Indulge in the delightful blend of buttery, melt-in-your-mouth shortbread with a burst of refreshing lemon flavor in every bite. These lemon burst shortbread cookies are perfect for any occasion, from afternoon tea to dessert delights!

Ingredients: 1 cup unsalted butter, softened. 1/2 cup powdered sugar. 2 cups all-purpose flour. 1 tablespoon fresh lemon zest. 1/4 teaspoon salt.

Instructions: Warm your oven up to 350F 175C and put parchment paper on a baking sheet. Put the softened butter and powdered sugar in a large bowl and mix them together until they are light and fluffy. Add the fresh lemon zest to the butter and mix it in well. Add the all-purpose flour and salt to the bowl slowly while mixing it. Do this until a smooth dough forms. Make a log out of the dough and cover it with plastic wrap. Put the dough in the fridge for 30 minutes to cool it down. The dough should be chilled. Take it out of the fridge and cut it into rounds that are 1/4 inch thick. Take the baking sheet that has been prepared and place the cookie rounds on it. Leave some space between each cookie. After the oven is hot, bake the cookies for 12 to 15 minutes, or until the edges turn golden brown. Pick up the cookies from the oven and let them cool for a while on the baking sheet. Move the cookies to a wire rack to cool all the way down. With a hot cup of tea or coffee, these lemon burst shortbread cookies taste great!

Les muestro mi propuesta para el reto #67 de #latinasartsandcrafts "Ente Hilos e Hilazas" el cual consiste en realizar un proyecto y usar como parte de la decoracion cualquier tipo de hilo que tengamos en casa: hilo de coser, bordar, estambre, yute, cordel o twine. En mi caso realice un tag de 8"x 4" en tonos verde marron y beige con un toque fucsia que corta la sincronia de colores, para cumplir con el reto agregue hilo de yute y twine alrededor de la parte inferior del mismo y en la parte superior, ademas decore la flor que es el elemento principal con hilo dorado. Black pepper cumin lemon shortbread

Cumin-Black Pepper-Lemon shortbread

These are all my all time favorite cookies. I only make them when I expect company or else I finish all of them myself. The butter trips up the cumin and the pepper and the lemon and vanilla bring up the after notes and enhance the salty sweet taste. Also they are insanely simple

Recipe adapted (very slightly) from NYT recipe below

Heat oven to 350 F

In a food processor, add 1 cup all purpose flour, 1 stick unsalted butter cut into pieces, 3 tbsp sugar, 1/2 tsp cracked tasted cumin seeds, 1/2 tsp cracked toasted whole peppercorns, 1/2 tsp vanilla, 1/2 tsp kosher salt, grated zest of one lemon (1 tsp)

Whiz till mixture still crumbly but hold together when you squeeze it.

Dump out of food processor and shape into a rectangle. Either roll into 2 one inch diameter logs, refrigerate and slice into 16 cookies per log or divide rectangle to 16s and then into 32 and roll the cookies and flatten with your palm

Bake for 15-20 minutes till barely golden brown.
