As the days get colder I crave hot pots of Filipino food and rice more and more. Ginataang calabasa with butternut squash, with some sili or chilis hits the spot.

Japan Part 3
Itinerary: Your Name location, Cup Noodles, Gundam Factory, and Kamakura.
First full day namin today. Maaga kami gumising para pumunta sa location ng 'Your Name' yung famous stairs. Good thing, walang gaanong tao nung dumating kami siguro kasi maaga pa. Same lang yung itsura ng hagdan sa anime at real-life. We took some photos and videos then we went to Family Mart to eat muna. Ang sarap ng Onigiri huhu.
Next stop: Cup Noodles Factory. Since we always see this, we decided to visit. There wasn't much to see except noodles. We doodled on our cups and created our own noodles. I added chicken and squash. SQUASH? WHY, PAT? (Niluto ko na, hindi yummy yung kalabasa).
We cannot decide kung Gundam or Kamakura muna vivisit namin pero in the end hinuli nalang namin ung Kamakura para maganda ung shots ng sunset.
Nung nasa Gundam Factory na kami, sira yung gundam HAHAHAHA. siguro 1hr din kami naghintay bago magawa yung Gundam at mag-start yung show. It was nice.
I was also amazed na pati ung uniforms ng student is same sa Slam Dunk. We took photos and videos lang and umuwi na since gabi na. I love this place sayang lang kasi late na namin sya navisit.

Last day of my 2 day off. It sucks. Woke up with Ed not by my side because he knows he might wake me up. That's so considerate of him.
Ate the remaining cookies and shared one with Ed downstairs. He cooked some pakbet and it was so good because we had the real kalabasa and not the butternut squash that we have here. We're going to pack it for our lunch tomorrow. My GP called me and prescribed something for my constipation. I'll try it but it seems to me that I might not know what I was saying earlier. I'll ask for an investigation soon. My constipations is getting better but I sometimes have to strain because I feel it's incomplete when I poo sometimes. That's what I hate. Maybe it's my diet or what but I'm not really happy with it.
Spent the day just being lazy and watching reels and drowning in the algorithm. That's what lazy days are meant for isn't it? I saw that I have a bank shift on Saturday and it's an IPP list. My very first one. I'm going to do it because it'll pay me more than a regular day. I'm so glad I was booked by Sam. I'll have extra dough to save up for my US trip.
Today's been so lazy but that's fine. I skipped gym today because my body can't handle lifting today. I'll go early tomorrow since I'm on a late shift and would have the chance to workout.

Kare-Kare Special
A famous native Filipino dish that is mostly served when there's a big celebration. The popular classy restaurants here in the country, they have this in the menu list.
Tumblr media
Do you know what a tripe is? It's the cow's interior.
Here's how I prepare it.
Make the tripe tender through a boiling water.
Tumblr media
2. Prepare the pumpkin or squash, whichever you want to call it, it's up to you, but in Filipino, there's only one name, we call it "kalabasa".
Tumblr media
3. Saute the garlic and onion. Add the tendered tripe and sliced squash. Mix well, and add water. Cover for 5 minutes, in low heat. I do not have the shrimp paste which is the original partner for this. What I did, I add some seasoning, salt and pepper. Cover again for another 5 minutes after mixing.

4. Blanch the string beans and eggplant until half-cooked, then add the green cabbage. In Filipino, that is "pechay".
Tumblr media Tumblr media
5. Drain the meat and vegetables. Set aside.
Tumblr media Tumblr media
6. You may add annatto powder if you wish for coloring purpose.
Tumblr media
7. Drop the ground peanut into the hot soup and mix well until thick. Turn off the heat. In a bowl, add this peanut mixture and on top of it, add the mixed tripe and vegetables.

Thats it. It's finished. Get your plate and take your meal.

Ginataang Calabas
Tumblr media
Any dish prepared with wonderful coconut milk is referred to as ginataan. It is deliciously creamy and gives the crisp, fresh flavors of the vegetables we already know and love a lovely twist. Particularly in areas like the Bicol region, ginataan is very well-liked. Coconut milk and a lot of spice are two ingredients that Bicolanos adore in their food.
It is crucial that you prepare all of your ingredients before beginning to cook your Ginataang Kalabasa at Sitaw. Slice the string beans, also known as sitaw, into pieces that are approximately 2 inches long. Also cube the kalabasa or squash. Your chopped onions, ginger, and garlic are other items that could also need to be prepared (crushed).
Ingredients
1 1/2 lbs. squash cubed
18 pieces string beans cut in 2-inch pieces
1 piece Knorr Pork cube
3 ounces pork sliced into small pieces, preferably boiled
4 cups coconut milk
1 piece onion chopped
2 thumbs ginger sliced into strips
5 cloves garlic crushed
¼ teaspoon ground black pepper
1 tablespoon cooking oil
Fish sauce to taste
Instrunctions
In a pan, heat the oil. Embrace pork Cook till crisp and golden. Saut the ginger, onion, and garlic. Pour the coconut milk into the pan once the onion has softened. Stir. Boil the liquid while the pan is covered. Once boiling, reduce the heat to medium and let it simmer for an additional five minutes. Add squash and Knorr Pork Cube. 5 minutes more of cooking is required. Include string beans. For 5 to 8 minutes, cook. When necessary, season with fish sauce and freshly ground black pepper. Onto a serving platter after transfer. accompany with heated rice.

First, we farm! A female flower and looks like it’s been pollinated. The shape of the soon-to-be fruit should be available soon. Looks like there will be a lot of roasted squash soup. . . . #farm #squash #fruit #vegetables #organicallygrown #kalabasa #farming #green (at Lipa, Batangas) https://www.instagram.com/p/CK6YAVOHfn84gSb-gKxZIbC8xNlh9903AZCvwU0/?igshid=1eeyr1x1khbjn
