ok all of these will be under the caveat of. being cooked indian style. i am too unused to vegetables cooked other ways and am generally greatly bothered by their textures. when i eat veggie noodle it is actually just noodle. and egg.
i'm also gonna link random recipes that i have not tried and cannot vouch for the qualities of but just to give an idea of how i eat them
okra (bhindi masala - we don't make this with any of the additional stuff like onions/tomatoes, it's just the okra and spices stir fried)

Paratha (pronounced [pəˈɾɑːtʰɑː], also parantha) is a flatbread native to the Indian subcontinent, with earliest reference mentioned in early medieval Sanskrit, India; prevalent throughout the modern-day nations of India, Pakistan, Nepal, Bangladesh, Maldives, Afghanistan, Myanmar, Malaysia, Singapore, Thailand, Mauritius, Fiji, Guyana, Suriname, and Trinidad and Tobago where wheat is the traditional staple. It is one of the most popular flatbreads in the Indian subcontinent and the Middle East. Paratha is an amalgamation of the words parat and atta, which literally means layers of cooked dough.
The paratha is an important part of a traditional breakfast from the Indian subcontinent. Traditionally, it is made using ghee but oil is also used. Some people may even bake it in the oven for health reasons. Usually, the paratha is eaten with dollops of white butter on top of it. Side dishes which go very well with paratha are curd, fried egg, omelette, mutton kheema (ground mutton cooked with vegetables and spices), nihari (a lamb dish), jeera aloo (potatoes lightly fried with cumin seeds), daal, and raita as part of a breakfast meal. It may be stuffed with potatoes, paneer, onions, qeema or chili peppers.

I made jeera cookies and kachumber salad (with homemade chaat masala) and was going to make red lentil dal with panch phoron but I burned my tarka and ruined the lentils, so I made matar aloo instead. I think I've perfected my vegan restaurant style curry base--it uses a full half cup of coconut based heavy cream. still not as creamy as takeout, but that's to be expected.

Boiled Potato- 5-6 Medium Size Cooking Oil- 2tbsp Hing- 1 Pinch Fennel Seeds- 1 tsp Cumin seeds- 1 tsp Dry Red Chilli- 2 White sesame seeds- 1 tsp Turmeric Powder- ¼ tsp Kashmiri Lal Mirch Powder- ½ tsp Chilli Flakes- 1 tsp Amchur Powder- 1 tsp Salt to taste #aloomasalafry #jeeraaloo #jodhpurialoomasala Written recipe 1.In a pan put 2 tbsp cooking oil and temper with Hing, Fennel seeds, Cumin seeds, Dry Red Chilli and white sesame seeds. 2. Now add Potato and fry for 2 minutes on medium flame then cover it for 2 minutes. 3. Open the lid after 2 minutes and now add turmeric powder, red chilli powder, chilli flakes , Amchur Powder and salt. 4. Now again Cover the lid for 2 minutes. 5.
