Anti-Keto Cookies, 😂 Peanut butter cookies topped with a milk chocolate Hershey's Kiss. Beloved wife makes these cookies for the students at the fancy private boys' school where she teaches. The boys, being boys, call them "nipple cookies," lol.
These are great cookies 🍪, but you could almost say they are the "anti-keto cookie." But after 3 or 4 years on this diet, my cravings for sugar have subsided pretty much.

one thing I've learned from baking is that recipes will just lie to you about how long prep time takes. "prep time 15 minutes" "prep time 10 minutes" that shit takes 45 minutes if you're lucky, and usually you're not lucky. the only recipe I've ever made with a genuine 15 minute prep time was the "3-ingredient keto peanut butter cookies" recipe

Ingredients: 1 cup almond flour. 1/2 cup natural peanut butter. 1/4 cup powdered erythritol or monk fruit sweetener. 1 egg. 1/2 teaspoon vanilla extract. Sugar-free chocolate chips or chopped dark chocolate optional, for decoration.
Instructions: Warm the oven up to 350F 175C and put parchment paper on a baking sheet. Almond flour, peanut butter, powdered sugar, egg, and vanilla extract should all be mixed together in a bowl. Mix until you get a dough. Between two pieces of parchment paper, roll out the dough until it is about 1/4 inch thick. Use cookie cutters in the shape of hearts to cut out hearts from the dough. Then, put the hearts on the baking sheet that has been prepared. Put it in an oven that is already hot and bake it for 10 to 12 minutes, or until the edges are golden brown. Let the cookies cool all the way down on the baking sheet. Possible: Sugar-free chocolate chips or chopped dark chocolate can be melted in a bowl that can go in the microwave. Stir the chocolate every 30 seconds until it is smooth. To make the cookies look nice, drizzle or spread melted chocolate over them. Gradually add the dry ingredients to the wet ingredients, alternating with almond milk, until a thick batter forms. Drop spoonfuls of batter onto the prepared baking sheet, forming 24 cookies. Bake for 10-12 minutes, until cookies are set. Allow to cool completely. Spread a generous dollop of peanut butter filling see below onto the flat side of half of the cookies.
