Lingonberry and Whisky Sea Bass Carpaccio
This Lingonberry and Whisky Sea Bass Carpaccio makes a very elegant entrée, where the smokiness of the Whisky sublimes the raw fish, while the lingonberries and chervil brings a refreshing tang to it. And every mouthful is delightful, but the actual preparation requires very little effort (if your fishmonger has prepared your fish, that is; although I shan’t blame mine for not doing so in the midst of the Easter weekend rush at the market, for the fish and seafood is always both excellent and cheap enough! I also learned a new skill, and might try fishing myself next!) I digress; but all this to say, it really is a dish to impress someone you’re fond of with. Thus, Happy Friday!
Ingredients (serves 3):
1 beautiful fresh sea bass
1 heaped teaspoon Lingonberry Compote
1 generous tablespoon good quality peated Single Malt Whisky (like Islay Island's Bowmore)
1/2 lemon
3 heapes tablespoons frozen lingonberries, thawed
sweet soy sauce, to serve
a few leaves fresh Chervil, to garnish
If your fishmonger hasn’t prepared it, scale sea bass and rinse under cold water. Then, slit the fish’s belly horizontally, and tear off its guts. Rinse again under cold water. Cut off the sea bass’ head, and run the knife alongside the central bone to divide into fillets. Remove the bones, and cut off the tail (keep head and tail to make a delicious Fish Fumet!)
Once more using a sharp knife, cut sea bass fillets into thin slices, sliding them off the skin (keep the skin and central bone for the Fumet, or to feed your friendly neighbourhood’s cats or birds!)
Arrange sea bass slices between three serving plates.
In a small bowl, combine Lingonberry Compote and peated Whisky. Thoroughly squeeze in the juice of the lemon halve, and give a good stir.
Drizzle whisky and lingonberry marinade generously onto the sea bass, and place the plates in the refrigerator, to chill, at least half an hour.
Just before serving, scatter lingonberries all over the carpaccio onto each plate, and drizzle with sweet soy sauce. Garnish with Garden Chervil.
Serve Lingonberry and Whisky Sea Bass Carpaccio with a crisp, light, slightly citrus-y chilled dry white wine, like a Côtes de Gascogne or a Waiheke Island Pinot Blanc.

Lax Potatissallad
This hearty Lax Potatissallad, fragrant with garden Dill, and coated in a generous and tasty dressing, is best eaten slightly warm in the Winter. Especially after a rugby practise at the local park under a (very thin) sprinkle of snow! Happy Friday!
Ingredients (serves 1 hungry or 2):
3 medium potatoes
1 teaspoon coarse sea salt
1/2 small red onion
1/2 lemon
3 sprigs fresh Dill
½ tablespoon Wholegrain Dijon Mustard
a pinch fleur de sel or sea salt flakes
1/2 teaspoon freshly cracked black pepper
1 tablespoon apple cider vinegar
1 tablespoon olive oil
120 grams/4 ounces leftover Baked Salmon
Thoroughly rinse potatoes, halve them, and place them in a large pot. Add coarse sea salt, and cover with water. Bring to the boil over medium-high heat. Once boiling, reduce heat to medium, and cook potatoes until tender, 15 to 20 minutes.
Meanwhile, make the dressing. Thinly slice red onion, and add to a large bowl. Squeeze in the juice of the lemon halve, and toss, to soften. Finely chop Garden Dill, and add to the bowl. Add Wholegrain Mustard, fleur de sel, black pepper, apple cider vinegar and olive oil. Give a good stir until perfectly blended.
Once the potatoes are cooked, drain thoroughly. Allow to slightly cool, 5 minutes. Carefully peel and cube potatoes, and add them, whilst they are still warm, to the bowl. Toss gently to combine and coat in dressing.
Flake in Baked Salmon, and gently toss once more.
Serve Lax Potatissallad warm or at room temperature, sprinkled with more Dill, with a glass of chilled dry white wine.
