FRIED LENTIL BALLS WITH TAMARIND SAUCE (LADDU PETHI)

laddu pethi is a local and famous street food of Lahore. This stomach delight dish based on pethi made with gram and white lentil paste topped with plum and tamarind sauce.
Alright! Let's dive into the recipe and see what magic you can cook up. Get ready for a journey of flavors and textures that will leave your taste buds wanting more when you make this!
Ingredients
Split Bengal gram lentil powder 360 grams.
white lentil powder 60 grams.
baking powder 1 tbsp.
cumin seeds half tbsp.
salt 1 tsp.
half a cup of water for making a paste.
For garnishing:
Julienne cut radish.
Oil for deep frying
3 cups.
For plum and tamarind sauce;
tamarind 1 cup.
plum half cup.
One cu of water for soaking.
salt quarter tbsp.
red chili flakes half tbsp.
plain yogurt for topping.
sugar half cup.
Instructions:
add the lentil powder in a small bowl add cumin seeds, salt, and water.
make a medium-thick paste. Heat the oil for frying.
Add one tablespoon of paste to the oil. Deep fry them for 2 to 3 minutes.
For sauce:
Soak the tamarind and plum in the warm water for 30 minutes.
Crush the soaked tamarind and plum with the help of the hand.
Stain the use with the help of the strainer.
Add it to the small saucepan, heat it then add sugar, salt, and chili flakes in it.
Boil it until thick. Then add a small amount of sauce to the plate, if it leaves the water it means it needs more 2 to 5 to cook. When the sauce is ready. Cool down the sauce
Take a small bowl and add some pethi. Crush it with a spoon
Top it with julienne cut radish, tamarind sauce, and plain yogurt.
Enjoy it and make your lunchtime tasty and happy.

On the opening of Tim Horton’s in Lahore
I was 8 when McDonald’s opened up in Lahore, 12 when KFC opened in Sialkot, 21 when Burger King entered Karachi, and every single time I was beyond thrilled. It felt like a nod from those in control of this world, like a reassurance that we were indeed developing, like maybe we would live to see pakistan not be the third world. Every time there was concern about pakistan being a failed state someone would say, but see, now we have the scions of western capitalism, we cannot be too far from western development. It felt like a nod from a hard to impress teacher, like your school bully offering you a bite of your own lunch, like maybe, maybe, we were being invited to the owner’s suite. It was a balm to our frayed nerves, how can we be anything other than economically sound if the west is willingly investing here, if they have a stake in our future, then surely our future cannot be grim.
This, of course, was not the case. We were being invited to the table, but not as guests, but rather we were being placed on the menu. It was only after I moved here that I realised how pervasive the operating models for these chains were, open mostly in food deserts, popular in low income areas and neighbourhoods with people of color, they are one of the tools of oppression employed with precision in this capitalist state.
We half heartedly did a research month in AKU once, and our topic was to gather local opinions on the food available at a mall food court, and the public opinion was that western fast food cost more, was western, therefore it must be the healthier option, everyone ranked Pakistani food as most unhealthy. It’s hard to believe that sort of opinion is created in a vacuum, when we are constantly bombarded with white is better, fairness cream ads, fake accents, coloured lens every time someone wants to feel pretty, hair burnt from being bleached so often. Colonialism left us hating our selves and with a deep seated belief that we are less than. The global north perpetrated that belief, every time a drone strike kills hundreds of Pakistanis and none of us even acknowledge it, we accept, our lives are worth less. It’s not that we do not grieve, we are a nation riddled with grief, but the most sinister part of our grief is the acceptance, yes this happened to us, but of course we are not as valuable as them, our lives are cheaper, and so is our craft, therefore it’s less of a tragedy than if it had happened to them.
So I understand the line outside Tim hortins, hell, 10 years ago I’d probably have woken up early, dressed my best, and taken a couple hundred pictures in it myself. But I wish we could acknowledge what this is, the carrot before the inevitable stick. These profits will be shared with a global firm, even the Pakistani investors will want their share to not be in rupees, they’ll take this money and buy an extra investment property in Miami, or London, or maybe Toronto, and we’ll keep being reassured that the rupee may be in free fall, but we are on the path to becoming the west and isn’t that the ultimate goal?
I hope Lahoris lose their fascination with Tim hortons, just like they did with Pizza Hut and with Burger King. Maybe I can also believe that when they lose their fascination, and a hundred local alternatives pop up, we will, in a very small, almost negligible way, be sticking it to the man. Until then, I hope the coffee was at least worth the effort and that they tipped well.

My 100% honest review of Chatpatta Indian and Pakistani Street Food, the food truck - Lalli
Around 4-5 blocks from the back of the Moody School of Communication at the University of Texas at Austin, is a small food truck complex. If you don’t mind the short walk in the sweltering summer heat, I definitely recommend! For dinner we hit up Chatpatta Indian and Pakistani Street Food. This is what we ordered + my review in order of the photos:
1) Mango Lassi - 10/10 I’d be rlly sad if they messed Mango Lassi up lmao
2) Samosa Chaat - 7/10 It was light and mild which is perfect for how hot it was out. Although it was a tad bit too salty and super watery, so much so that it leaked all over the bag. The portion size was a bit big so make sure ur ok with it being your entire dinner.
3) Paneer Paratha Taco - 8/10 It’s pretty self explanatory in the sense that instead of a Tortilla, the filling is sandwiched between a Paratha (which is a type of Indian bread in case you didn’t know). The Paratha was flaky on the outside and chewy on the inside, so basically perfect. The vendors threw in some Paneer chunks with lettuce, onions, and a masala crema that added another layer of flavor to the taco. The paneer itself was a little bland, so that’s the big lacking point. Once again, the portion size was 2 very big tacos, so make sure you’re ok with ordering only that.
4) Lahori Channa Masala - 6/10 The dish was light and mild, once again a rlly good pairing for the hot weather. I had a similar problem with samosa chaat because both of these dishes were a little too salty and very watery. The channa masala did ,however, come with a side of rice so that compensated for the soupy texture. The portion size is decent, not too big or small.
Price wise, this place is pretty affordable considering you could get a whole meal for less than $20 per person. As far as the prices of each dish, it varies between $12-15 dollars. Added bonus, all the meat is Halal, so for our Muslim friends, go crazy! If it’s not worth the walk, the food truck offers delivery through GrubHub so homebodies have a great alternative. All in all, I’d give this place a 7.5/10. Have fun!
