I spoke to Katherine O’Donnell, a Wycliffe member living in Tanzania, about her work of Scripture engagement.
What do you do in Tanzania? My goal is to help people to engage with the Bible in the language that’s most appropriate for them. When I say engage with, that can be anything from helping them first of all to get hold of a Bible, whether that be written or audio, and to being able to read or listen to it, to being able to understand and think about it, and to being able to apply it to their own lives and be changed by it.
How did you come to be involved in the work of Wycliffe, and Scripture engagement? I’ve always had a bit of a thing about Africa. As a child, I was really inspired and excited by missionary stories. When I was in my early teens, a couple who worked in Malawi came to speak at our church. They brought some African artefacts, and we sang a Malawian-style song, which I thought was great. But even though I had a bit of a thing about Africa, I wasn’t thinking of going there myself.
As I went through school I started to think maybe I wasn’t just meant to send money that way, but rather to go there myself. After school I took a gap year in Kenya through Wycliffe, and spent six months home-schooling some American children in a remote village. That was my first personal encounter with working overseas, and it confirmed to me that that was the direction God wanted me to take.
I was advised to get some normal life experience rather than go straight into working with an organisation, and get some Bible college time. So that’s what I did. After university I worked for two years as a public health nutritionist and then spent two years at Bible college. For my Bible college placement, I ended up going back to Kenya and training Sunday school teachers for a few weeks. And I absolutely loved it! This was more like what I wanted to be doing, as I was getting more concerned with people’s spiritual nutrition rather than their physical nutrition.
Wycliffe previously hadn’t seemed like quite the right fit for me – but then I somehow found out about the Scripture engagement side of Wycliffe’s work. And suddenly it was like this stuff I want to do and was gifted in doing, came together with this organisation I had so many links with and that I knew so much about. That’s when I decided to apply to Wycliffe and did my training. I wanted to work in Africa, and I’d been to Kenya, so we looked at East Africa, and the best fit seemed to be the Mbeya Cluster Project in Tanzania.

What’s the most rewarding thing about your work? I think it’s seeing my local colleagues grow in their understanding of the Bible, and in their ability to teach. I also love it when I get to teach, and see people engaging with and having fun with the stuff we’re doing. I spend a lot of time training Sunday school teachers, and I love seeing these adults enjoying themselves playing games, and then later hearing anecdotal stories that their Sunday schools have got bigger because they’ve become more fun.
What keeps you going when you find your work difficult? My Tanzanian colleagues are a huge encouragement to me, but even bigger than that is the hope that we have in Christ. A few years ago I went through a very difficult time spiritually. It was really hard – I couldn’t pray, I couldn’t sing, I was grappling with big questions about my faith, partly due to one of my MA modules exploring God’s providence and suffering. This culminated in what some might call ‘the dark night of the soul’ in my walk with God. One Sunday evening I decided not to go to church, but instead stayed home and for some reason felt like reading the whole of the book of Hebrews! There had been one verse from Hebrews 11 going round and round in my head – ‘Now faith is being sure of what we hope for and certain of what we do not see’ – and so I just decided to read the whole book. As I read it, it was as if light suddenly started to shine into the ‘dark night’ that I was going through. A significant theme in the book of Hebrews is persevering because of the hope that we have in Christ, and this theme resonated in the midst of all my questions. Life can be very hard, suffering is everywhere, but without God we have no hope, without Christ and his resurrection there is no reason to carry on living. So we have to keep trusting. Because where else is there hope?
Do you find it difficult being single on the field? Yes and no. I think the hardest thing about being single in the work that I do is that there’s so much transition, which can make you feel more vulnerable, because there’s no-one taking that transition with you, there’s no-one who knows both parts of your life. And so then it feels like I have these two separate identities, and there’s no one that shares that with me. So in that respect singleness is hard. In other ways, it makes things easier, because I have more freedom to travel, and things like that. But there is a cost as well. It should throw us back on God, because he’s our constant companion, and it does to some degree, but I can’t touch God, I can’t feel him, I can’t hold his hand. But at the same time I think God is really kind and faithful. He’s given me friends, and people that I can be with. It’s not a husband, but they’re people who I can spend time with, I can have a hug with, I can share my life with, and that’s really valuable.
Teaching outside
What would you say to someone else considering this work? Come and join us! This work is so important! Here in the UK and Ireland, we are so blessed with multiple ways of engaging with Scripture. We have all sorts of resources at our fingertips, but in Tanzania, it’s not like that. A lot of people can’t read, or don’t find reading easy. Most of the resources that we use rely on some level of literacy, or a desire to read, or an ability to critically examine text, because that’s how we’re trained educationally – but their education system is different. So it’s really important to help people learn simple tools for engaging with the Bible, and to make the Bible accessible in places where people can’t easily pick up a Bible and read it and understand. It’s exciting work - you get to be out there engaging with people, although there’s a lot of time behind a desk as well. And it’s a privilege to come alongside people and teach and train and support in that way. Translating the Bible is not enough on its own. There are too many stories of Bibles sitting in boxes not being used because we don’t have people out there helping people to engage with the Bible in their language, teaching them how to read in their language, making audio resources or visual resources available to them. The Holy Spirit can of course take and use God’s word, and write it on someone’s heart, but just think about your own life. I haven’t just grown up reading the Bible on my own and letting the Holy Spirit teach it to me.
Any missionary myths you want to dispel? Missionaries are NOT super holy. We haven’t got it all sorted! People sometimes have the idea that missionaries have things more sorted spiritually. And I don’t think we do.
How can readers pray for you? It’s a constant prayer request for me that I would know God more. I can’t do this work and have a half-hearted relationship with God. I want to know him more, understand him more, understand his character better, so that I might become more like him, and worship him, love him and serve him better.

