Zaatar Pasta

Zaatar seasoning mix adds such a fresh taste to my regular family meal fare.  Along with the zaatar, the lemon rind and juice with pasta really heightens the flavor but doesn’t add calories particularly.  A tip - the fresher the lemon, the easier it is to grate the peel.  If you have Buddha’s hand citrus that works especially well, too.  This pasta dish would be great served with cantaloupe chunks on the side furthering my healthy eating goals - yahoo.

4 oz. dry pasta, broken up into quarters

4 t. garlic, minced

1 t. lemon rind, grated fine

1 lemon, juiced

1 t. kosher salt

1/4 c. oil

1 t. zaatar seasoning mix

1/2 c. almonds, sliced

In a large sauce pan, boil pasta to al dente.  While that’s cooking, mix garlic, lemon rind, salt, oil and zaatar - set aside.  When pasta is cooked, drain off excess water - return pasta to sauce pan.  Add almonds, pour sauce over all tossing well to cover all.
