of his very obviously luxury bag on his shoulder. The man clearly extrudes wealth and elegance.
You saw Montgomery's shoulder sag, realizing that his shirt and chore jacket were old and relatively tattered, ruined by old stains. He brought his hands to his rough stubble and sun-spotted skin, he is nothing like the normal inhabitants here. He crossed hugged his arms and hunched his back, attempting to shrink himself.
At first, you didn't get what was he looking and reacting at, because you're used to the scene. Then you realized, he had probably never seen such things occur in his small hometown, he must have noticed it even more since you and he officially became a pair. Making him horribly insecure about his financial standing, he must have felt incredibly left out by the community in the city. Hence the crippling loneliness.
You wonder if you should say anything.

Okay this really got away from me but hopefully you like it!!

Okay. It starts out when Ted is bored as fuck at work because they're literally filling out the same useless reports week after week and he needs some entertainment. Of course he turns to Paul because that's his crush bestest friend in the whole wide world, but Paul's giving him nothing. Every conversation that Ted tries to strike up is immediately shot down, he doesn't want to go to Beanies, and apparently he's "too busy" to take a lunch break.
That last one sends warning bells ringing in Ted's mind because he's spent the past however many years looking after a little brother with diabetes and skipping meals is not an option under his roof. And, well, Ted's a big brother, so of course he falls back on the most sure-fire way to get little Petey to do something he doesn't want to do and jabs Paul in the side.
Ted wasn't sure what exactly he'd expected, maybe a flinch and an annoyed huff and, hopefully, Paul agreeing to eat some damn food. What he'd gotten was wildly more entertaining: Paul, arguably the most boring guy to ever step foot on planet Earth, fucking squeals and essentially throws himself out of his chair and onto the floor.
When he looks up, Ted's expression is caught somewhere between lovestruck and pure maniacal glee, but he still accepts Ted's hand and pulls himself up. And, hey, it did get him to eat some damn food!
It becomes a bit more of a staple after that. A few pokes here and there to convince Paul to take a break, to get some food into him, to see him smile, to keep Ted entertained enough that he doesn't smash his head into his desk. And it starts to somehow yield actual tangible results?????
Like, Paul's a little more relaxed around the office. He smiles easier and stops to chat with Ted every so often which fucking rocks. Once he even invited Ted out to Beanies with him and Ted's pretty sure he blacked out a little from excitement. Like, he'd called Paul his best friend before, but he wasn't so blind as to not see how one-sided it was. But now it felt like they really were friends, even if it had taken five minutes for Ted to "convince" Paul to go out to a bar with him one night.
Then, somehow, they actually get together. Ted gets a boyfriend and settles, in a way. That constant, aching fear that he'll never be good enough for someone shrinks whenever Paul grabs his hand, or presses a kiss to his cheek, or just makes himself comfortable in Ted's cramped living room.
One time, Ted has to go to the bathroom, and he passes Peter on his way back to Paul. He doesn't expect the kid to wrap him up in a hug and say how happy he is for Ted, but it calms something in him that he didn't even know was there until he heard the words. Of course, he then walks in to find Paul looking mildly terrified and refusing to tell Ted exactly what Pete had included in his apparent shovel talk. Ted's just grateful to have these two people who, for some reason, care so much about him in his life.
Sometimes Ted and Paul would just lie next to each other at night and talk, whispering secrets into the safe little cocoon they've created. That's where Ted learns that Paul hadn't really minded the tickling. In fact, he'd come to look forward to it, admitting that maybe it had sparked some bad habits, but that it was worth it to feel close to Ted and just laugh for a little bit. Of course, Ted thinks that this is fucking adorable and proceeds to take every opportunity he can to reduce Paul to a giggling mess.
Tracing lightly over his back when they're watching a show, pretending that the way Paul huffs into his neck isn't getting to him a little bit. Massages that turn into shrieking laughter after Paul's had a particularly long day. Sporadically squeezing at his knee under the table when they're sitting next to each other in a meeting and then trying not to lose it when Paul looks at him like he'd just bitten into a lemon and tangles their fingers together.
Seeing the man he loves so happy is wonderful, but the kiss that Paul always pulls him into afterward certainly doesn't hurt.
(And then, just for me: Peter comes back from hanging out with Richie and Ruth one day to see Paul laughing under Ted's fingers. Paul is mildly embarrassed but Ted catches the look in his brother's eyes and immediately starts threatening him to shut the everloving fuck up. It doesn't work obviously, and Peter tells Paul that if he really wants to get his brother back, he's gotta go for either the ribs or the knees. He almost makes it out of the room before adding that if Paul scratches under Ted's chin, he'll snort. And then he's gone.
Ted's face is flushed red and the second he makes eye contact with Paul, his dropped jaw snaps into a nervous, giddy little grin. He babbles for mercy, sure, but he doesn't actually do much when Paul pins him to the couch and decides to exact revenge for all the times Ted has "attacked" him.
Ted: But you liked it!
Paul: What? And you don't? I'm not blind, Ted, you've probably been waiting for this ever since that first time in the office, haven't you?
Ted: *Panicked flustered noises followed by frantic cackling*
There's a lot more laughter in the Spankoffski-Matthews household after that.)

