🙄 THIS IS A LONG POST SO STRAP IN OR KEEP SWIPING 🤣

than my body can handle, some days living on toast, avocado and cheese and basically not nourishing myself. It's a typical scenario isn't it! What we teach others is usually the first thing we let go of. 🤔 Can anyone relate?

This week I made some massive changes. It took reaching a low point, where I felt uncomfortable in my clothes, unhappy with my skin complexion, tired and low in energy to make the shift.

It's day 4 today and I can already feel a huge shift. And I can't believe how easy it's been to nourish myself and ultimately love myself. ❤️

I've decided to document the next 12 weeks so that I can share with you what I've been working on with my diet and lifestyle, in the hope to help others stuck in a health rut. So stay tuned…

For now, here are the top 5 things I've been doing that have been a game changer 🙌

Eat three meals a day

Meal plan the whole week on the weekend ( I've always been a fly by the seat of my pants kinda girl)

Use the cronometer app to ensure I'm getting the right amount of carbs, protein and fat for my body weight.

Eating the Plantz Ready Meals in my freezer rather than having more toast. Dha! I have a ready meals business so why not take advantage of that.

Removing fried foods and sugar

Ingredients:

• 6 eggs

• Salt (to taste)

• 1 pickle, diced

• 1 avocado, diced

• 4 slices smoked turkey, diced

• 1 tbsp butter

• 1 tbsp pine nuts

• 1 tbsp slivered almonds

• Black pepper (to taste)

• 4 tbsp honey mustard

• 4 tbsp mayonnaise

• 4 slices of bread

• Cheese (your favorite kind)

Directions:

Step 1: Boil the Eggs

1. Place the eggs in a pot and cover with water until fully submerged.

2. Add a pinch of salt for flavor and to help peel the shells more easily.

3. Boil until fully cooked (about 10-12 minutes).

Step 2: Prep the Ingredients

1. While the eggs boil, dice the pickle, avocado, and smoked turkey.

2. Melt butter in a pan over medium heat.

3. Add the pine nuts and slivered almonds, grilling until golden brown. Remove and set aside.

4. In the same pan, grill the diced smoked turkey for about a minute.

Step 3: Assemble the Salad

1. Once the eggs are boiled, cool them, peel, and dice into small pieces.

2. In a large bowl, combine the diced eggs, pickle, avocado, smoked turkey, toasted nuts, and almonds.

3. Season with black pepper and salt to taste.

4. Add honey mustard and mayonnaise, then mix everything until creamy and well-coated.

Step 4: Toast the Bread

1. Spread a thin layer of butter on each slice of bread.

2. Grill the bread on a pan or griddle over medium heat until golden on both sides.

3. Add a slice of cheese to one side and let it melt slightly.

Step 5: Build the Sandwich

1. Generously spread the egg salad mixture onto the cheese-topped bread.

2. Garnish with any extra nuts, herbs, or even a sprinkle of chili flakes for an extra kick!

3. Close with the second slice of bread, slice, and serve immediately.

Also yes, I placed a basket or 🍊 over my tofu to press them down 🤪 Anyway these are also perfect for batch cooking and the longer the tofu soaks in the sauce, the better they taste!! Best enjoyed with some steamed rice or noodles for a really hearty meal. The weather was absolutely beautiful here in Ireland over the weekend. So, we got out the BBQ, probably for the last time this year as the autumn weather is starting to show its face again. We have to make the most of every nice day here in Ireland as your never quite sure when the next one will be Lol.
