Vegan Yack Attack’s Plant-Based Meal Prep

Meal planning is something I have always wanted to try. I remember having the calendar out, allotting two days each week to husband, daughter and son and letting them choose the menu for the days that were theirs but it never lasted long. I know that planning is supposed to save time but so far have always found the organizational skills lacking or time lacking or whatever.
I believe THIS book would be beneficial to any number of plant-based vegan eaters who would like to begin planning meals for one or an entire family. The information is succinct about how to set yourself up for success and includes information on how to choose meals, where to find the recipes in the book, how to create a shopping list, what to put the food into for best storage, a four week planning device (again with recipes and page numbers) and plenty of delicious recipes to plunk into a planning grid when you are ready to begin.
The recipes that grabbed my interest were:
* Lemon-rosemary chickpea pasta casserole
* Naked seitan picata
* Peanut butter pancake sandwiches
* Shakshuka (really would love to try making those “eggs”)
* More than one snack/dessert
* Lentil walnut sausage crumbles (though I can’t find some of the ingredients where I live)
* More than one dressing/sauce
My only quibble is that more than one of these recipes requires an item I cannot find in local grocery stores but if I lived where I could find those ingredients I would make quite a few of the recipes in this book and give meal planning and prepping a try.

Easy Vanilla Chip Buckwheat Bars

I have a new snack recipe for you, and it is good.
Soft and chewy with crisp edges, these bars are good eats. Fragrant vanilla and melty pockets of chocolate make a great flavor combination. These Easy Vanilla Chip Buckwheat Bars are vegan, and made without oil.
For those with allergies, they are also naturally gluten free and nut free.
Packed with fiber and flavor, this quick and easy bar just may make its way into regular rotation. I have already made them twice in a very short time.
Portable, Quick and Easy Recipes For Fast Paced Life
These bars are a terrific portable snack. They also fall under the categories of Make Ahead, One Pan, and Under Ten Ingredients.
Pretty easy ingredients, too – I already had every ingredient available in my pantry except the buckwheat groats. Those were easy to find in the bulk area of several grocery stores near me, and you can also count on Bob to come through if needed.
a spabettie note on ingredients: Buckwheat groats are naturally gluten free, and are often a sub for pearl barley when making a recipe gluten free. The second time I made these bars, I used pearl barley – one cup barley for 3 cups water – and they were so very similar to the original recipe. If you do not need to be gluten free and happen to have a cup of pearl barley already on hand, these bars can be yours in about an hour!
Vegan Yack Attack On The Go!
This new favorite snack recipe comes from Jackie’s second book, Vegan Yack Attack On The Go! – Plant Based Recipes for your Fast Paced Vegan Lifestyle. I have only had a short time with this book so far, but I can already tell it was a labor of love for my friend Jackie.
The recipes are fun, and the few that I have already tried? Super tasty good.
This book makes me want to go camping!
…or at least do more cooking outside.
But truly – I used to love camping and hiking, and can see how so many of these recipes fit into that sort of event – from the Foiled Strawberry French Toast to the Campfire Banana Splits, the recipes are portable and easy, and many can be made in advance.
To bring with you on that camping trip.
The “Food On The Move” chapter includes recipes like an Asparagus Omelet in a Bag, a bunch of recipes for Grill Packets, my favorite – Cheater Chilaquiles.
The “Meals In 30 Minutes or Less” section has all kinds of recipes if you are staying home – as Jackie says, in the time it takes to wait for a table at your favorite restaurant, one of the recipes in this chapter can be on your table.
Tasty goodness like Pineapple Teriyaki Burgers (those are GOOD – the first thing we tried!), Sheet Pan Squash Tacos, and Savory Puff Pastry Tartlets. There is a Hearty Skillet Cornbread I cannot wait to try, and a Party Nacho Platter that is happening soon as well.
As far as these Easy Vanilla Chip Buckwheat Bars go? I already tested and can highly recommend their portability – I made a batch to take on our vacation last month – they were appreciated on the nine hour overseas flight, for sure.
(tucked into my favorite Vegan Reversible Tote that is also great for travel…)
Now that we are back home from vacation, we will be working through the extensive list of recipes we have marked to try.
Like the Pumpkin Maple Donut Holes – those are definitely next. They include a Cream Cheese Dipping Sauce.

Easy Vanilla Chip Buckwheat Bars
YIELD: 12 bars
dairy, egg, soy, oil, nut, and gluten free, vegan, one pan
INGREDIENTS:
1 cup (180 g) buckwheat groats 2 cups (475 ml) water 2 cups (230 g) gluten-free rolled oats 1 cup (130 g) pitted dates 1/4 cup (60 ml) agave nectar 1 teaspoon vanilla extract 1/2 teaspoon salt 1 cup (160 g) vegan chocolate chips 1/2 cup (40 g) unsweetened shredded coconut
INSTRUCTIONS:
Preheat the oven to 350ºF (180ºC, or gas mark 4), and line a baking sheet with parchment paper.
In a small pot, bring the buckwheat groats and water to a simmer over medium-low heat. Cook the grains for 5 to 7 minutes, uncovered, until tender. Strain off any excess liquid, allow it to cool for 10 minutes.
Place the buckwheat in a food processor with the oats, dates, agave nectar, vanilla, and salt. Pulse until the mixture is combined, and the oats and dates are slightly broken down.
Fold the chocolate chips and coconut into the bar mixture until evenly mixed, then spread the mixture out into a 9 x 12-inch (23 x 30-cm) rectangle, a ½-inch (1.25-cm) high. Using a pizza cutter or knife, cut twelve 2.5 x 4-inch (6.25 x 10-cm) bars out of the rectangle without separating them.
Bake the bars for 30 minutes, then flip them, separating the bars at their perforations. Bake for 15 minutes until they begin to brown around the edges. Cool on a rack for 15 minutes for serving, or for 45 minutes before putting them into a container with a moisture absorbing packet.