Pedri x Black Reader - Our Secret Part 4/10

The story of Marcella and Pedri. As students of the most prestigious high schools in the country, the two are very focused on developimg their indvidual talents. Marcella has music whilst Pedri has football. However, worlds collide when Pedri's secret is revealed, he has diabetes.

"Perdi? Are you in here?"
No response.
It was a first, considering that he had been showing up around the sametime everyday of this week.
"Marcella?"
"Yes?"
She heard a low groan coming from the corner of the room. Pedri lay outstretched on the old sofa, yet to awaken.
"Um, are you okay?"
It was well past lunch hours.  She would usually find him behind the drums, or playing an imaginary guitar solo on one of the broken violinis.
"Yeah." He said, making efforts to sit up. "Got any snacks?"
"Actually I do."
He raised a brow. "You do?"
Marcella dug through her backpack. "Yeah, um, my mom she made these African samosas, but we call them sambusas. Here, try one." She went over to the sofa, handing him a sambusa. Pedri took it and did not hesitate to taste it. Matter of fact, he finished it in seconds.
"That was good. Can I have another one?"
Marcella's shoulders fell. "No. That was it."
"Oh."
There was an awkward silence.
"So... how's the song coming on, it needs to be done by Friday, no?"
"Yes, and I actually took your adviced."
"Really?" He smiled.
"Don't get ahead of yourself, it was only a few changes." Marcella went over to the piano,  Pedri followed, but got up at his own pace. "I took out the part where I rhyme time with crime and crazy with lazy."
"That's good." He nodded. "That's...." Coming around the piano he squinted his eyes at the sheet music.
"What?" She said, anxiously biting her nails. "You don't like it?" Even though she said she didn't care, Marcella kind of cared about Pedri's option of the song. His advice throughout the week had been surprisingly helpful. He sighed as he sat down next to her. "I like it Marcella, I really do. But why is the song still in English?"
"Not this again." She rolled her eyes and grabbed the sheet music.
"What?" He questioned.
"Look, Spanish isn't even my first language, it's French. I might as well sing in French, no?"
Pedri shrugged, "If it makes the song more sincere. You supposed to sing from your heart. I really think that's what señor Garcia meant for you to achieve with this assignment."
"Well, what do you know?" It was Marcella's usual response to when Pedri overthrew her with reason. She could see where today's session was going. It was not going to be useful to her if she'd spent half the time arguing with Pedri who had no involvement in the music program whatsoever.
"Are you leaving?" He frowned, seeing her get up and grabbed her things. "Already?"
"I need to finish the song by Friday and this isn't working for me."
"What? Us?" He stared at her blankly, perhaps wondering if he said something to offend her.
"I'm sorry Pedri, I'll see you around."
"Marcella, wait!"
She pushed the door open, ignoring his plea. But then he stopped pleading and started playing the piano.
Marcella paused in the doorframe, the melody familiar to her.
Cualquier cosa que haga está mal para ti..... (Anything I do is wrong for you.)
It was her song but....
Te quiero, tú me quieres, pero ¿por qué seguimos dudando.... (I love you, you love me, but why do we keep doubting?)
....he was singing.
Pedri's hands floted across the piano keys. And his voice....
Vuelve a mí y yo volveré a ti. Por favor, encuentra a mitad de camino. (Come back to me and I will come back to you. Please meet halfway.)
Marcella's feet betrayed her, reentering the room. Pedri was still playing and singing as she sat down next to him. There was no sheet music, he was playing by heart. And the lyrics, they were his own.