The Hard-Working Irish Laborers Who Drank 14 Pints of Beer a Day
For many, Ireland is synonymous with green meadows and Guinness. As it turns out, associating Éire with beer isn’t entirely unfounded. In 2017, an Irish historian and lecturer presented a shocking discovery at a food research seminar in London. In 16th-century Ireland, laborers drank more than two gallons of beer per day.
Dr. Susan Flavin, who is now associate professor of history at Trinity College in Dublin, presented documents dated January 1565 indicating stonemasons at a Dublin quarry were permitted a daily allotment of “14 pints of ale.”
This led to a pressing question: “Were people drunk all the time? We’ll possibly never know,” Flavin told the Irish Times in 2017.
The details, as we imagine those ales may have been, are hazy. For one, Flavin said, “We don’t know how strong the beer was.” She estimated 7 percent ABV — close to a modern double IPA.
It was also high in oat content, which may sound trendy today — oats, once reserved for stouts and porters, are now a key component of the ubiquitous hazy IPA — but for lower-class laborers, they were a necessity.
At that time, Irish crops were burning, barley was difficult to harvest, and wheat was expensive. Oat-rich ale “was seen as good for energy and health, and was thought to have restorative properties,” Flavin said.
It was also highly caloric, between 400 and 500 calories per pint. By comparison, today’s most popular beers rarely exceed 150 calories. And, even with the recent rash of low-cal, low-carb lagers and ales aiming to fit into active lifestyles, few nutritionists would recommend beer as a staple of a healthy diet.
Nevertheless, Flavin’s discovery was well-received. In 2018, her research was awarded €1.5 million in funding from The European Research Council. She’s now leading a project called FoodCult, which “seeks to understand food and drink culture in Ireland more broadly,” Flavin tells VinePair.
The best part? Flavin is working with a team of experimental archeologists, a museum, and a German brewing scientist to recreate the ancient beer. The global team is “using period methods and ingredients” to recreate the beer, including growing heritage grain and hops with suppliers in the U.K. and Ireland, and using a historic mill built by 17th-century Quakers from Ireland. “We even have a cooper coming out of retirement to build us a mash tun,” Flavin says.
The beer will be brewed at the Weald and Downland Living Museum in Chichester, England in November 2019.

You’re Drinking Diet Sodas

It’s a logical assumption: Switching from a sugar-based soda to a non-sugar-based soda should help your health. While calorically speaking that might be true, diet sodas contain their own dangers and side effects. In a shocking study, researchers at the University of Texas Health Science Center monitored 475 adults for 10 years and found that the participants who drank diet soda saw a 70 percent increase in waist circumference compared with those who didn’t drink any soda. So much for the idea that diet soda helps you diet. That’s not all: The participants who drank more than two diet sodas a day suffered a 500 percent waist expansion. Yikes! The same researchers conducted a separate study on mice that indicates it might be the aspartame that causes the weight gain. Aspartame raises blood glucose levels to a point where the liver cannot handle it all, so the excess glucose is converted into fat.

