It's just gonna be me and husband (again) for Christmas. What cookies should I bake?
I've got a stand mixer, so I could make gingerbread, but that means decorating it. I have made peanut blossoms almost every year, because I love them. I normally make whisky cookies, but this year I only have American whiskys, so that's probably out. I am probably making husband keto rum balls so he has a keto option (though he says he will eat any and all baked goods). I could make molasses crinkles, which would be a first. Another first would be bizcochitos, which I somehow haven't made since college. I'd love to make spritz, but I don't have a cookie press; maybe I could make butter cookies instead?
I was also planning on making a pumpkin Swiss roll and maybe some pumpkin bread, quite possibly from scratch. (Or I could make a pumpkin/squash soup.)
So...which cookies do I make? I can make mini batches.

Enjoy a tasty low-carb or keto-friendly breakfast treat with these Pumpkin Pie Chaffles. They taste just like pumpkin pie and can be made your own by adding your favorite toppings.
Ingredients: 1/2 cup canned pumpkin puree. 2 large eggs. 1/2 cup almond flour. 1/4 cup shredded mozzarella cheese. 1/2 teaspoon pumpkin pie spice. 1/4 teaspoon baking powder. 1/4 teaspoon vanilla extract. 2 tablespoons erythritol or sweetener of choice. Cooking spray or butter for greasing.
Instructions: Put the eggs, almond flour, shredded mozzarella cheese, pumpkin pie spice, baking powder, vanilla extract, and erythritol in a bowl and mix them together. Make sure to mix the ingredients well until they are all well mixed. Follow the directions that came with your mini waffle maker to heat it up. Grease the waffle iron with butter or cooking spray. Place some of the pumpkin chaffle batter in the middle of the waffle maker. Put the lid back on and cook for three to four minutes, or until the chaffle is crisp and golden brown. Take the pumpkin pie chaffle out of the waffle maker with care and put it on a plate. To make more chaffles, do the same thing again with the rest of the batter. Serve the pumpkin pie chaffles hot with your choice of toppings, like sugar-free syrup, whipped cream, or chopped nuts. Have fun with your tasty, low-carb pumpkin pie chaffles!

What’s in Halloween Jello Shots
The pumpkin pie mix, the pie crust and the whipped cream on top will make you think you just took a bite of pumpkin pie.
Pie Crust: Refrigerated premade pie crusts from the grocery store work great! However, you can always make homemade pie crust if you’re feeling fancy.
Gelatin: You’ll need unflavored gelatin! The flavor in these shots comes from the other ingredients.
Pumpkin Pie Filling: If you can’t find this, just use pumpkin puree with some pumpkin pie spice mixed in.
Alcohol: I like to use white rum, but vodka also works! Use your favorite.
Sugar: White granulated sugar creates the perfect amount of sweetness.
Heavy Whipping Cream: Do NOT substitute this with any other dairy product.
Whipped Cream: Because no pumpkin pie is complete without some on top!

1/2 cup white rum or vodka

Instructions
Step 01
Unroll pie dough and cut into small c.ircles (I used the top of an ice tea glass to get small circles.) Place circles in small muffin/cupcake tin and bake according to package instructions. Set aside and allow to cool.
Step 02
Pour 1 cup water into a medium saucepan and sprinkle gelatin packets over water. Let sit for 2 minutes before turning on heat.
Step 03
Turn stove to medium-high heat and add pumpkin pie filling and sugar, stirring as you add. Allow to simmer and then turn off the heat and set aside to cool.
Step 04
Add rum or vodka, heavy cream, and an additional 1/4 cup water to the mixture and stir until well combined.
Step 05
Pour gelatin mixture into pie crusts and place in the refrigerator overnight or for at least 8 hours
Step 06
Top with whipped cream if desired. Enjoy!

Cut pie crust dough to fit your mini muffin pan. A skinny glass, a small biscuit cutter or a shot glass will work. Get creative to find what works for your sized pan!
Pumpkin pie filling works best in this recipe. You can use solid-packed pumpkin as well, but you’ll want to add pumpkin pie spice and some sweetener for the best effect.
When you sprinkle gelatin over water and let it stand, that process is called blooming.
If you have a party you’ll be attending, be sure to make these Pumpkin Pie Jello Shots the day (or night) before. These shots need at least 8 hours to set.

ok so i planned on only spending $15 while shopping because i thought my budget would be a bit smaller than normal ($20 average) but my mom said i could spend up to $30 (but she let me go over a little because i forgot to budget for a drink)
i now have a sf root beer, a big can of pumpkin purée, big thing of zero sugar greek yogurt, 2 chicken pouches, 2 tuna salad pouches, a big bag of salad mix, 2 packs of pink starburst flavoring, another loaf of keto bread, a bag of mini cucumbers, and turkey slices, on top of that my mom got 4 boxes of energy drink powder and 3 boxes of i think electrolyte powder for us to share :3
i'll be eating GOOD the next week or two, plus this isn't even everything on my list, most of the other my mom just kinda pointed at things she knows i like and was like "eh just get two, get the bigger one, you're fine" so yea 😭