He nudged her shoulder "Sing."
"I don't..." She looked for the lyrics. He must have written them down somwhere. "Just sing Marcella! Improvise, from the heart."
Dudo de mí pero no de ti, porque el amor nunca duda. (I doubt myself but not you, because love never doubts.)
The words flowed out of her, along with the melody.
Te quiero, tú me quieres, pero ¿por qué seguimos dudando.... (I love you, you love me, but why do we keep doubting?)
Pedri joined in and now they were singing together, all of it coming from the heart.  Marcella was buzzing all over once Pedri's hands stopped playing and the music died.
An unknown but exciting vibration flowed through her body.
"That was..."
Her sentence was interrupted as Pedri turned to look at her, his expression hard to read. He leaned forward, his warm lips sneaking up on her own.
"Pedri." She pulled back, a slight terror in her eyes.
He said nothing, eyes still darting hungrily at her lips.
"I don't..."
She tried to speak but his hands went to cup her face, railing her back in. Marcella closed her eyes, letting it happen, letting Pedri Gonzalez kiss her the way he wanted, slow and wet. It wasn't her first kiss, but this one was definitely the most exciting one. Pedri held her down, kissing her gently but rough at the same time. His tounge caressed hers gently and at times he would pull back as if to check that what he was doing to her was okay.
"I have to go." He eventually whispered, when his face was nuzzled up in the crease of her neck, his lips pressed against the pulse of her throat.
Marcella sighed but nodded. "Okay."
He pulled back to look at her, reaching forwards to stroke a thumb across her plump lips. "Nobody knows....that I can sing." He said. "None of my friends."
She smiled. "Now would be a good time to tell them, don't you think?"
He shook his head. "You can keep the song, it's yours. Just promise me that you won't tell anybody about this, about...."
"Us?" Up until just moments ago Marcella had never thought about her and Pedri being an us. She had thought of him as arrogant, inconsiderate and not to mention that he was friends with Gavi. No, Pedri had never been her type, although she could see why other girls may believe that he was theirs.
"Marcella? You okay?" He was cupping her cheek again, gently stroking her skin with his fingertips.
"Um, yeah, sure. I'm okay."
"Yes?"
She nodded. "Sure, I um, I won't tell anybody about the song or about..." She looked up as he stood.
"There is a football match on Friday, you should come." He spoke as if nothing had happened between them, as if the emotions that Marcella was feeling were of her imagination.
"I...can't."
"No? Why not?" Pedri grabbed his gym bag, throwing it over his shoulder.
"I have to go dress shopping with my mom. My friend is celebrating her seventeenth birthday on Saturday."
"Martina Blanco?"
She frowned. "How did you know?"
Pedri smiled. "Lucky guess." He moved on to the door, throwing her one last glance. "I'll see you Saturday Marcella."
"Um, I'll... He was gone before she could finish the sentence. "...see you?"

So yeah, I'm still pretty mentally traumatised over the blender thing. I cannot describe the sheer hell of the experience itself, never mind the hysterics, blood, hysterics, panic and the rush to hospital etc. immediately after.
Anyhooooo......onwards to a new day.
Getting dressed for my little walk was fun 😂. Half an hour in the beautiful morning sun.
Sipping on my sea salt and ACV water.
Home for breakfast.
Day two of my HBD thing. It doesn't particularly recommend fasting, but that's still in my life, unless told otherwise. I still follow the other lifestyle stuff from different sources. I just like to branch out and try new things. Ever evolving....
So this is my second (and last) day of veggies only.