You’re Brewing the Wrong Tea

A steaming cup of tea is the perfect drink for soothing a sore throat, warming up on a cold winter’s night, or binge-watching Downton Abbey. But certain teas are also perfect for doing something else — helping you lose extra weight. Pu-erh tea, for example, can literally shrink the size of your fat cells! To discover the brew’s fat-crusading powers, Chinese researchers divided rats into five groups and fed them varying diets over a two-month period. In addition to a control group, there was a group given a high-fat diet with no tea supplementation and three groups that were fed a high-fat diet with varying doses of pu-erh tea extract. The researchers found that the tea significantly lowered triglyceride concentrations (potentially dangerous fat found in the blood) and belly fat in the high-fat diet groups. It’s a natural fat blaster, along with barberry, rooibos and white tea.

You Eat Mostly with Big Groups

When we eat with other people, we consume, on average, 44 percent more food than we do when dining alone. Research published in the journal Nutrition found that a meal eaten with one other person was 33 percent larger than a meal savored alone. It gets scarier from there. Third-wheeling with two friends? You’re looking at a 47 percent bigger meal. Dining with four, six, or 8+ friends was associated with meal increases of 69, 70 and 96 percent, respectively. Though part of this has to do with the amount of time we spend at the table when dining with company, another study from the journal Appetite found people who spent longer eating because they were simultaneously reading didn’t eat significantly more, meaning time isn’t the only factor at play here.
Eat This, Not That! Fix: You can still hang out with your friends. Just vary the activity once in a while, and include short runs or walk-and-talks. You’ll save money and calories.

You’re Married to Your Bestie

For better or … fatter? Research suggests a committed relationship has the potential to wreak havoc on your diet. A study in the American Journal of Public Health analyzed the impact spouses, friends, and siblings played on dietary patterns over the course of 10 years. Couples had the greatest influence on each other’s eating habits, particularly when it came to drinking booze and snacking.
Eat This, Not That! Fix: The good news is the “halo effect” applies to healthy habits too. A Harvard Public School of Health study found that people on a weight-loss program who had the support of at least one partner lost 6.5 pounds more than those going it alone. A University of Illinois study found that groups of people tend to order similarly, especially when forced to give their order out loud. The researchers attribute the results to the fact that people are happier making similar choices as their peers.

You ‘like’ Facebook in Bed

Spending hours on Facebook, Instagram, and Pinterest when you could be up and about burning calories is a growing health concern, health experts say. A study of 350 students from the University of Ulster in Northern Ireland found that the more time they spent on Facebook, the less time they spent exercising or engaging in team sports. Particularly fattening is catching up with your social networks before bed — or even in bed! A study in Pediatric Obesity found students with access to one electronic device in their bedrooms were 1.47 times as likely to be overweight as those with no device in the bedroom. That increased to 2.57 times for kids with three devices.

You Don’t Eat Mindfully

Be mindful about eating mindfully. The practice has ancient Buddhist roots. It is, in fact, a form of secular meditation, asking us to experience food more intensely, paying close attention to the sensation and purpose of each bite. Mindful eating is not a diet — and it doesn’t ask you to eat less — but the approach is gaining traction as a successful weight-loss mechanism. In fact, recent studies have shown that mindful eaters respond less to emotional stress, consume significantly fewer calories, and have an easier time maintaining a healthy BMI compared with those who are unaware.
Eat This, Not That! Fix: Chew slowly. Tune in to the texture, the smell, and complexity of flavors. Keep chewing. Swallow. Take a sip of water. And for a few moments, resist the urge to take another bite. Continue this way throughout the course of a meal and you’ll experience the pleasures and frustrations of mindful eating.

“We eat for many reasons, but the main prompt for mindful eating is physical hunger,” says registered dietitian nutritionist Leslie Schilling. “It’s hard to be present if you’re eating at your desk, cyber-loafing, or watching television. When your mind is focusing on something besides your food, you don’t realize things like ‘Was the food actually good?’ and ‘Am I getting full?’ This often leads to ‘do-over eating,’ which isn’t so mindful. The warm smell of cinnamon, the charred stripes on a grilled chicken breast, the crunch of an apple … Experts say paying attention to the sensory details of food is a simple way to start eating mindfully — and start dropping pounds. In fact, a study in the journal Flavour found that participants who took time to appreciate the aroma of a meal ate significantly less of a dish that smelled strongly than a mildly scented one. A second study found that people served a monochromatic plate of food — like fettuccine Alfredo on a white plate — ate 22 percent more than those served a more visually appealing meal that provided more color and contrast. Texture also comes into play. Researchers in Florida found that people tend to eat more of soft, smooth foods, which tend to be higher in fat, than hard, crisp ones. In one study, participants consumed more soft brownie bits than hard brownie bits until they were asked to focus on calorie content.