Protein and snack bars are a lifesaver for me when traveling, but some are filled with all kinds of wild ingredients that are hard to recognize. Chipotle Tofu Rainbow Wraps
The end of summer is nearing, and that means it’s time for some back-to-school recipes! Try these crispy chipotle tofu rainbow wraps out, to make everyone envious of your fresh, flavorful lunch.

It’s been a minute since I last was in school, but easy-to-make lunches still come in handy! That’s why, for August, I’m going to be focusing on some quick, pack-able meals and snacks. Now, I have to say that my newest book, Vegan Yack Attack On the Go!, has this down pat, already. But, I can’t just go sharing all of the recipes from that, now can I? And speaking of the book, it’s up for a VegNews Veggie Award! So, if you can, please go give it a vote. <3
Now, back to this chipotle tofu rainbow wrap! I feel like the name may be pretty obvious, but let’s list it out: air-fried chipotle tahini tofu, plus an easy hummus sauce, are the stars. Then, there’s a ton of fruits and veggies: cabbage, romaine, carrots, avocado, red onion, and tomato! All wrapped up in a large tortilla; but, if you want a gluten-free option, just use a GF wrap or dump the contents into a bowl. Either way, still super delicious.
As for a tip, I toasted my wraps because I love the crunch and flavor. But, if you’re going to pack them away for lunch, maybe do a really light toast or none at all because it will soften as soon as you wrap it up. Another tip, I got a TofuXpress for my birthday a couple of years ago and it has been a GAME CHANGER! Seriously worth the money and I looove how much it expedites the pressing process.
If this whole wrap sounds amazing but you’re avoiding soy, chickpeas would be great in place of tofu. Plus, you could replace the liquid aminos with coconut aminos or more salt. I haven’t given that a try myself, so I can’t guarantee it’ll be the same, but if you do let me know! Lastly, this chipotle tofu rainbow wrap was great served with some fresh grapes, but you could pack a banana or seasonal peach for a well-rounded lunch.

Tofu pressing time 20 minutes

Crispy Chipotle Tofu
14 ounce package extra-firm tofu drained and pressed for 15-20 minutes
1/4 cup tahini
1/4 cup nutritional yeast
2-3 tablespoons water
4 teaspoons liquid aminos
1 tablespoons apple cider vinegar
1/2 teaspoon ground chipotle powder
1/4-1/2 teaspoon salt to taste
Hummus Spread
1/2 cup plain hummus or whatever flavor you prefer
2 tablespoons diced green onions
1 tablespoon dijon mustard
1/8 teaspoon black pepper
Assembly
2 cups chopped romaine lettuce
1 cup shredded red cabbage
1 cup peeled carrot ribbons or julienne-cut
1 cup tomato slices halved
1/2 cup thinly sliced red onion
1/2 cup sliced avocado
4 large (12-inch) tortillas or 8 gluten-free tortillas
For the tofu: In a medium mixing bowl, whisk together tahini, nutritional yeast, water, liquid aminos, apple cider vinegar, chipotle, and salt, until combined. Chop tofu into 1/2-inch cubes and add them to the bowl, tossing them to be evenly coated.
Transfer mixture to an air fryer basket*, and spread out into a single layer. Cook at 400F for 10 minutes, then take out and gently stir the cubes around. Cook for another 10 minutes at the same temperature, or until golden brown and crispy. While it's cooking prep sauce and filling.
For the hummus sauce: In a small bowl, whisk together hummus, green onions, dijon mustard, and pepper. Taste and adjust seasoning to your liking. Refrigerate until ready to assemble.
To assemble chipotle tofu rainbow wraps: Lay out one tortilla, and smear roughly 2 tablespoon of hummus in the center. Place 1/4 of the tofu on top, then 1/2 cup romaine, 1/4 cup cabbage, 1/4 cup carrots, 1/4 cup tomato slices, roughly 2 tablespoons red onion, and 2 tablespoons avocado.
Fold two sides of the tortilla over the filling, then fold one side over that, keeping the filling taught, then roll until your wrap is laying atop the last side of the tortilla. Repeat for the remaining three wraps. Optional: Toast two sides on a panini press or on a hot pan. Serve!
*To make this in an oven, preheat to 400F and line a baking sheet with parchment paper, and spread tofu out in a single layer. Bake for 15 minutes, then flip tofu pieces over and bake for another 15-20 minutes or until cubes are golden and crispy.