Black coffee (ugh) with cinnamon, sea salt and nutmeg.
Herbs and spices are definitely recommended for the programme.
After that, it was time to simply chill.
No workouts. Just my usual half hour morning walk earlier, and another one after a bit of a read.
I need self care. Plus I'm type one diabetic, and the current "veggies only" phase is causing my blood sugar to seriously drop. I've reset my insulin pump to an extremely low basal dose level. That's all I can really do
So that's another reason to stay away from anything too active right now.
Although, that changed significantly a little later, so I then had to increase my insulin dose. Meh. It never shows any consistency, lol.
I went out for another walk after lunch, which felt like the best thing to do.
An hour, this time.
Lunch was the rest of the soup I made yesterday. Added a few chopped mushrooms.
Dinner will be another big salad and the other half of avocado.
Phase two starts tomorrow. Two weeks for this one.
Three meals, five hours apart.
This is where protein comes in. Plus one daily apple, and a few fruit options to include with meals. Only one choice for each, and a small amount.
Still no dairy or fat, apart from whatever natural fat is in the protein.
I'm doing ok.

For anyone who buys Lunchables (or anything similar), they found high levels of lead, cadmium, and sodium in them.

WASHINGTON, D.C. – Consumer Reports called on the Department of Agriculture today to remove Lunchables food kits from the National School Lunch Program. CR recently compared the nutritional profiles of two Lunchable kits served in schools and found they have even higher levels of sodium than the kits consumers can buy in the store. CR also tested 12 store-bought versions of Lunchables and similar kits and found several contained relatively high levels of lead and cadmium. All but one also tested positive for phthalates, chemicals found in plastic that have been linked to reproductive problems, diabetes, and certain cancers.
“Lunchables are not a healthy option for kids and shouldn’t be allowed on the menu as part of the National School Lunch Program,” said Brian Ronholm, director of food policy at Consumer Reports, which launched a petition to the USDA. “The Lunchables and similar lunch kits we tested contain concerning levels of sodium and harmful chemicals that can lead to serious health problems over time. The USDA should remove Lunchables from the National School Lunch Program and ensure that kids in schools have healthier options.”
The USDA currently allows two Lunchables kits — Turkey & Cheddar Cracker Stackers and Extra Cheesy Pizza — to be served to nearly 30 million children through the National School Lunch Program. To meet the program’s requirements, Kraft Heinz added more whole grains to the crackers and more protein to the Lunchable kits designed for schools compared to store-bought versions.
CR tested store-bought Lunchables and similar kits from Armour LunchMakers, Good & Gather, Greenfield Natural Meat Co., and Oscar Mayer and found lead, cadmium, or both in all. Lead and cadmium can cause developmental problems in children over time, even in small amounts. While none of the kits exceeded any federal limit, five of the 12 tested products would expose someone to 50 percent or more of California’s maximum allowable level for lead or cadmium – currently the most protective standard.
CR also detected at least one type of phthalate in every kit it tested, except for Lunchables Extra Cheesy Pizza. Phthalates are known endocrine disruptors, compounds that may mimic or interfere with hormones in the body, which can contribute to an increased risk of reproductive problems, obesity, diabetes, cardiovascular disease, and certain cancers. As with heavy metals, the goal should be to keep exposure as low as possible.
The sodium levels in the store-bought lunch and snack kits CR tested ranged from 460 to 740 milligrams per serving, that’s nearly a quarter to half of a child’s daily recommended limit for sodium. CR found that the sodium levels of the Lunchables made for schools, which had a larger portion of meat, are higher than in the store-bought versions. The school version of the Turkey and Cheddar Lunchable for schools contained 930 mg of sodium compared to 740 mg in the store-bought version. Similarly, the Lunchable pizza kit for schools had 700 mg of sodium compared to 510 mg in the store version.
Eating foods with too much sodium can lead to high blood pressure and lead to hypertension, which is a risk factor for heart disease, stroke, and kidney damage. Kids with high sodium intakes are about 40 percent more likely to develop hypertension than those who have low sodium diets.