You Forget You’re Full

Stopping at a red light is more challenging when you’re flying at 100 miles per hour than when cruising at a slower speed. Knowing when to put down your fork is similar. Experts say gauging your body’s subtle “I’m full” cues is easier when you take smaller bites at a slower pace. In fact, one study published in the journal PLOS One found that people who focused on taking “small bites” of food consumed about 30 percent less soup for their meal than those who didn’t make the conscious decision. The mindful soup slurpers also more accurately estimated how many calories they had consumed.
Eat This, Not That! Fix: A second study in the Journal of the Academy of Nutrition and Dietetics found that simply slowing down had similar results. People who focused on doubling the number of times they chewed before swallowing ate 15 percent less food and 112 fewer calories over the course of a meal. So pump the brakes, and slow down to slim down.

Of all the gym-goers, yogis tend to be the most mindful eaters, according to a study published in the Journal of the American Dietetic Association. In a survey of more than 300 Seattle residents, researchers found that people who ate more mindfully weighed less than those who ate mindlessly (those who reported eating when not hungry or in response to anxiety or depression). The researchers also found a strong association between mindful eating and yoga practice, but not other types of physical activity, like walking or running. According to the authors, yoga, because it teaches how to maintain calm in uncomfortable or challenging situations, can increase mindfulness in eating and lead to less weight gain over time — independent of the physical aspect of the exercise.

You Fell into the Trap

Our homes are filled with hidden eating traps, and simply being aware of something as simple as the size of a bowl can influence how much you eat, according to Brian Wansink, director of Cornell University’s Food and Brand Lab. In one of Wansink’s “mindless eating” studies, moviegoers ate 45 percent more fresh popcorn from extra-large containers than large ones. A second study showed that people automatically poured more liquid into short, wide glasses than in tall, skinny ones of the same volume. Even a kid’s cereal bowl can be a hidden trap for mindless overeating. A study in the Journal of Pediatrics found children who were given a 16-ounce bowl served themselves twice as much cereal as children given an 8-ounce bowl.

You’re Not Nuts

Stephen Colbert may be onto something. The UCLA Center for Human Nutrition researchers divided study participants into two groups, each of which was fed a nearly identical low-cal diet for 12 weeks. The only difference between the groups was what they were given to eat as an afternoon snack. One group ate 220 calories of pretzels while the other group munched on 240 calories’ worth of pistachios. Just four weeks into the study, the pistachio group had reduced their BMI by a point, while the pretzel-eating group stayed the same, and their cholesterol and triglyceride levels showed improvements as well.

You Sit Too Much

Ideally we sleep about eight hours for every 24. Most people spend an extra seven to 10 hours sitting at their desk. That means most of us spend the overwhelming majority of our time sedentary. Our bodies weren’t designed for this level of inactivity. Most of human evolutionary history has involved being active, searching for food and fuel. Nutritionist Lisa Jubilee says that one way to burn more calories daily is to stand more and sit less. She cites a British study that found that standing at work burned 50 more calories an hour than sitting. If that doesn’t sound like a lot, consider this: If you stand for just three hours every day, in one year you’ll expend more than 30,000 extra calories — which amounts to about 8 pounds of fat.

With the average restaurant meal weighing in at 1,128 calories, saving 20 percent once a day could help you lose up to 23 pounds this year.

8 things to know before starting this challenge
This skin detox is based on the advice of nutritionists, dermatologists, facialists and product developers. However, every skin type is different so always do what’s best for you.
For the best results, eat a well-balanced diet of fresh fruit, vegetables, legumes and lean protein.
We will be sharing one recipe per day full of skin-loving ingredients to help you along.
Cut out coffee and alcohol (sorry!). Green tea should be your fix when you need it, but try limiting it to at three cups per day.
Aim for the recommended three litres of water per day. Hydrate, hydrate, hydrate!
We know you’re a busy bunch, so stick to a quick cleanse, moisturise and SPF in the morning and we’ll provide you with a nigh time routine for every evening.