A different outlook in terms of healthy eating… research the diet for gestational diabetes. I am probably one of your older followers and have had gestational diabetes four times. I’m kind of an expert on how it works. I had a maternal fetal specialist tell me once that he has whole family follow this diet and that people would be healthier in general if they did.
It’s all about balancing carbs to protein to prevent blood sugar spikes and eating three meals and two snacks. All 3-4 hours apart from each other. Carb units are 15 grams and protein is about 7-8 grams. All snack are two carbs units to one protein unit. Breakfast was also 2 carbs to one protein. Lunch and dinner was 3 carbs to two proteins.
Nothing is really off limits you just have to a lot for it and you learn pretty quick that if you choose healthier options you can eat more.
Milk counts as a one unit of carb and one unit of protein. Starchy vegetables such as peas, corn, potatoes and beans count toward carbs. All other vegetables are “free” and you can eat as much as you want. And complex carbs are better then simple ones. Skinny cow has almost the perfect ratio of carbs to protein if you’re craving sweets. (Which I mean I was pregnant when I needed to follow this diet).
So the schedule looks something this:
Breakfast 7:00am
Snack 10:00 am
Lunch 1:00 pm
Snack 4:00 pm
Dinner 7:00 pm
The first week is the hardest as you learn portion sizes and the balancing but then it becomes pretty easy. And it gave me more energy, which was probably the result of healthier blood sugar levels.
I need to get back to eating better. I’m so busy looking after everything and everyone else that I allow myself to fall by the wayside and end up skipping meals and then just snacking when I realize I’m hungry.
I’m really trying to make self care a priority lately. I hope everyone else who is struggling to become and stay healthy can find the motivation and strength to preserve. I’m in the same boat as you.

also also, about my to go order, it depends on the store, bc theres this kinda famous tea shop in my city and even though its incredibly expensive, i found a milk berry tea with the bubbles thingy that i love and im absolutely a fan. in my favorite cafeterias (im in colombia, so theres a lot) an iced coffee (like where they put the ice in the blender, and not coffee with ice) will always be my first choice, except if its like too early and im freezing, or in coffee vending machines, i will absolutely go for a cappuccino.

Recipes for Dove (and others, too)

This is a small selection of recipes that I put together for @dove-da-birb. They are some of the recipes that I and my family use, mainly vegetarian, but also with a few non-vegetarian options. I tend to adapt these a bit when I make them, usually adding more of the seasonings and aromatics, but the recipes are a good basis to build off of.
The recipes are from The Ultimate Vegetarian Cookbook, The Paleo Diabetes Diet Solution, and a couple websites (which I've linked).
Recipe Websites I Often Use
The 1940s Experiment - A website containing a variety of recipes from 1940s Wartime Britain. They can be a little hit-or-miss, but I linked a few of my favourites below. They're definitely rather British in nature, so may or may not appeal. Many of the recipes are wither vegetarian, or have a vegetarian option.
Just One Cookbook - A HUGE collection of Japanese recipes, from mains, to sides, to desserts, to a whole lot of other dishes. There are a lot of recipes that I've enjoyed from here!
Sides and Starches
Tattie Scones (Tippitiwychett) - I LOVE this recipe. It's just a really good starch to have with a meal!
Mock Black Pudding (The 1940s Experiement) - One of the many "mock" foods of the era, this is a fried, seasoned oat patty. It's nice with either veggies and a protein for dinner, or with eggs and tomatoes for a savoury breakfast.
Lemon Garlic Pasta (Pinch and Swirl) - Just a nice, simple pasta recipe. I generally add some spinach towards the end of the cooking process to wilt a little, and it's also really tasty if made (significantly) spicier. Roasting the garlic beforehand also adds another layer of richness to the dish, but it's not necessary.
Mains (Vegetarian)
Mushroom risotto (Recipe Tin Eats) - I posted about this the other day, but it's a really rather nice recipe if you enjoy risotto and/or mushrooms :)
Mock Goose (the 1940s Experiment) - Not goose, but a baked lentil dish! It's surprisingly nice, especially topped with cheese in the last few minutes of baking.
Mock Crab (The 1940s Experiment) - Again, not crab, but a cheesy scrambled egg dish. It's nice on toast as a quick lunch, with some fresh veg as a side. I would definitely recommend using less margarine/butter, as it can get a bit too oily otherwise.
Masoor Dahl (Choosing Chia) - This is an alright basis for this recipe, but I usually add about double the amount of seasoning (if not more). It's a quick recipe, though, so it's nice in that way.
Tofu Katsu Curry (Okonomi Kitchen) - I'm a HUGE fan of curries, especially Japanese curries. This recipe, with breaded tofu cutlets, is a nice recipe, and I often use it. I usually just make triangles, rather than the "cutlet" shape suggested on the website, and I also make "family style" curry (as in this recipe). (Also, Okonomi Kitchen is another website with a lot of good vegetarian/vegan dishes!)
Curried Squash Soup - I don't remember what this exact recipe is like, but you can alter the seasoning to suit your tastes ^w^ (Using frozen, cubed squash is a really good option here!)

Vegetarian Bolognese - You can use canned beans instead of dried, and though they won't have the bay leaf flavouring, it's a quicker way to make this sauce. I'd also recommend adding some heat, either with pepper flakes, fresh hot peppers, or canned chipotles.

Roasted Ratatouille - You can of course just use normal diced tomatoes for this. It won't have the same smokiness, but it's still just as good!

Mains (non-Vegetarian)
Greek-Style Turkey Burgers - My family makes these into meatballs, usually. They also need more seasoning than is called for in the recipe, by quite a bit. (Mint is also a nice addition to these!)

Baked Haddock with Peppers and Tomatoes - This recipe is more me just putting the concept in this collection, of white fish baked in a chunky tomato sauce. It's always just a nice, simple meal to have, especially with some rice or wild rice.

@wheatforme hi you said you wanted to look for more shelf stable foods in the tags on the post about weight gain in disabled people, and while I don't want to derail that post with this I do still want to help out so here's what I learned with the help of my former dietician.
For breakfast, cereal is a fantastic option. You'll get a ton of health nuts slamming breakfast cereals for being unhealthy but that's solely because of the sugar content. Most breakfast cereals on the market are not only cheap, shelf stable and delicious and less likely to trigger eating disorders like ARFID, but they're pretty packed with nutrients. You don't even need the fancy gross nutrition cereals froot loops have vitamins and minerals worked in to make it more nutritious for kids because of us fda regulations.
You can also eat breakfast bars, those are shelf stable and nutritious, but the portion sizes are iffy because you'll consume about twice the recommended portion before reaching satiety. That's not to say you shouldn't go over the recommended portion size, by all means eat until you are satiated, but if you are diabetic or have some other related health issues sticking to the recommended portion size might be better.
For lunch things like cracker bread, rice cakes, saltine crackers, dried fruit, protein bars and cookies are great. They're all shelf stable, you can buy them in bulk (enough for 3 months I'd say) and except for the dried fruit, if you take them out of the package and store them in air tight containers they'll hold.
Dried fruit you should ideally consume in a month tops, because it can still go bad faster than the rest, but it's very important to incorporate fiber and fruit sugars and vitamins into your diet so if fruit go bad in your house or you have arfid and differences in fruit texture triggers it, dried fruit is a fantastic shelf stable way to get those nutrients without things getting in the way.
You could also keep processed fruit juice, which a lot of health nuts will also slam but if you check the label thoroughly and it does contain adequate vitamins and minerals and fiber, it doesn't matter if it has preservatives that's a shelf stable nutrition source. Preservatives aren't evil and they very likely don't cause cancer there's just a small negligible chance that they might.
For dinner my favorite things to keep are frozen microwavable meals. Granted they're not as nutritious as fresh meals but they're still packed with nutrients so they're a good choice. They don't mess with your executive dysfunction because you literally take them out of the box while frozen, stab holes into the plastic top with a fork, put them in the microwave for 6 minutes (or however long the box says) and eat.
I also like to keep instant noodles, and not just ramen though that's pretty good snack-wise and I'll tell you in a bit why, I mean the packets of instant Mac and cheese, or pasta Alfredo, stuff like that. They're probably the least nutritious things in this entire post and they still have proteins, carbs, and calcium from milk. They're great for an energy boost when you haven't eaten in two days because nothing is appetizing and you couldn't get out of bed.
You literally throw it in a bowl, throw in milk, add boiling water and stir. Some of it you have to microwave for a few minutes, other kinds you boil on the stove for a bit, but it's quick and it's easy and it's a perfect boost when you need it.
Snack-wise I keep a huge party pack of chocolates, like pralines or wafer balls. I also keep chocolate spread and peanut butter, and both are fantastic on crackers. For instant ramen I like to get frozen cooked spinach, a big bag, and eggs. The eggs aren't shelf stable but I just use them when I have them. I make the ramen with a chunk of the spinach, and then I boil the egg, cut it up and put it in the ramen. It was the snack that kept me alive in my last year of university. It's got protein, spinach which is like a super food, and carbs. It's great.
Of course I also kept cheese and yogurt but like the eggs they were use when I had them items because my executive dysfunction didn't allow me to go shopping frequently enough to replace them as they ran out.
My real life saver though, quite literally in fact, was ensure nutrition shakes. It may be expensive but a can lasts 3 months if you drink a shake a day, and it's positively loaded with all the nutrients you could possibly need. I preferred the chocolate flavored one, but my brother liked vanilla and my university roommate liked banana.
I don't know what's available where you are, but a nutrition shake is fantastic if you struggle with executive dysfunction or arfid or both like me. You can, within limits, use it as a meal replacement. If I didn't eat for an entire day and didn't have energy to make even instant ramen I made myself a shake. You scoop 6 scoops into a tumbler, add a cup and a half of water, I used milk because I was trying to gain fat, and you shake all your frustrations out. Then you have a great tasting nutritious liquid meal.
Like I said though within limits. Nutrition shakes may have all the nutrients you need, but if you only consume that and not much else you could end up with dehydration, constipation or diarrhea, kidney problems, nausea, and excessive weight gain. One shake a day should be your cut off, and you have to consume something with a lot of fiber and a ton of water so your body can digest it properly.
That's all I have for you, though your preferences will be a lot of trial and error to see what works for you and what doesn't. I hope this helps!

.Whiskey. Trick question, I see. I like a lot of sweets, but I have to watch having them because I have diabetes. (Type 2 and it's managed with diet, exercise, and proper medication). But one thing my doctor did explain to me about nutrition is even though sweets and junk are bad for you, we can't cut them out entirely because then the body will think it's deprived of something and the cravings will go wild. She taught me it's all about moderation and portion control and that in some cases like mine there is in fact a genetic link, though losing some and watching what I eat won't hurt either. So my typical eating habits are mostly carbs like a bagel in the morning and rice and veggies at lunch or noodles, light meats like fish and chicken with veggies and a carb like potatoes, and popcorn or fresh sliced peppers to snack on, and I don't drink sugary drinks, my usual liquid intake is water and black coffee-no cream and no sugar/sweetener, and as long as I control my portion these types of foods are fine and can even help with the vitamin deficiency I have. I usually don't have sweets unless I do have a craving or my sugar is low and I have to get something in me right away. In cases like that I go for a PB&J or cinnamon sugar on toast or on popcorn or a candy bar if I'm away from home and my only option is a rest stop vending machine, to get my sugar back up and level for the rest of the night. If it was one of the few times I'd allow myself dessert, my weaknesses are strawberry shortcake, peanut butter sundaes, cinnamon rolls, pumpkin pie, or mint chip ice cream.

I didn't do anything yesterday. And as much as I need to do that sometimes, I just feel better when I get on with business as usual. I might go slower, I might not be in full "mojo mode", but I'm up and out this morning.
Another rainy, dull sky, but still the best way to start my day. Half hour home workout after that.
Full body, combination moves.
I like this one. Even though each move has a couple of different components, it's not too complicated.
Then I got my breakfast. Second day with a 14hr fast rather than my usual 15. I've had a post-dinner snack the last two days. And tonight will work out even later for my fast start, as I'm going out for a late dinner.
Anyway, I'm going steady, but at least I'm going!
I decided to be proactive with the insulin pod system problems. Made some adjustments to the settings. Yeah, I may have gone a little too far.....😳
Serious low after my second workout.
Grabbed a handful of grapes and had my first "real" coffee. That will bring it up.
It was a good routine, though. Working the upper body muscles, but definitely in that cardio HIIT principle.
It settled down, thankfully, before a lovely tuna salad for lunch.
I started working on my course last night. And today I'm on to the second unit. It's a Level 2 accredited course all about diabetes. I found a website offering government funded courses, so decided to apply for one in a subject that's useful to me both personally and that will be a great addition to my freelance coaching work.
I've been working on it today, and took a half hour break to get back outside for another little walk.
It's "date night" tonight, with a big "carvery" dinner. Three different meats, with a selection of veggies for me. There's a lot I can't have, as in a few potato options, yorkshire puddings and certain sauces, but I get a lovely big plate of food, just with what I can have!
From there we're going to meet up in a pub to do a bit of socialising with a group of like-minded (not fitness related) people.
I hate going out in the evening, but I need to spend time with real people!
